SOUTHERN SWEET ICED TEA
This is how my Granny made sweet tea and it is some kind of sweet. Know that and beware. Pa-Paw used to down 2-3 glasses after working in the garden all day. Back off the sugar if you can't handle it. This one is for true southerners only ;)

Steps:
- In a large glass measuring cup, place the tea bags and add the baking soda.
- Pour the boiling water over the tea bags.
- Cover and steep for 15 minutes.
- Take out the tea bags and do not squeeze them.
- Pour the tea mixture into a 2-quart pitcher; add the sugar.
- Stir until the sugar is dissolved.
- Add in the cold water.
- Let cool; chill in the refrigerator and serve over ice.

SOUTHERN STYLE SWEET TEA
Every Southern family has a sweet tea recipe, and this one is ours. It's as Southern as a biscuit, great with any dish from apple pie to baked ziti, and should always be available in the fridge.

Steps:
- In a pot, bring 8 cups of water to a boil; remove from heat Add tea bags and allow to steep for 3-5 minutes depending on the strength of tea you prefer. Remove tea bags and stir sugar into warm tea; continue to stir until completely dissolved. Pour concentrated tea into pitcher and mix in remaining 8 cups water. Allow to cool to room temperature. Pour into glasses packed with ice cubes, garnish and serve. For best flavor, refrigerate and use within 48 hours.
HOW TO MAKE SWEET TEA
Steps:
- For the simple syrup:Mix sugar and water in a small saucepan. Bring the mixture to a boil and allow to boil for about 5-7 minutes. You'll notice the mixture will reduce. Remove from heat and pour into a heatproof bowl and set aside to cool. For the tea:In the same saucepan, bring 3 cups of water to a boil. Remove the pot from the range and place on a trivet. Add tea bags and baking soda. Steep for 5-6 minutes. Remove tea bags without squeezing. Add simple syrup and stir. Pour into a pitcher and add remaining 7 cups water. Serve over ice with lemon slices.

- Add water to a medium sized pot and boil over high heat.
- Once boiling, turn off heat and add tea bags. Steep for 10-25 minutes (depending on strength you prefer).
- Stir in sugar in increments until it completely dissolves into the hot tea.
- Remove tea bags from pot then pour tea into a large pitcher.
- Add enough water to fill the pitcher then add lemon wedges and mint (if you would like for garnish and flavor).

- Place 4 cups (1 quart) of water into a large pot and slowly heat the water over medium heat. Once the water starts becoming warmer, add the tea bags and sugar.
- Bring the tea mixture to a low simmer while continuously stirring to dissolve all of the sugar. This is an important step as any sugar granules will leave a strange and unpleasant texture in the cooled off drink.
- Once it has simmered for a minute, remove the pot from the heat and set it aside to allow the tea to steep, about 5 minutes.
- Remove all of the tea bags and allow the tea to cool down considerably.
- Fill a large pitcher with ice cubes and slowly pour the semi-cooled tea over the ice. The ice will start to melt whilst cooling the tea. Add the rest of the water to fill the pitcher and stir to incorporate evenly.
- Place the pitcher in the refrigerator to chill until needed. Serve this delicious cold beverage at a picnic, party or a simple anytime-beverage.
