QUICK AND EASY HUEVOS RANCHEROS
Being Canadian, the only time we were able to enjoy this dish was when we traveled to Cali. When searching for a recipe (including this site) I unfortunately could not find the perfect solution. There were so many different variations with either too many ingredients or missing things we love most. I'm a busy Mom and want EASY so I decided to wing it and came up with my own version. Top with sour cream if desired.

Steps:
- Preheat an oven to 500 degrees F (260 degrees C).
- Arrange tostada shells on a baking sheet. Spread a layer of refried beans onto each shell; sprinkle each shell with about 1 tablespoon Cheddar cheese.
- Combine chipotle peppers in adobo sauce, salsa, and 1 cup cilantro in a saucepan over medium heat; cook and stir until warm, about 5 minutes.
- Put black beans in a microwave-safe bowl; heat in microwave until warm, about 1 minute.
- Heat butter in a skillet over medium heat; cook each egg in the melted butter until white is firm and yolk is still together, 2 to 3 minutes. Carefully place each cooked egg atop a tostada shell; sprinkle with remaining Cheddar cheese.
- Bake tostadas in the preheated oven until cheese is melted, about 10 minutes.
- Place each tostada on a plate; top with salsa mixture and cilantro. Spoon black beans on the side.

- Preheat the oven to 425°F. Grease a 13 x 9 inch baking dish, or spray with nonstick cooking spray. Place the Black Beans and Rice Mix in a medium-sized saucepan with 2 1/2 cups water and the butter. Bring to a simmer over medium high heat, then reduce the heat slightly, cover and keep at a simmer for about 20 to 25 minutes, until the rice is tender, making sure to stir occasionally. Remove from the heat, and let stand for 5 minutes. Remove the lid and fluff with a fork, and set aside.
- While the Rice and Beans are cooking, prepare the tortillas. Place paper towels on a work surface. Heat 1 teaspoon of the oil in a skillet over medium high heat, and cook the tortillas one at a time, for about 1 to 2 minutes on each side, or until just crisp and browned in spots (they should also start to smell nice and fragrant). As they are cooked, transfer them to paper towels. Add more oil, 1 teaspoon at a time as needed until all of the tortillas are cooked.
- Combine the enchilada sauce with the cumin, garlic powder, and chili powder. Layer half the tortillas in the bottom of the prepared pan, overlapping them to cover the bottom of the pan. Drizzle over half of the enchilada sauce, then sprinkle over half of the cheese. Spread the Black Beans and Rice Mixture over the cheese. Repeat layering the tortillas, enchilada sauce and cheese.
- Use the a spoon and your fingers to create 8 evenly spaced little wells in the top of the casserole, breaking holes through the top layer of tortillas so that the eggs have enough room to sink into their indentations. Use the spoon and your fingers to create these wells, making them about 1 inch deep. Crack the eggs carefully into the wells, and season them with salt and pepper.

- Layer 8 tortillas on the bottom of the casserole dish. Spread one cup of salsa on top. Sprinkle evenly with half of the beans and a third of the cheese. Repeat with another layer.
- Top second layer with remaining tortillas. Spread with last cup of salsa and sprinkle with remaining cheese. Use a spoon to create 6-8 shallow holes (depending on how many eggs you'd like!) in the cheese and salsa topping for the eggs. Gently break one egg into each hole.
- Bake for 25-30 minutes, until egg whites are set (this can vary depending on your oven as eggs can be temperamental so if more time is needed, cook in 5 minute increments).
