2 tablespoons hummus
1 whole wheat tortilla (8 inches)
1/4 cup torn mixed salad greens
2 tablespoons finely chopped sweet onion
2 tablespoons thinly sliced cucumber
2 tablespoons alfalfa sprouts
2 tablespoons shredded carrot
1 tablespoon balsamic vinaigrette

Steps:

  • Spread hummus over tortilla. Layer with salad greens, onion, cucumber, sprouts and carrot. Drizzle with vinaigrette. Roll up tightly.

Hummus is a great filling for a vegetarian wrap. You can buy hummus in many grocery stores, but nothing can beat hummus you make at home. It takes no time at all to make this version with canned chickpeas.

Yield 1 3/4 cups hummus. Enough for six or seven wraps

Number Of Ingredients 13

1 to 2 garlic cloves, to taste; halved, green shoots removed
1 can chickpeas, drained and rinsed
1/2 teaspoon ground cumin
Salt to taste
3 to 4 tablespoons freshly squeezed lemon juice, to taste
2 to 3 tablespoons plain low-fat yogurt, as needed
2 tablespoons extra virgin olive oil
3 tablespoons sesame tahini
1 large flour tortilla or whole wheat wrap
2 leaves romaine lettuce, ribs cut away
1/8 red pepper, cut into thin strips
2 tablespoons cucumber, cut in julienne
Fresh mint leaves (optional)

Steps:

  • Turn on a food processor fitted with the steel blade, and drop in the garlic cloves. Process until they are chopped and adhere to the sides of the bowl. Scrape down the sides of the bowl. Add the remaining ingredients, and process until very smooth. Taste and adjust seasonings.
  • For each wrap, warm a large flour tortilla for about 10 seconds in the microwave or over a burner, just until flexible. Lay it on your work surface and cover with lettuce leaves, leaving a two-inch border all the way around. Place 3 heaped tablespoons hummus (about 1/4 cup) on top of the lettuce on the bottom half of the tortilla. Top with the red pepper, the cucumber and a few leaves of mint if desired.
  • Fold the bottom edge of the tortilla over the filling. Fold in the sides, then roll up, squeezing the tortilla so that the roll is compact. Place the roll on a piece of plastic wrap. Fold in the sides of the plastic over the ends of the wrap, and roll up tightly to secure. Refrigerate for at least five minutes and for as long as 24 hours.

Use store-bought or homemade hummus in this fast, healthy vegan wrap, and add even more flavor by using your favorite veggie flavored wrap or tortilla.

1 flavored wrap or tortilla ((I used spinach))
1/3 cup hummus
2 slices cucumber (, sliced lengthwise)
Handful of fresh spinach leaves
Sliced tomato ((depending on size of the tomatoes))
1/4 avocado (, sliced)
Fresh alfalfa or broccoli sprouts
Fresh microgreens
Basil leaves (, if desired)

Steps:

  • Spread the hummus on the bottom 1/3 of the wrap, about 1/2 inch from the bottom edge but spreading out the the side edges.
  • Layer the cucumber, spinach leaves, tomato slices, avocado slices, spouts, microgreens and basil.
  • Fold the wrap tightly, as you would a burrito, tucking in all of the veggies with the first roll then rolling firmly to the end. Cut in half and enjoy.

These are seriously amazing. Light, crunchy and a little spicy. I know it seems like a lot. All the ingredients. All the layering. But it's seriously stuff you probably already have in your pantry/fridge. So once you get the hang of the build, this ain't no thang. You start with a smear of hummus. Then on top of that, your turkey. Then it goes like this: Thinly sliced red onion, thinly sliced red bell pepper, alfalfa sprouts, shaved coconut, fried garlic and a few tiny dollops of sambal oelek. And then roll it up in a tortilla!

1/4 cup hummus (flavor of your choice)
4 medium to large flour tortillas
8 ounces sliced deli turkey
1/4 red onion, thinly sliced (about 1/3 cup)
1 red bell pepper, seeded and thinly sliced
1 cup alfalfa sprouts
1/2 cup flaked coconut, toasted if desired (see Cook's Note)
1/3 cup fried garlic (see Cook's Note)
Sambal oelek or sriracha, for drizzling

Steps:

  • Spread a tablespoon of hummus in the center of each tortilla. Divide the turkey, onions, bell peppers, sprouts, coconut, fried garlic and sambal oelek as desired among the tortillas.
  • Tightly roll up each wrap and secure with a wooden toothpick. Slice in half on the diagonal.

