- Spread hummus on 8- to 10-inch serving plate.

HUMMUS SPREAD
Hummus completely from scratch using roasted sesame seeds, very easy. You can cook your beans ahead of time and leave them in the fridge for a couple days. Canned would work fine if you don't have the time.

Steps:
- For the beans: Rinse beans and pick over.
- place in a large pot, cover by at-least 2" with water (if you have hard water toss in a pinch of baking soda) Bring to a boil for 2 minutes, turn off stove and let them sit until cooled to room temperature.
- About 2 hours.
- Drain beans and rinse.
- Rinse out pot and return beans, again, cover with water, add garlic and bay leaf, bring to a boil, reduce to simmer Cook until tender, 45 minutes to 1 hour.
- Drain and cool.
- For the Tahini: Place sesame seeds and sesame oil in the food processor, grind until it's formed a paste.
- If it seems dry add some of the olive oil.
- For the Hummus: Add garlic to the hummus and pulse until finely chopped.
- Add beans and turn on processor, drizzle olive oil into processor, allow to run until desired consistency is reached.
- Add salt and pepper to taste and pulse until mixed.
- Optional: You can replace some of the olive oil with a bit of reduced fat sour cream to attain the desired creaminess without as much fat.
BLACK OLIVE HUMMUS
My husband claims store-bought hummus is too gritty so he never liked it. But by adding extra liquids it makes it 'smooth like butta.' Now he's a hummus fan! - Place garlic in food processor and pulse until garlic is minced. Add garbanzo beans; puree until chickpeas have broken down into a paste. Pour in liquid from olives, 1 tablespoon at a time; puree until fully incorporated, about 2 to 3 tablespoons liquid in total.
- Keep food processor running and slowly drizzle olive oil into hummus until smooth and desired consistency is reached. Add olives to the hummus and pulse 3 to 7 times until olives are chopped and evenly distributed.

HONEY MUSTARD HUMMUS SPREAD
Honey mustard hummus may sound odd, but use it as a spread for a hot dog, hamburger or veggie burger and your in heaven. For this recipe we are using the spread for canapés along with roasted red pepper and fresh chorizo. Yumm!

- Combine all the ingredients for the hummus, except for the olive oil in a food processor and start to puree. Slowly add the olive oil until you get a nice consistency. Let the processor run for about 1 minute until the spread is very smooth. Set aside.
- Slice the baguette into pieces about a ¼ inch thick and place on a cookie sheet. Drizzle with olive oil and bake in a 415° F oven until golden brown and crispy. Set aside to cool.
- Now its assembly time. Place a liberal amount of the spread on your toast. Top that with the warm chorizo, a piece of roasted red pepper and garnish with fresh chopped herbs. Now enjoy!

- Use dry chickpeas. There is nothing more convenient than opening a can of cooked chickpeas of course. However making hummus with dry chickpeas is way better, but it just takes a little more time to make it.
