HUNGRY BOYS' CASSEROLE
Here's a hearty tummy-warming beef casserole made with Progresso™ chickpeas - a flavorful dinner.

Steps:
- In 12-inch skillet, combine ground beef, celery, onion, bell pepper and garlic. Cook over medium-high heat until beef is browned and thoroughly cooked and vegetables are crisp-tender, stirring frequently. Drain. Reduce heat to low. Stir in tomato paste, water, paprika and 1/2 teaspoon salt. Add baked beans and garbanzo beans; simmer while preparing biscuits, stirring occasionally.
- Heat oven to 425°F. Lightly spoon flour into measuring cup; level off. In large bowl, combine flour, baking powder and 1/2 teaspoon salt; mix well. With pastry blender or fork, cut in margarine until mixture resembles coarse crumbs. Gradually stir in enough milk until mixture leaves sides of bowl and forms a soft, moist dough.
- On floured surface, gently knead dough 8 times. Roll dough to 1/4-inch thickness. Cut with floured 2 1/2-inch doughnut cutter. Reserve dough centers. Reroll dough to cut additional biscuits.
- Reserve 1/2 cup of beef mixture. Pour remaining hot beef mixture into ungreased 13x9-inch (3-quart) glass baking dish. Arrange biscuits without centers over hot beef mixture. Stir olives and almonds into reserved 1/2 cup beef mixture; spoon into center of each biscuit. Top each with biscuit centers.
- Bake at 425°F. for 15 to 25 minutes or until biscuits are golden brown.

- Preheat oven to 350°F.
- In a skillet, combine ground beef, diced onion, salt & pepper, and cook until onions are soft. Add minced garlic. Mix well.
- Add beans, diced tomatoes, brown sugar, BBQ sauce, and heat until bubbly.
- Put mixture into a shallow casserole. Separate biscuits and cut into halves. Put biscuits on top of the beef mixture and sprinkle with cheese.
- Bake for 30 minutes or until biscuits are golden brown.

- Heat the oven to 375 F.
- In a skillet or Dutch oven over medium heat, brown the ground beef; drain well. Stir in pork and beans, barbecue sauce, brown sugar, and minced onion; heat until bubbly.
- Pour the beef and bean mixture into a 2- to 2 1/2-quart casserole.
- Cut each refrigerated biscuit in half to form 20 half circles. Place the half circles cut side down around edge of casserole and sprinkle shredded cheese over the top.

Steps:
- Heat a large nonstick skillet over medium-high heat. Add ground beef and onion to the hot skillet; cook and stir until browned and crumbly, 5 to 7 minutes. Reduce heat to low and stir in diced tomatoes, black beans, picante sauce, and taco seasoning. Simmer until most of the liquid has evaporated, about 20 minutes.
- Meanwhile, preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
- Spread flour tortillas in the prepared baking dish, overlapping to cover the bottom and sides. Spread beef mixture over tortillas, and sprinkle with 3/4 cup Monterey Jack cheese, 3/4 cup pepper Jack cheese, and 1 1/2 cups crushed tortilla chips. Cover with aluminum foil.
- Bake in the preheated oven for 25 minutes. Remove from oven and discard foil. Sprinkle remaining Monterey Jack cheese, pepper Jack cheese, and crushed tortilla chips on top. Place back in the oven and bake, uncovered, until cheese is melted and bubbly, 8 to 10 minutes. Sprinkle with green onion and cilantro and serve with sour cream.

HUNGRY JACK BISCUIT COPYCAT RECIPE

- Whisk together flour, sugar, baking soda and salt.
- Cut in ½ cup cold butter that is cut into tablespoons, until little balls of dough form.
- Add buttermilk and mix well.
- Roll dough onto floured surface until about 1/3inch thick. Cut dough into thirds, gently stacking the layers on top of each other.
