3 sweet potatoes, peeled and cut into cubes
1.5 cups chickpeas, cooked & drained (240 g)
2 tsp cumin
2 zucchini, thinly cut lengthwise
1 cup fresh spinach (1 oz / 30 g)
2 tomatoes, diced
½ cup fresh parsley, chopped (1 oz / 30 g)
3 green onions, diced
2 tbsp freshly squeezed lemon juice
¼ tsp salt
½ cup hummus (120 g)

Steps:

  • Preheat your oven to 350 °F (175 °C) and line two baking sheets with parchment paper.
  • Put the cubed sweet potatoes and cooked chickpeas on one baking sheet. Add cumin and some salt, then toss to combine. Arrange everything into a single layer.
  • Place the sliced zucchini on the other baking sheet, arranged into a single layer.
  • Put both sheets into the oven for 10 minutes, then flip the zucchini and slightly toss the chickpeas and sweet potatoes. Bake for another 10 minutes, then remove from the oven.
  • In the meantime, wash your fresh produce and divide everything equally between two serving bowls. Sprinkle with some salt and lemon juice, mix, then let it sit to allow the flavors to soak in until your baked components are done.
  • Time to assemble! Top your veggies in the two bowls with the roasted sweet potato cubes and chickpeas and roll the zucchini into ribbons if you like - this way, they will be easier to grab with a fork and make your bowl look prettier!

1 Tbsp. vegetable oil
1 lb. ground beef, or a vegetarian alternative such as Lightlife® Smart Ground
1 tsp. ground coriander
1/2 tsp. freshly ground black pepper
1/2 tsp. ground cinnamon
2 tsp. kosher salt, divided
1 pint cherry tomatoes or 2 medium heirloom or beefsteak tomatoes, cut into 1" pieces
1 cup parsley leaves with tender stems, coarsely chopped
1 Tbsp. fresh lemon juice
1 batch Easy Canned Chickpea Hummus
Extra-virgin olive oil, lemon wedges, Aleppo-style pepper, hot sauce, pickles, and pita (for serving; optional)

Steps:

  • Heat oil in a large heavy, preferably cast-iron, skillet over high. Pat beef (or vegetarian alternative) dry with paper towels, then press into an even layer in skillet with a spatula. Season with coriander, pepper, cinnamon, and 1 tsp. salt and cook, undisturbed, until a brown crust begins to form underneath, about 6 minutes. Turn, break beef into pieces, and continue to cook, stirring, until just cooked through, about 1 minute.
  • Meanwhile, toss tomatoes, parsley, lemon juice, and remaining 1 tsp. salt in a medium bowl.
  • Divide hummus among shallow bowls. Using the back of a spoon, smooth into an even layer, then create a wide divot in the center. Spoon spiced beef and tomato mixture over, then drizzle with oil and sprinkle with Aleppo-style pepper, if using. Serve with lemon wedges, hot sauce, pickles, and pita alongside, if using.

Hummus bil lahmeh is a traditional Middle Eastern hummus dish topped with warmly spiced meat, toasted pine nuts, and pomegranate seeds. This celebratory dish is a part of the Middle Eastern Mezze and is usually served on special occasions.

1 can chickpeas
1 tablespoon tahini
1 tablespoon olive oil
2 cloves garlic
1 tablespoon lemon juice
½ teaspoon salt
1 teaspoon ground cumin
1 onion
250 grams diced or ground beef (or lamb)
1 tablespoon mixed spice
30 grams pine nuts (toasted - for garnish)
30 grams pomegranate seeds (for garnish)

Steps:

  • Make the hummus by adding the chickpeas, tahini, olive oil, garlic, lemon, salt and ground cumin to a blender. Blitz until you reach the desired consistency. You could add a dash of water if your hummus is too chunky.
  • To prepare the meat, start by sautéing a diced onion a pan with a little bit of olive oil. Cook until the onion becomes tender and translucent.
  • Add the diced beef or lamb. Season with Schwartz Allspice, and sea salt. When the meat is cooked through and the juices evaporated, remove from heat and set aside.
  • Assemble your hummus with meat. In a bowl, spread the hummus using a spoon, and make a well in the centre. Pile up the meat in the centre of the hummus.
  • Top with toasted pine nuts. Toast the pine nuts by heating a little bit of olive oil in a pan then toasting the pine nuts for a couple of minutes. Once they start changing their colour, remove from heat immediately.
  • Finally, sprinkle with fresh pomegranate seeds and serve immediately with warm pita bread.

1 large onion, finely chopped
Kosher salt
1 pound ground beef (85/15 or whatever you prefer)
2 1/2 teaspoons ground cumin
2 teaspoons ground cinnamon
1 teaspoon ground Aleppo pepper
1/4 teaspoon allspice
Freshly ground black pepper
2 cups hummus
1/4 cup toasted pine nuts
1/4 cup pomegranate seeds
Chopped fresh parsley, for garnish

Steps:

  • In a large skillet, heat the oil over medium-high heat. Add the onion and a pinch of salt. Cook, stirring, until soft and translucent, 5 to 7 minutes. Add the beef and sprinkle it with the cumin, cinnamon, Aleppo pepper, allspice, 1/2 teaspoon salt and a few turns of black pepper. Cook, breaking up the beef with a spoon or spatula, until it is heated through and no longer pink, 7 to 10 minutes. Taste and adjust the seasonings as desired.
  • To serve, spread the hummus in a serving bowl and top it with the beef. Sprinkle with the pine nuts, pomegranate seeds and parsley.
