Hummus Veggie Sandwich image

This delicious humus veggie sandwich is quick and easy to make and perfect for lunch on the go. Loaded with fresh vegetables, it's bold, vibrant and easily customizable.

4 slices whole grain bread (toasted)
½ cup hummus
½ cup baby spinach
Few slices red onion
4 ounces feta cheese
½ English cucumber (sliced)
Few slices red peppers
¼ cup banana peppers
¼ cup pitted kalamata olives
¼ teaspoon dried oregano
Salt and pepper (to taste)

Steps:

  • Spread the hummus over the bread slices. Carefully stack the sandwich ingredients over two of the slices, season with the dried oregano and salt and pepper, to taste.
  • Top with the remaining slices. Cut each sandwich in half, if desired. Serve immediately.

This is a sandwich I made up that I take to work all the time. It's a great change of pace. I like to use flavored hummus like roasted garlic, scallion, or kalamata olive, just to name a few. Measurements are approximate.

2 slices whole wheat bread
2 -3 tablespoons hummus (any flavor)
1/4 cup peeled sliced cucumber
2 tablespoons bean sprouts
chopped scallion

Steps:

  • Spread the hummus on one slice of bread.
  • Top with cucumber slices, bean sprouts and scallions (if desired).
  • Put the other slice of bread on top and viola! Hummus sandwich. (This is also good on a toasted bagel -- but not if you're a carb-watcher!).

  • Meanwhile, place the chopped pickles in a paper towel or clean dish towel and squeeze out any extra water. Place the tomatoes on a paper towel or towel and blot them to remove excess moisture.
  • Place the cucumber slices on the bottom of the sandwich to act as a moisture barrier. Top with a layer of hummus. Add the cheese (optional), pickled vegetables, red onion, tomato, and microgreens or sprouts (if using). Spread the remaining hummus on the top slice of bread and place it on top. Note: This sandwich is best made right before eating. If you’re bringing it outside the house like to work, we recommend chopping the components in advance, then building the sandwich right before you eat it.
