HOW TO MAKE PERFECT INSTANT POT POT ROAST AND POTATOES

- Add the olive oil to the inner cooking pot and select the "Sauté' function. Use the "Adjust" button to select the "More" (high) setting.
- Once hot, add the roast and season with salt and black pepper, to taste. Sear the roast on all sides, approximately 3-4 minutes per side. Remove roast from Instant Pot® and transfer to a platter. Set aside.
- Deglaze the inner pot by adding the beef broth and gently scraping the bottom with a rubber spatula to release the brown bits. Add the tomato paste, Italian seasoning, cocoa powder, and garlic powder, and stir to combine. Push the "Keep Warm/Cancel" button to turn off the Sauté function.
- Return the roast to the Instant Pot® and add the lid. Lock the lid into place and set the vent to "Sealing." Select the "Manual" button and adjust to the "High" setting, if necessary. Set cook time to 60 minutes.
- When cook time is complete, allow the pressure to release naturally for 10 minutes before doing a quick release on any remaining pressure. Add onion, carrots, potatoes, and green beans on top of the roast.
- Cover and lock the lid into place. Set the vent to "Sealing" and push the "Manual" button (should still be on "High.") Adjust cook time to 3 minutes.
- When cook time is complete, allow the pressure to release naturally for 5 minutes before doing a quick release on any remaining pressure.
- Carefully remove lid and transfer roast and vegetables to a serving platter. Serve immediately garnished with fresh parsley leaves, if desired.

- Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function.
- Combine salt, marjoram, rosemary, garlic powder, onion powder, black pepper, and paprika in a small bowl. Rub mixture all over roast to coat all sides.
- Drizzle oil into the preheated pot. Wait 30 seconds, then place roast into the pot; do not move the meat, allowing it to sear for 3 or 4 minutes. Turn the roast and sear again, 3 to 4 minutes. Repeat until all sides are browned, about 15 minutes total.
- Add potatoes, carrots, and onion to the pot. Pour in broth and Worcestershire sauce. Close and lock the lid; set vent to sealing. Select high pressure according to manufacturer's instructions; set timer for 60 minutes for a 3-pound roast or 80 minutes for a 5-pound roast. Allow 10 to 15 minutes for pressure to build.
- Release pressure using the natural-release method according to manufacturer's instructions for 10 minutes. Release remaining pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.
- Transfer roast, potatoes, carrots, and onions to a platter for serving.

- Pat roast dry and season liberally with salt and pepper.
- Turn on a multi-functional pressure cooker (such as Instant Pot®), add oil, and select Saute function. Add roast to the hot pot and brown for 5 to 8 minutes per side. Remove to a plate.
- Add onion to the pot, adding more oil if needed, and saute until browned, 5 to 7 minutes. Add mushrooms; cook and stir until browned, 3 to 4 more minutes. Add wine and scrape up any browned bits with a wooden spoon. Stir in tomato paste, garlic, and thyme.
- Add beef broth. Place roast on top of the mushrooms and onions. Add potatoes, carrots, and celery. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 80 minutes. Allow 5 to 10 minutes for pressure to build.
- Release pressure using the natural-release method according to manufacturer's instructions, about 15 minutes. Remove roast and vegetables to a bowl.
- Switch to Saute function. When juices begin to bubble, whisk in flour and cook to thicken, 2 to 3 minutes.

- Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Pour in 2 tablespoons oil. Add roast to hot oil and cook until browned all over, 4 to 5 minutes per side. Add broth.

- Brown the roast. Using the 'Sauté' option on the Instant Pot, pour olive oil into the bottom of the insert. Allow the pot to heat up for several minutes until it gets nice and hot.

- Cut the meat into 3-6 even pieces. Season the meat chunks with salt and pepper. Press the Sauté button in your pressure cooker. Once hot, add 1/2 tablespoon oil. Brown the roast pieces from all sides. Work in 2 batches adding another 1/2 tablespoon of oil before the second addition.
- Remove the meat from pot. Add the last 1/2 tablespoon of oil and sauté the chopped onion. Once translucent, add the minced garlic and cook until fragrant (1 minute). Then stir in the tomato paste (or roasted red pepper paste). Deglaze with the wine and scrape up any brown bits from the bottom of the pot.

Alternatively, do a staggered quick release: Repeatedly turn the valve to venting in short bursts. Return to sealing position as soon as you notice cooking liquids escaping with the steam. Repeat until all pressure is released.

- Set a 6 qt instant pot to the high saute setting. Add the olive oil to the bottom of the instant pot and allow to heat for 1-2 minutes. While it’s heating, sprinkle both sides of the chuck roast with salt, pepper, garlic powder and onion powder.
- Use tongs to place the chuck roast in the instant pot with the olive oil and allow to cook for 3-4 minutes on each side without moving it so it creates a browned crust.

- When the cooking time is up, do a natural release for 10 minutes (don’t touch anything, just let it release pressure on its own) then use a wooden spoon or towel to turn the valve to “venting” to quick release the rest of the pressure. Transfer the roast to a platter and shred. Add the vegetables to the roast to serve.
