COLORFUL CORN SALAD

- In a large bowl, combine the first 12 ingredients. In a microwave-safe dish, combine oil and garlic. Microwave, uncovered, on high for 30 seconds. Cool. Whisk in lime juice. Pour over corn mixture and toss to coat. Cover and refrigerate until serving.

- Heat the butter in a saucepan over medium heat, and stir in the corn and onion. Cook 5 minutes, until heated through. Mix in parsley, and season with salt and pepper. Garnish with chives to serve.

I got this recipe from a woman's magazine years ago. I really enjoy this, especially in the summertime when grillin' & chillin'! Dice fruit and veggies to your desired size.

- Peel and remove seed from papaya, cut into 1/2" dice.
- In a bowl, combine all ingredients except cilantro.
- Cover and refrigerate up to 2 hours.
- Just before serving, toss in cilantro.
- Serve chilled with your favorite tortilla chips.

When making this salad, which is lightly spiked with jalapeño pepper, have all the ingredients prepared ahead. Then just toss them together as close to serving time as possible to keep the flavors fresh.
