CHAO GA - VIETNAMESE RICE PORRIDGE



Chao Ga - Vietnamese Rice Porridge image

My Vietnamese fiancé absolutely loves Chao Ga. He and I edited a version we got to make it easier for our family. It's a thick rice soup. The rice gets soft and it's very comforting when sick. You can use just long grain white rice if you do not have glutinous rice. It's a great way to use leftover chicken, and sometimes I poach an egg on top after the rice has cooked to have more of a comforting feel. Sometimes you need to add more chicken stock to keep it soupy, so I check it a couple times while cooking. You can garnished with a couple of sliced Polygonum leaves, but I don't have them so I skip that part.

6 cups water
6 cups chicken stock
1/2 cup glutinous rice
2 cups long grain rice
1 -2 cup chicken meat, shredded
3 tablespoons fish sauce
1 teaspoon sugar
1 tablespoon poultry seasoning
2 -4 eggs, depending on desired servings (optional)
2 tablespoons sliced mushrooms (optional)
1 teaspoon white pepper (black works also)
2 scallions or 2 green onions, sliced thin

Steps:

  • Place rice and glutinous rice in a large pot with water and stock.
  • Bring to boil then lower heat, cover and simmer, stirring occasionally.
  • Cook until rice is very soft and mixture is thick. Roughly 45-60 minutes.
  • Add fish sauce, sugar, shredded chicken, mushrooms, and poultry seasoning.
  • Stir Gently.
  • If desired, to Poach eggs: add to top of the mixture and cover.
  • Let it simmer an additional 5-10 minutes, or the eggs are cooked to your liking.
  • Spoon porridge into individual serving bowls.
  • Garnish with spring onion.
  • Sprinkle with pepper.

12 ½ pounds green tomatoes, chopped
8 large onions, chopped
10 green bell peppers, chopped
3 teaspoons salt
6 chopped green chile peppers
1 quart distilled white vinegar
1 ¾ cups white sugar
½ cup prepared horseradish
1 tablespoon ground cinnamon
1 tablespoon ground allspice
¼ teaspoon ground cloves

Steps:

  • In a large bowl combine tomatoes, onions, bell peppers and salt. Let stand overnight.
  • Drain the tomato/pepper mixture and add the hot chile peppers, vinegar, sugar, and horseradish. Wrap the cinnamon, allspice, and cloves in cheesecloth or a porous bag, and add to tomato/pepper mixture.
  • Boil for 15 minutes, or until tender.
  • Pack tightly in sterilized jars and seal.

Authentic Homemade Indian Chai image

An actually-authentic Indian Chai tea recipe, as made for me by my lovely Indian mother-in-law. Tea the Indian way is rich and milky, deeply coloured, steaming hot, flavourful and sweet.

8 oz water
4 oz whole milk
granulated sugar (to taste (about 2 heaped teaspoons per serving, traditionally))
1 heaping tablespoon of black tea (empty out tea bags to make a tablespoon if you don't buy loose leaves)
4 cardamom pods (smashed with side of a knife)
small piece of cinnamon stick
1/4 " coin of fresh ginger
pinch of fennel seeds (about 10 seeds)

Steps:

  • Bring water and milk to a simmer with desired spices in a medium saucepan. Reduce heat to lowest setting and add tea. Steep until tea takes on a deep, pinky-tan colour, about 3 minutes, stirring occasionally. Strain into a cup and stir in sugar to taste.

1/3 cup dark soy sauce ((see Note))
1/4 cup oyster sauce
vegans: use hoisin sauce
recipe for homemade hoisin sauce
2 tablespoons sugar
1 1/2 tablespoons fresh ginger (,finely minced)
1 lb pork tenderloin
1 lb thick round Chinese egg noodles (can substitute Japanese udon noodles)
2 tablespoons high heat cooking oil
4 cloves garlic (,sliced thinly)
6 green onions (,cut into 1-inch pieces and then julienned lengthwise (keep green and white parts separate))
1/2 head Napa cabbage (,thinly sliced (white and pale green parts kept separate))
1 1/2 tablespoons cornstarch dissolved in 1 cup chicken stock
1 1/2 tablespoons sesame oil
Ground white pepper to taste

Steps:

  • To make the marinade, combine the soy sauce, oyster sauce, sugar and ginger and stir until the sugar is dissolved. Place the pork in the marinade and let sit for 10 minutes. Drain and reserve the marinade for later.
  • Heat the oil in a wok or heavy skillet on high heat and fry the pork for one minute or until done. Remove the pork and set aside. Next fry the white parts of the cabbage and green onions along with the garlic for 30 seconds or until tender. Return the pork to the pan along with the reserved marinade, the sesame oil, chicken/cornstarch mixture and the green parts of the cabbage and green onions. Cook for 30 seconds. Add the noodles and stir until combined. Add white pepper to taste. Serve immediately.

  • Before starting: I recommend using gloves when handling the tofu to prevent bad bacterias and mold from growing.
  • Bring 4 cups of water with one tablespoon of salt to a boil in a medium size sauce pan. Once boiling, add the tofu and boil for 4 minutes.
  • Remove the tofu from the water and place it on a few sheets of kitchen paper towel. Top with more kitchen paper towel and place a heavy weight on it to press the tofu and remove excess water. I usually use an iron skillet. Let it drain for about 90 minutes, changing the paper towel as needed if it becomes too wet.
  • Line a large plate with two layers of kitchen paper towel, or a clean towel. Cut the tofu into 1-inch cubes and place the cubes on the plate, leaving about 1 inch between each cube, so they don't touch each other. Top with another sheet of kitchen paper towel and cover the whole plate with plastic film. The plastic film will prevent bad bacterias from reaching the tofu.
