SLOW-COOKER HUNGARIAN GOULASH
Let the slow cooker do the work for you in turning out this old-world favorite. The rich beef stew is wonderful served over hot noodles.

Steps:
- In 10-inch skillet, heat oil over medium-high heat. Cook beef in oil about 10 minutes, stirring occasionally, until brown; drain.
- Spray 3 1/2- to 6-quart slow cooker with cooking spray. In slow cooker, place beef and onion. In medium bowl, mix broth, tomato paste, garlic, Worcestershire sauce, paprika, salt, caraway seed and pepper; stir into beef mixture.
- Cover; cook on Low heat setting 8 to 10 hours (or High heat setting 4 to 5 hours) or until beef is tender.
- In small bowl, stir water and flour until well mixed; gradually stir into beef mixture. Stir in bell pepper. Increase heat setting to High. Cover; cook 30 minutes longer. Serve goulash over noodles.

Steps:
- Place meat in crockpot and cover with sliced onion.
- Combine garlic, ketchup, Worcestershire sauce, sugar, salt, paprika and mustard Stir in water, mix well, and pour over meat.
- Cover and cook on low for 8 to 10 hours.
- Turn control to high.
- Dissolve flour in a small amount of cold water and stir into meat mixture.
- Cook on high for 10 to 15 minutes or until slightly thickened.
- Serve over noodles or rice.

- Heat 1 tablespoon of the oil in a large skillet over medium heat. Add the tempeh and brown all over, about 10 minutes. Set aside.
- Without cleaning the skillet, heat the remaining 1 tablespoon oil over medium heat.
- Add the onion, cover, and cook until softened, about 5 minutes.
- Transfer the onions to a 4-quart slow cooker. Add the tempeh, sauerkraut, tomatoes, paprika, wine, caraway seeds, tomato paste, and stock and season with salt and pepper. Cover and cook on Low for 6 hours.
- Just before serving, pour 1/2 cup of the simmering liquid into a small bowl and whisk in the sour cream. Stir this mixture back into the goulash, taste to adjust the seasonings, and serve at once.

- Place beef and onion in a 3-qt. slow cooker. Combine the flour, paprika, garlic salt and pepper; sprinkle over beef and stir to coat. Stir in tomatoes; add bay leaf. Cover and cook on low for 8-10 hours or until meat is tender., Discard bay leaf. Just before serving, stir in sour cream; heat through. Serve with noodles. Garnish with parsley if desired. , Freeze option: Before adding sour cream, cool stew. Freeze stew in freezer containers. To use, partially thaw in refrigerator overnight. - Put the mushrooms, tempeh and carrots into a crock pot (no need to steam the tempeh first).
- Combine onions, tomato, bell pepper, garlic and broth in a blender container and puree.
- Add the puree to the crock pot and mix well.
- Add the paprika, parsley, dill, caraway seed, salt and pepper to the crock pot and stir them inches.
- Cover and cook on low heat 8-10 hours.
- Shortly before serving, puree the silken tofu in a blender with a little liquid from the crock pot until very smooth.
- Stir it into the crock pot, add the peas and heat through.
- Serve over cooked noodles, potatoes, rice or other grains.

- Melt the pork fat in a large deep sauté pan over medium-high heat. Add the onions and brown them for 5 to 7 minutes.
- Turn up the heat, add the beef and season with salt and pepper. Sear the beef on each side, this will take 3 to 4 minutes. Add the garlic, mix and sauté for 30 to 45 seconds.
- Add the Hungarian red pepper and sauté for 3 to 5 minutes, until slightly softened. Turn off the heat, add the Hungarian paprika and mix thoroughly. Let the residual heat toast the paprika.
- Add all the Ingredients into the slow cooker. Place on high for 4 to 6 hours, or low for 8 to 10 hours.
