The old-fashioned is one of the oldest mixed drinks in the cocktail canon. (Original name: whiskey cocktail, which became old-fashioned whiskey cocktail, and then just old-fashioned.) It is a stirred drink, usually built in the glass in which it is served. Both rye and bourbon are suitable base spirits. For the sweetener, purists muddle up a sugar cube with water and a couple dashes of bitters, but simple syrup works as well. Twists can be orange, lemon or both (known as "rabbit ears"). A fruited version of the drink came into vogue after Prohibition and involves the muddling of a cherry and orange slice along with the sugar. That version remains widespread, but we advocate the more elemental rendition that took hold in the late 1800s, one that allows the flavors of the whiskey to shine.

Number Of Ingredients 4

1 sugar cube (or 1 bar spoon simple syrup)
2 dashes Angostura bitter
2 ounces rye or bourbon
Orange twist

Steps:

  • Muddle the sugar cube and bitters with one bar spoon of water at the bottom of a chilled rocks glass. (If using simple syrup, combine bitters and one bar spoon of syrup.) Add rye or bourbon. Stir.
  • Add one large ice cube, or three or four smaller cubes. Stir until chilled and properly diluted, about 30 seconds. Slip orange twist on the side of the cube.

This light-bodied, low-in-alcohol, aperitif-style cocktail from Natasha David shows off the benefits of its collection of disparate ingredients. The Lillet assumes easy, refreshing drinking; the Suze and vermouth lend a slight bitterness and subtle complexity; and the bourbon anchors it all. 1/2 ounce Suze
1/2 ounce dry vermouth
1/2 ounce bourbon
1 heaping bar spoon of orange marmalade
Ice
Orange wheel, for garnish

Steps:

  • Combine all the ingredients in a mixing glass with ice and stir. Strain the liquid into a double rocks glass with ice. Garnish with an orange wheel.

DUBONNET COCKTAIL

Now that a reformulated Dubonnet has been introduced in the United States, a cocktail is in order. The most famous one is this mix of Dubonnet and London dry gin; this recipe is endorsed by Lynn House, a bartender and brand representative for Heaven Hill, the distiller that makes Dubonnet in the United States. She helped reconfigure the American recipe for Dubonnet. This cocktail is a bit stronger than that reportedly preferred by Queen Elizabeth II, who opts for two parts Dubonnet to one part gin. The recipe works equally well on the rocks. Another old cocktail that once went by the same name calls for dry sherry instead of gin. It is also worth a try.

Steps:

  • In a mixing glass half filled with ice, combine the Dubonnet and gin, and stir until well chilled, about 30 seconds. Strain into a coupe glass. Squeeze the orange twist over the surface of the drink and drop it into the glass.

1 ounce Campari

Steps:

  • Combine all liquid ingredients with ice in a mixing glass and stir until chilled, about 30 seconds. Strain into a rocks glass filled with ice. Squeeze orange twist over drink and slip into glass.

This austere cocktail, as elegant and proper as the hotel it's named after, has long been associated with the Wilmington, Del., landmark, which still stands. This version of the drink is served at Le Cavalier at the Green Room, the hotel's new restaurant, which recently opened. It was devised by Tyler Akin, a Wilmington native and Philadelphia chef who is running the kitchen and is a partner in the restaurant.

1 1/2 ounces V.S.O.P. Cognac, preferably Guillon Painturaud
1 1/2 ounces fino sherry, preferably Alvear
1 dash Angostura bitters
Ice cubes, as needed

Steps:

  • Combine Cognac, sherry and bitters in a mixing glass half-filled with ice. Stir until chilled, about 15 seconds. Strain into a chilled coupe. Squeeze orange twist over drink and drop in.
