These gluten-free waffles are made with shredded potatoes and kicked up with a bit of salsa and cheese. Then they're topped with all of the traditional toppings found on huevos rancheros. Spruce up your brunch game with these delicious waffles!

1 (20 ounce) bag simply potato shredded hash browns
1/3 cup store-bought chunky salsa
2 large eggs, lightly beaten
1/2 cup shredded Mexican blend cheese
1/2 teaspoon salt
1/2 teaspoon black pepper
6 large fried eggs
1 cup store-bought chunky salsa
1/4 cup pickled jalapeno pepper, drained
1/4 cup crumbled queso fresco
1/2 cup fresh cilantro leaves

Steps:

  • To make the waffles, in a large bowl, mix together the potatoes, salsa, eggs, cheese, salt and pepper until well combined. Spoon about 1/2 a cup of the potato mixture into each cavity of a preheated waffle iron. Cook until crispy and golden brown, according to your machine's manufacture's directions.
  • Transfer the waffles to a wire rack, set over a baking sheet, to prevent the waffles from getting soggy.
  • To serve the waffles, top each with a fried egg, salsa, pickled jalapeños, queso fresco, and cilantro. Serve with lime wedges on the side and enjoy!

2 cups Simply Potatoes® Shredded Hash Browns
1 cup thick & chunky salsa
8 large eggs
2 cups Mexican blend cheese
8 tablespoons cilantro, chopped

Steps:

  • Heat up a nonstick waffle iron and season according to manufacturers directions.
  • In a medium bowl put potatoes, 1/3 cup of the salsa and 2 beaten eggs. Mix all together until well blended. Spoon mixture into hot waffle iron spreading evenly to edges. Put lid down and cook 15 to 20 minutes or more until potato waffles are brown, done and look crispy.
  • In a medium bowl beat remaining 6 eggs. Add 1/3 cup of salsa and mix until well blended.
  • Heat a nonstick skillet on medium heat. Pour egg mixture into hot skillet and with a spatula mix and stir, scraping bottom of pan to scramble the eggs. Add one cup of the cheese and continue cooking and stirring. Remove from heat when eggs are cooked to desired consistency and cheese looks melty. Do NOT overcook. Evenly sprinkle remaining cup of cheese over top of eggs. Cover and keep warm until potato waffles finish cooking.
  • When waffles are done cut into fours following the compartment lines of waffle maker. Put each quarter waffle on a plate. Put equal portions of the cooked eggs on each waffle with the melted cheese side up.
  • Put a spoonful of Salsa in center of cheese and repeat with other plates. Sprinkle 2 Tablespoons of the chopped fresh cilantro over top of each plate. Serve hot.
  • Makes 4 hearty, delicious servings.
  • If desired pass extra salsa in a bowl.

Love to make this once an awhile instead of breakfast tacos, especially with house guests. It's so easy, but it will look like you slaved over a hot stove all morning. The sauce can be made in advance to make things go even quicker.

2 tablespoons olive oil
1/4 cup onion (diced)
1/4 cup green bell pepper (diced)
1 garlic clove (minced)
1 jalapeno (minced)
1/2 teaspoon cayenne pepper
1 teaspoon salt
1 teaspoon black pepper
1 (10 ounce) can tomato sauce
1 -2 tablespoon tomato paste
2 teaspoons white vinegar (optional)
1 tablespoon butter
8 eggs
1/4 cup water
1/2 teaspoon salt
1/2 teaspoon pepper
1 (10 ounce) can refried beans (with jalapenos)
1 -2 link chorizo sausage
12 -20 flour tortillas
1 cup cheddar cheese (grated)

Steps:

  • Sauce: Sauté onions, bell peppers, garlic, and jalapeno in olive oil until onions are soft. Keep the temp low as to not burn the garlic. Add the remaining ingredients and simmer for 15 minutes. Start with one tablespoon of paste. If still too thin, add more. Keep warm if using right away, otherwise reheat when ready.
  • Eggs: This is the best way to make perfect over-easy eggs. For this meal, it's best to make them last. Melt butter in frying pan that has a lid. When butter is getting frothy, gently crack eggs so you don't break the yokes. Salt and pepper to taste. When whites are set, turn up the heat slightly, pour the water in between the eggs, and cover. Remove lid and serve as soon as the "skin" has set over the yokes. This only takes 30 seconds to a minute, so keep an eye on them.
  • Sides: Remove from casing and brown chorizo, remove and reserve the grease. Fry the refried beans in the chorizo drippings until soft and bubbly. Salt and pepper to taste. Add cooked chorizo and stir. Add a little water if to keep the beans thin and a little soupy.
  • Meanwhile, warm tortillas on a hot griddle. About one minute per side. Keep warm.
  • To serve: Place two eggs on one side of the plate. Spoon refried beans on the other--if they are the right consistancy they should spread to cover their side of the plate. Top and surround the eggs generously with the sauce. All but the rim of the plate should covered with eggs, sauce, and beans. Sprinkle cheese on the beans. Serve with several warm tortillas for scooping on the side.

