HUNGRY MAN'S BAKED POTATOES
Sweet potatoes are topped with bacon, veggies, pulled pork and goat cheese for a unique take on a baked potato dinner.

- Scrub and pierce potatoes; place on a microwave-safe plate. Microwave, uncovered, on high for 12-15 minutes or until tender, turning once., In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels with a slotted spoon; drain, reserving 1 tablespoon drippings. Saute corn and onion in drippings until tender., With a sharp knife, cut an "X" in each potato; fluff pulp with a fork. Place pork in a microwave-safe bowl. Microwave, uncovered, for 1-2 minutes or until heated through. Top potatoes with pork, corn mixture, bacon, goat cheese and cilantro.

Steps:
- Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
- Slice potatoes with skins on into 1/4 inch thick slices. Place the potatoes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, 10 to 15 minutes. Drain and allow to steam dry for a minute or two.
- Mix together the mayonnaise, sour cream, onion and garlic powders, seasoned salt, pepper, bacon, onion, and American cheese in a bowl. Stir in the potato slices. Pour mixture into prepared baking dish. Sprinkle top with grated Parmesan cheese.
- Bake until bubbly and beginning to brown, 35 to 40 minutes.

Steps:
- Place potatoes in large pot. Fill the pot with cold water until it is half an inch above the top of the potatoes. Add the salt to the water and stir briefly to dissolve. Bring water to a boil and cook until tender, about 15 to 20 minutes. Drain and set aside to cool.
- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Remove bacon, drain, cool and crumble. Leave bacon fat in skillet and return to stove.
- Add potato chunks, onion and crumbled bacon to skillet. Cook over medium high heat until potatoes begin to brown and onions are translucent, about 25 minutes.

- Preheat the oven to 400 degrees. Rub olive oil and salt all over the outside of the whole potatoes. Bake the potatoes for 1 hour (or until the center is soft.)
- Let the potatoes cool. Then cut them into halves. Scoop out the middle of each half into a large mixing bowl. Add the melted butter, sour cream, cheddar cheese, bacon, chives, salt and pepper to the bowl. Mix everything together to make the filling.
- Scoop the filling into the halved potato skins. I make an extra potato so the filling is overflowing (that's why we made 4 baked potatoes for 6 servings).

- Preheat oven to 400° F. Place the potatoes on a medium sheet pan. Use a paring knife to poke 15-20 holes in each potato all over. Distribute 1 tbsp avocado oil and ½ tsp sea salt over the potatoes and use your hands to rub in to the potatoes all over. Roast the potatoes at 400° F for 45-50 minutes until soft and cooked through.
- While the potatoes roast, prepare the bacon. Add the lardons to a large skillet over medium heat. Stir occasionally until browned and crisp to your liking, about 20 minutes. Use a slotted spoon to remove the bacon and place on a paper towel lined plate. Move 2 tbsp of the bacon fat to a large bowl.
- When the potatoes are almost done roasting, add the rest of the dressing ingredients to the bowl with the bacon fat. Add the bacon bits, mayo, almond milk, lemon juice, parsley, dill weed, garlic powder, chives, onion powder, nutritional yeast, and sea salt and fresh ground black pepper to taste. Whisk with a fork to combine.
- When the potatoes are done, remove them from the oven. When cool enough to handle, take the paring knife at a 45° angle and cut the tops off of the potatoes. Scrape as much of the potato insides as you can from the potato tops and place the insides in the bowl with the dressing. Set the tops aside. Use a spoon to carefully scoop out the insides of the potatoes and place the insides in the bowl. Be careful to not get too close to the sides of the potatoes; you don't want to poke a hole in them! Once all the potato insides are in the bowl, stir with a spoon to combine the mixture completely. Use a small spoon to stuff the potato shells with the potato/dressing mixture.
