- In a small bowl, whisk together cornstarch and water. Set aside.
- In a medium sized pot, bring to a boil coconut milk, nutritional yeast, garlic powder, onion powder, cumin, sea salt, turmeric, cayenne, and lemon juice. Add cornstarch mixture and simmer for 5 minutes stirring the bottom to avoid burning.
- Drain and rinse hominy and add to the pot. Heat for an additional 5 minutes.
- Using a grill skillet or a regular skillet, add serranos and roast on all sides until blackened.

- Preheat an oven to 400 degrees F (200 degrees C). Line a baking sheet with a sheet of aluminum foil.
- Pat the rinsed hominy dry with paper towels and place into a mixing bowl. Sprinkle with garlic powder and chili powder. Drizzle with the vegetable oil, and toss until evenly coated. Spread onto the prepared pan in a single layer.
- Bake in the preheated oven, stirring every 10 minutes, until the hominy is crisp and dry, 40 to 50 minutes. Allow to cool to room temperature before serving.

- Place the dried hominy (cracked corn) in a large pot or bowl and cover with an inch of water. Soak overnight. You can skip this step, but the corn will take longer to cook.
- Drain the corn and place it in a large stockpot. Add 5 cups of water and salt (or just the broth) and bring to a simmer over medium heat.
- Cover and simmer over low heat until corn is tender, about 1 hour, or longer if it was not presoaked. Check the corn often and add more water if needed.
- Once corn is cooked, stir in the butter, if using, and serve it warm as a porridge or as a savory side dish seasoned with salt and pepper to taste. If you are planning to use it to make masa for arepas or empanadas, remove the lid and let the corn cool in the pot to allow some moisture to evaporate as it cools.

- Gather the ingredients.
- Cut the pork into chunks. Fairly big pieces are traditional, but if you prefer, cut the pork into bite-sized pieces.
- Put the pork in a large pot and add enough cool water to cover it by about 2 inches (approximately 5 to 6 cups). Bring to a boil, skimming off any foam that forms in the pot.