1 (15 ounce) can mild enchilada sauce
1 (20 ounce) bag Simply Potatoes Southwest Style Hash Browns
2 tablespoons vegetable oil
6 large eggs
1 1/2 cups pico de gallo

Steps:

  • Preheat oven to 400 degrees.
  • Pour enchilada sauce into a blender. Remove 1/2 cup of the hash browns from bag and place in blender. Blend until very smooth, to thicken up the enchilada sauce. (The sauce will get warm from the heat of the blender.).
  • Heat a waffle iron to medium high heat. Brush both top and bottom of waffle iron with a little oil. Scoop a scant 1/2 cup of hash browns, and place in waffle iron. Repeat 5 times, making sure the potatoes are in separate areas. (You may need to cook in batches, depending on the size of your waffle iron.) Close the waffle iron and cook until the hash brown discs are browned and cooked through. Repeat until you have 6 hash brown discs.
  • While potatoes are cooking, break the eggs into six muffin tins that have been filled halfway with hot water. (The water is not an ingredient, just a way of cooking the eggs.) Bake for 6 minutes for eggs that have a runny yolk, longer if you desire more cooked yolks.
  • To assemble, place a hot hash brown disc on a serving plate. Top with a generous spoonful of enchilada sauce. Top with a poached egg. Sprinkle with 1.4 cup of pico-de-gallo fresh salsa.

10 eggs, beaten
1 cup light cream
8 ounces Mexican blend cheese, shredded
1/2 teaspoon pepper
1/4 teaspoon chili powder
1 garlic clove, crushed
1 (4 ounce) can chopped green chilies, drained
1 (10 ounce) can red enchilada sauce
4 ounces sharp cheddar cheese, shredded
8 tortillas

Steps:

  • Grease crock pot with the butter (leaving any excess in the pot), and set aside.
  • In a large bowl, combine the eggs, cream, Mexican cheese, pepper, and chili powder.
  • Add the garlic and chilies, and stir.
  • Pour mixture into the crock pot, cover, and cook on LOW for 3 hours and 45 minutes (longer may cause the edges to burn).
  • Remove lid and top with enchilada sauce and cheddar cheese.
  • Replace lid and cook until sauce is warm and cheese is melted (15 minutes).
  • Top tortillas with eggs and serve.

8 flour tortillas (5-inch)
3 tablespoons butter, melted
kosher salt & freshly ground black pepper
1 cup salsa (prepared chunky cilantro salsa or your choice)
3/4 cup black beans (cooked)
8 eggs
1/2 cup monterey jack pepper cheese, shredded
1/2 cup sour cream

Steps:

  • Preheat the oven to 400 degrees F. Cut off the outer edge of each tortilla and remove so that the tortillas fit snugly into the muffin tin cup. Brush both sides of the tortillas lightly with melted butter and sprinkle with salt. Press the tortillas into the muffin tin, creating little tortilla cups.
  • In a small bowl, mix half the salsa with the black beans with salt and pepper. Spoon a heaping tablespoon of the black bean mixture into each tortilla cup. Crack an egg into each of the eight cups. Bake until barely set, about 8 minutes. Top with cheese, cover with aluminum foil, and then bake for 6-7 minutes more. To serve, spoon the sour cream and remaining salsa on top of the eggs.

4 (6 inch) corn tortillas or 4 (6 inch) flour tortillas
cooking spray
1/2 cup picante sauce
1 -2 tablespoon ketchup
1 (15 ounce) can pinto beans, drained
4 large eggs
1/4 teaspoon salt
1/4 cup chopped fresh cilantro
hot sauce (optional)
1/4 cup shredded cheddar cheese (optional)

Steps:

  • Preheat oven to 450*F.
  • Lightly coat both sides of the tortillas with cooking spray, and place on baking sheet. Bake at 450*F. for 5 minutes on each side, or until tortillas are crisp.
  • Meanwhile, combine the picante sauce, ketchup, and pinto beans in a large nonstick skillet. Bring to a simmer over medium high heat, stirring frequently.
  • Make small wells in the bean mixture with a wooden spoon 2" apart.
  • Break a an egg into each well, and sprinkle evenly with salt.
  • Cover and cook 5 minutes or until egg is desired doneness.
  • Place one tortilla on each of 4 plates, and top each serving with 1/2 cup bean mixture and 1 egg.
  • Sprinkle each serving with 1 tbls. cheddar cheese, if using, 1 tbls. chopped cilantro and a dash of hot sauce, if desired. Enjoy!
