HUNGARIAN NOODLES
This is a recipe my grandmother and mom would make. It can be served as a main dish or is great as a side. This is delicious served with beef stew.

- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the noodles, and return to a boil. Cook the noodles uncovered, stirring occasionally, until they are cooked through, but still firm to the bite, about 5 minutes. Drain well.
- Preheat an oven to 350 degrees F (175 degrees C). Butter a large casserole dish.
- Mix the noodles, cottage cheese, sour cream, onion, Worcestershire sauce, poppy seeds, and salt together in a large bowl. Spread mixture in the prepared baking dish. Sprinkle Parmesan cheese and paprika on top.
- Bake in the preheated oven until bubbly, about 30 minutes.

HUNGARIAN GOULASH
A classic Hungarian Goulash with melt-in-your mouth, tender beef, slowly cooked in an incredibly rich broth. Tasty, comforting and perfect for the whole family!

Steps:
- Heat a large deep skillet or Dutch oven over high heat then add the olive oil.
- When the oil is hot add the stewing beef. Season with salt and pepper and sear the beef until it starts to brown. The beef will release liquid so continue searing on high heat, and the liquid will evaporate. Alternatively you could drain all the liquid.
- Add the onions and garlic to the skillet and cook for about 5 minutes until the onions soften and become translucent. Turn the heat down to medium-high.
- Add the paprika, caraway seeds, oregano, bay leaves and brown sugar to the skillet. Stir everything together and cook for 30 seconds.
- Add the tomato sauce, balsamic vinegar, beef broth and stir. Bring to a boil, then cover and cook on low for about 2 hours or until the beef is fork tender, stirring occasionally. The liquid will reduce down a lot as the beef cooks, so feel free to add more water as needed.
- Taste for seasoning and adjust with salt and pepper if needed.
- Garnish with chopped parsley and serve over noodles or mashed potatoes.

HUNGARIAN GOULASH WITH POPPY SEED NOODLES

Steps:
- In a dutch oven or heavy saucepan heat oil over high heat. Add protein, a single layer at a time and cook over medium heat until cubes are well-browned on all sides. As they brown, remove to a separate bowl. This will take about 15-20 min. in all.
- Add onions to drippings and saute until tender and golden brown, about 10 min.
- Return meat to dutch oven. Add paprika, salt and pepper, stirring until well-blended with meat. Stir in 3/4 cup of the beef (chicken) broth.
- Bring to boiling, then reduce heat and simmer covered for 2 hours, or until beef/chicken is fork-tender.
- In small bowl, combine flour and remaining broth, stirring until smooth. Gradually add to meat mixture, stirring constantly. Simmer uncovered and stirring occasionally 15 min. longer.
- Just before serving, place sour cream (greek yogurt) in small bowl. Slowly add 1/2 cup hot gravy (from pot) to mix with cream/yogurt. Then slowly add mixture to beef/chicken, stirring until well-blended. Heat, but do not boil. Serve with poppy seed noodles.

- Season beef with salt and pepper. In a large Dutch oven or soup pot, heat oil over medium-high heat. Add half of the beef. Cook, stirring often, until browned on all sides. Use tongs to remove beef to a plate. Brown second half of beef and remove to plate.

- After soup has been cooking for 1 hour 15 minutes, add peppers and stir to combine. Cook for 30 minutes longer, or until beef is very tender. Remove bay leaf. Taste and add salt and pepper if needed.
