OX ROAST

Ox Roast image

A terrific deli-style roast beef that is chilled first for better slicing. This recipe makes a really good Ox Roast sandwich.

Provided by Jon

Categories     Main Dish Recipes     Roast Recipes

Time 3h20m

Yield 30

Number Of Ingredients 10

½ cup chopped onion
½ cup chopped celery, with leaves
½ cup carrot, chopped
1 pinch freshly ground black pepper
1 clove garlic, chopped
4 cups beef broth
1 (1 ounce) envelope dry onion soup mix
4 cups water
salt and coarsely ground pepper to taste
10 pounds beef round roast

Steps:

  • Preheat the oven to 200 degrees F (95 degrees C).
  • In a large roasting pan, combine the onion, celery, carrot, pepper, and garlic. Stir in the beef broth, onion soup mix and water so that the soup mix is dissolved. Season the roast with salt and coarse ground pepper, and place into the roasting pan.
  • Place the uncovered roasting pan into the preheated oven. After 1 hour of roasting, begin basting every 30 minutes. Use a meat thermometer to check the temperature, and bake until the internal temperature of the roast reaches 130 to 140 degrees F (55 to 60 degrees C) for medium rare, or 145 to 155 degrees F (63 to 68 degrees C) for medium well. When the temperature has reached 110 degrees F (43 degrees C), you will need to begin checking more often.
  • When the roast is done, remove the meat to a platter, and set aside. Place the roasting pan full of stuff onto the stove top. Cook over medium heat, mashing the vegetables against the side of the pan with a large spoon. Simmer to reduce the sauce to about half. This may take 20 or 30 minutes depending on the size of pan. Strain the juice over the meat, and let it begin to cool in the juices. When the meat has cooled, wrap and refrigerate for a few hours or overnight. Reserve juices in a separate container.
  • When the roast is cold, unwrap it, and slice against the grain as thinly as possible. An electric meat slicer works best, but a sharp knife or electric carving knife will also work well. Skim the fat from reserved juices, and heat the meat in the juice over low heat. Adjust seasonings to taste before serving.

ANTELOPE SAUSAGE | MEATEATER COOK
2019-11-13 Or, get creative and add it to a variety of other recipes that call for sausage. Ingredients 4 pounds antelope; 1 pound pork fatback (25-35% fat ratio) 10 feet fresh hog casings (32-35 mm in diameter) 1/2 large yellow onion, chopped ; 1/2 tsp. cooking …
From themeateater.com
  • Prepare the meat and fat by chopping into small cubes. Try to remove excess sinew and silverskin to keep it from gumming up the auger when grinding. Pure pork fatback is the best option, but pork butt will also work. Weigh out roughly 3 ½ to 4 pounds of antelope meat, and just over a pound of fatback, or until you get the desired 25-30% ratio of fat to meat. Spread the meat across a metal sheet tray or place inside a metal bowl and transfer to the freezer to chill. You want the meat to be very cold, not quite frozen, but with a crunchy texture. In addition to chilling the meat, it’s best to place the blade, auger, and grinder plate inside the freezer as well.
  • While the meat is chilling, prepare the other ingredients. Heat the cooking oil in a sauté pan over medium heat. Add the onion and cook until soft and translucent. Measure out roughly 1 1/3 cups of onion and transfer to a tray or bowl. Place this inside the freezer to chill. You can also measure out the apple cider and place it in the freezer at this time. Again, you don’t want anything to freeze solid, but you need to make sure everything is very cold.
  • Mince the fresh herbs and pack them into measuring spoons to get the proper amount. Mix the salt and herbs in a small bowl to combine.
  • Prepare the casings according to package instructions if using dried intestines. Either dried or fresh should be soaked in lukewarm water for at least 10 to 20 minutes. Additionally, hold the casings under running water to flush the insides. They should be pliable and odor free. Thread the casing onto the feeding tube of your sausage stuffer. Tie a knot at one end and prick with a needle to release air.

TIPS FOR SCIMITAR ORYX? - TEXAS HUNTING FORUM
Try adding fresh papaya or pineapple to your marinade. Those fruits have enzymes that will tenderize meat in addition to the acid. It has to be fresh though, canned doesn't have the enzymes like papain. I've never had oryx, but it worked on steak from an old mule deer. Before the marinade, you could have used those steaks as everlasting shoe soles.
