Hungarian Cream of Green Bean Soup (Teifeles Zoldbab Leves) image

This Hungarian creamed green bean soup can be served hot or cold. It's a great use of the fresh vegetable in the summertime!

1 pound fresh trimmed green beans (cut into 2-inch pieces)
1 teaspoon salt (or to taste)
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1/4 teaspoon black pepper
1/2 teaspoon sweet or hot Hungarian paprika
1/4 cup water
1 cup sour cream

Steps:

  • Gather the ingredients.
  • In a large skillet, place the green beans and cover with water; add 1 teaspoon salt and bring to a boil. Reduce heat to simmer and cook until crisp-tender, about 5 minutes.
  • Remove green beans to a colander, reserving cooking liquid.
  • Meanwhile in a medium skillet, make a roux (known as rantas in Hungarian) by melting the butter, adding the flour, and cooking, stirring constantly, until it is a light amber color.
  • Add pepper, paprika, and 1/4 cup water to the skillet, stirring until smooth.
  • Temper the sour cream with a few ladles of the hot green bean cooking liquid.
  • Add the sour cream mixture to the pan along with green beans; whisk the mixture until smooth. Simmer until the broth thickens, 5 to 8 minutes, but do not let it boil.
  • Serve hot or chilled.

Number Of Ingredients 8

2 lb green beans (either frozen or fresh) not canned
2 Tbsp butter
2 Tbsp flour
1/2 c diced onion
1/4 c apple cider vinegar
1 c water
2 tsp sugar
1 Tbsp fresh chopped dill

Steps:

  • 1. Cook beans in water until tender crisp, not soft. Drain.
  • 2. Melt butter, add onions and saute until limp. Add chopped dill. Add flour and stir well to make the roux. Add one cup of water, sugar and vinegar and stir while the sauce thickens.
  • 3. Add drained beans and mix. If too thick, add a little more water. ( I found i didnt have to add additional water)
  • 4. This is a forgiving recipe. I had made it, and we talked for a while, and it reheated over a low temp just fine.

This recipe has proven to be a great standby for parties, barbecues and potlucks. I especially like it because I can keep all the ingredients on hand for last-minute preparation.

1 pound sliced bacon
4 large onions, sliced
1 cup packed brown sugar
1/2 cup cider vinegar
1-1/2 teaspoons ground mustard
2 cans (15 ounces each) butter beans, rinsed and drained
2 cans (16 ounces each) New England-style baked beans, undrained
1 can (15-1/4 ounces) lima beans, rinsed and drained
1 can (16 ounces) kidney beans, rinsed and drained

Steps:

  • In a skillet, cook bacon until crisp; crumble and set aside. Discard all but 2 tablespoons drippings. Add onions, brown sugar, vinegar and mustard to drippings; simmer for 10 minutes, stirring frequently. Stir in beans and bacon. , Pour into an ungreased 3-qt. baking dish. Bake, uncovered, at 350° for 1-1/2 hours.

A co-workers wife gave me this recipe and it is one of my favorites. This four bean dish is perfectly seasoned, and makes a wonderful side dish.

1 pound bacon
3 onions, chopped
1 teaspoon garlic powder
½ teaspoon dry hot mustard
½ cup white wine vinegar
1 cup packed brown sugar
1 (15 ounce) can kidney beans, drained
1 (15 ounce) can lima beans, drained
1 (15 ounce) can butter beans
2 (15 ounce) cans baked beans

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside. Reserve 2 tablespoons bacon fat.
  • Add onions to fat in pan, and saute until soft. Stir in garlic powder, dry mustard, wine vinegar, and brown sugar. Simmer for 20 minutes.
  • In a large pot or slow cooker combine bacon and onion mixture with the kidney beans, lima beans, butter beans, and baked beans. Mix together, and simmer for 70 minutes.

1 lb butter beans, soaked overnight
salt
2 tablespoons oil or 2 tablespoons butter
3 tablespoons all-purpose flour
6 tablespoons vinegar
3 tablespoons sugar

Steps:

  • Cook the butter beans in boiling water (enough lightly salted water to cover) until done.
  • In a saucepan, gently heat the 3 tablespoons oil or butter, once it is bubbling, add the flour and stir to make a paste or roux.
  • Stir over the heat until the roux changes color to beige.
  • Add the beans together with their cooking water, stirring constantly, to make a thickish sauce (add more water if necessary).
  • Add the vinegar and sugar and stir until the sugar is dissolved.
  • Taste and adjust flavor, if necessary, by adding more vinegar or sugar.
  • Continue cooking, stirring, for a few more minutes.

1 large onion
1 pound green beans (cut into 1 inch pieces)
1/2 cup sour cream
1/2 cup milk
1 tablespoon corn starch
1 tablespoon oil
1 tablespoon sweet Hungarian paprika (more or less to taste)
2 cups vegetable broth

Steps:

  • Chop the onion into small cubes and set aside.
  • Wash the green beans, trim off the ends and cut the beans into 1 inch long pieces. Set aside.
  • Heat oil in a large pot and add the onions. Sauté the onions on medium heat until they become translucent.
  • Add the green beans to the pot, then add 2 cups of broth. The mixture of onions and beans should just be covered.
  • Add the paprika, reduce the heat, and let everything simmer for around 30 minutes (or until the beans are tender - but not mushy).
  • Add the sour cream, milk, and corn starch together in a bowl and whisk well.
  • Add the corn starch mixture to the pot and mix everything well.
  • Bring the soup back to a boil for around 2 minutes or until it has reached the desired thickness. Stir frequently.
  • Serve and enjoy!

Soak the beans overnight (longer but uses no energy) or do the rapid soak - cover with water& bring to a boil, simmer 20 minutes, turn off heat, cover & let sit for an hour.

2 cups navy beans
2 small onions, chopped
1 leek, rinsed and chopped
3 medium carrots, diced
6 large garlic cloves, minced
1 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon sweet Hungarian paprika
6 tablespoons flour
6 tablespoons butter
1/2 cup sour cream
2 teaspoons cider vinegar

Steps:

  • Soak navy beans overnight.
  • Drain them and place in large soup pot with onions, leek, carrots, and garlic.
  • Add water to an inch above the level of the beans. Bring them to a boil and then simmer, covered, until tender, about 1 1/2 hours.
  • Make a light taupe-colored roux from the flour & butter in a small saucepan.
  • Mix in the salt, pepper, and paprika. Ladle out 2 cups of the hot bean water and slowly stir it into the flour until smooth. Add the flour mixture to the beans, stirring constantly. Remove the soup from the heat and whisk in the sour cream and then the vinegar.
  • Gently reheat the soup for about 10 minutes.
