Adopted! Original poster's comments: Canadian bacon, smoked pork shoulder or picnic ham can be substituted for the ham hocks. QDM: I have changed the servings from 2 to 4, as well, to account for serving with rice.

2 lbs smoked ham hocks
2 tablespoons vegetable oil
1 tablespoon fermented black beans
1 tablespoon fresh minced garlic
1 cup green bell pepper, cut into 1 inch squares
2 tablespoons soy sauce
1 teaspoon hot red pepper powder
1/2 cup chicken broth
2 green onions, cut into 1 inch pieces

Steps:

  • Place ham hocks in a pot, cover with water and bring to a boil; reduce heat and simmer for 1 hour or until the meat easily separates from the bone with a fork.
  • Remove hocks from water, allow to cool, take off meat from the bones and slice into 1 inch slices.
  • This step can be done well ahead.
  • Note: If using canadian bacon, picnic ham or smoked pork shoulder you amy simmer in water until very tender or use as is without simmering.
  • Heat wok or saute pan over high heat, add vegetable oil and when very hot add black beans and garlic; mash together.
  • Stir in meat, add green pepper, soy sauce, red pepper powder and chicken broth.
  • Stir continuously until well blended; add green onion.
  • Serve hot.

2 tablespoons corn oil
1 large onion, chopped
1 1/2 teaspoons ground cumin
1 teaspoon dried thyme, crumbled
1 bay leaf
1/2 teaspoon dry crushed red pepper
2 lbs smoked ham hocks
2 (14 1/2 ounce) cans chicken broth
1 (14 1/2 ounce) can sliced stewed tomatoes
3 large garlic cloves, finely chopped
2 (15 ounce) cans yellow hominy, drained

Steps:

  • Heat oil in Dutch oven over medium-high heat. Add onion, cumin, thyme, bay leaf and dried red pepper and sauté 5 minutes. Add ham hocks, broth, tomatoes and garlic. Simmer until ham hocks are tender, about 1 1/2 hours.
  • Transfer ham hocks to work surface. Remove meat and cut into bite-size pieces. Discard fat and bones. Return meat to pot. Add hominy and simmer until hominy is just tender, about 15 minutes. Season to taste with salt and pepper. (Can be prepared 1 day ahead. Cover and refrigerate. Reheat until heated through.) Ladle into bowls and serve.

1 lb dried lima beans, thoroughly rinsed
1 tablespoon vegetable oil
1 yellow onion, chopped
2 celery ribs, diced
2 small carrots, diced
8 cups chicken stock (low salt)
1 ham hock
salt
fresh ground black pepper
1/4 cup chopped fresh parsley, for garnish

Steps:

  • Add beans to slow cooker.
  • In a saute pan over med-high heat, add vegetable oil.
  • Add in onion, celery, and carrots; saute for about 10 minutes until lightly browned.
  • Transfer mixture to the slow cooker and add in chicken stock and ham hock.
  • Cover and cook on low for 5-7 hours.
  • Remove the ham hock and strip it of as much fat as you can; return the meat to the pot and cook for 1 hour, until the beans are very tender.
  • If needed, season to taste with salt and pepper.
  • Serve hot, garnished with parsley.