1 tablespoon butter or olive oil
1/2 red onion, sliced
Three 14.5-ounce cans chickpeas, rinsed and drained
1/3 cup plus 1 tablespoon tahini
1/2 teaspoon ground cumin, or more to taste
3 cloves garlic, chopped, or more to taste
1/2 lemon, juiced
Salt
1 tablespoon olive oil
3/4 cup olive oil
1/4 cup balsamic vinegar
Salt and freshly ground black pepper
1 large spinach tortilla
1 jarred roasted red pepper, sliced
3 canned artichoke hearts, halved
2 cups mixed salad greens
1/4 cup crumbled feta cheese

Steps:

  • For the onions: Melt the butter in a skillet over medium-low heat. Add the red onions and cook slowly, stirring occasionally, until soft and deep golden brown, 10 to 15 minutes. Set aside and let cool slightly.
  • For the hummus: Meanwhile, combine the chickpeas, tahini, cumin, garlic, lemon juice and some salt in a blender. Pulse until the mixture becomes somewhat smooth and combined, but do not overmix. Add 1/2 to 1 cup cold water as needed to facilitate blending and reach the desired consistency. Add the olive oil and pulse a few more times just to incorporate. Taste and add more cumin, salt or garlic if needed. Pour the hummus into a bowl and stir to ensure it's combined. Serve immediately, or refrigerate for up to 3 days.
  • For the balsamic vinaigrette: Shake together the oil, vinegar and some salt and pepper in a Mason jar. This makes more than you'll need for 1 wrap; store the rest in the fridge and use for another salad.
  • For the wrap: Grill the tortilla on a grill pan over medium heat just until it has grill marks on the outside, 1 minute. (If you don't have a grill pan, just use a skillet.) The tortilla should still be soft and pliable, with just a little bit of color! Let the tortilla cool slightly.
  • To assemble the wrap, spread about 1/4 cup of the hummus down the middle third of the tortilla. Arrange the cooked onions and roasted red peppers all over the hummus. Add the artichoke heart halves. Toss the salad greens in 1 tablespoon of the balsamic vinaigrette, then lay them on the wrap. Finally, sprinkle the crumbled feta all over the greens. Carefully wrap up the tortilla, tucking in the ends. Slice the wrap down the middle, share with a friend and chow down!

12 thin slices prosciutto
4 10-inch low carb whole wheat tortillas
½ cup hummus spread, divided
4 slices mozzarella cheese
1 avocado - peeled, pitted, and sliced - divided
4 small tomatoes, sliced
1 cup torn lettuce leaves, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Arrange the prosciutto slices on the baking sheet so they don't touch, and bake them in the preheated oven until crisp, 6 to 8 minutes. Remove from the oven, and let cool.
  • Stack the tortillas on a plate and microwave them on High until warmed and pliable, 20 to 30 seconds.
  • Spread each tortilla with 2 tablespoons of hummus spread, and top each with 3 slices of crisped prosciutto per wrap. Place a slice of mozzarella cheese on top of the prosciutto, and spread 1/4 of the avocado slices per wrap on the cheese. Top each wrap with 1 sliced tomato and about 1/4 cup of torn lettuce leaves.
  • Fold the bottom of each tortilla up about 2 inches to enclose the filling, and roll the wrap tightly into a compact cylinder.

2 teaspoons olive oil
1/8 teaspoon salt
Pinch freshly ground black pepper
1 cup store-bought hummus
4 pieces whole-wheat wrap bread (about 9 inches in diameter)
1/4 cup pine nuts, toasted
1 medium red bell pepper, thinly sliced
2 ounces baby spinach leaves (2 cups lightly packed)
1/2 cup red onion thinly sliced into half moons
1/4 cup fresh mint leaves

Steps:

  • Preheat the grill or grill pan over medium heat. Brush both sides of the zucchini slices with the oil and sprinkle with the salt and pepper. Grill until tender and slightly browned, about 4 minutes per side.
