NEW YORK PUSHCART ONIONS (FOR HOT DOGS)
I am a Canadian who spent 6 winters in Florida, and while there I met a person from New York (Brian). I did the cooking for most parties at the park, including snacks for our golf group which met twice a week after golf. Brian told me about the Push Cart Onions and I tried them with the group. They loved them. You can play with this recipe to suit your taste. Add more or less sugar, maybe a little more hot sauce, etc.

Steps:
- Heat vegetable oil in a large skillet over medium heat; cook and stir onions and green bell pepper until onions are slightly browned and soft, 8 to 12 minutes. Mix in ketchup, sugar, chili powder, hot pepper sauce, and cinnamon until thoroughly combined. Pour in water, bring mixture to a boil, and simmer uncovered until onions are tender, about 10 more minutes.

- Heat a large frying pan with a tsp. of butter. Add the hotdogs and cook until a beautiful golden color. Heat another large frying pan with a tablespoon of olive oil. Add the onions, garlic and jalapeño. Sauté until the onions are slightly golden. Add the tomato and continue to sauté until the tomato is soft. In a small bowl combine the Worcestershire sauce, ketchup, vinegar, honey, salt, black pepper, garlic powder, ground cumin and brown sugar. Stir together and add to the pan. Simmer on low while the hot dogs finish cooking. Heat the hotdog buns and place the sliced American cheese on the bun; top with the hotdog and the onion/tomato relish.

- 1. Heat a large frying pan with a tablespoon of olive oil.
- 2. Add the onions, garlic, and jalapeno. Sauté until the onions are slightly golden.
- 3. Add the tomato and continue to sauté until the tomato is soft.
- 4. In a small bowl, combine the Worcestershire sauce, ketchup, vinegar, honey, salt, black pepper, garlic powder, ground cumin and brown sugar.
- 5. Stir together and add to the pan.
- 6. Simmer on low while the hot dogs finish cooking (5-10 minutes, stirring occasionally).
- 7. Heat another large frying pan with a teaspoon of butter.
- 8. Add the hot dogs and cook until a beautiful golden color.
- 9. Heat the hot dog buns.

- Heat the corn oil in a skillet over medium heat. Stir in the onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. - For the tomato relish, fold a 36x18-inch piece of heavy foil in half to make an 18x18-inch square. In a medium bowl combine 2 cups of the tomatoes, the onion, garlic, oregano, mustard, water, salt, brown sugar and pepper. Place mixture in center of the foil. Bring up two opposite edges of the foil; seal with a double fold. Fold the remaining edges to enclose the mixture, leaving space for steam to build.
- For a charcoal grill, place the foil packet on a grill rack directly over medium coals. Grill for 10 minutes; turn packet. Grill about 10 minutes more or until onion is tender. (For a gas grill, preheat grill. Reduce heat to medium. Place foil packet on grill rack directly over heat. Cover and grill as above.).
- Meanwhile, place hot dogs on grill rack around foil packet; grill for 5 to 7 minutes or until heated through, turning occasionally.
- Carefully open rellish packet and stir remaining 1 cut tomato halves and the grapes into hot relish mixture. Place hot dogs in toasted buns; serve tomato relish with the hot dogs.

- Gather the ingredients.
- Combine the tomatoes, onions, peppers, and salt in a large stainless steel pan. Cover and let stand in a cool place (about 65 F to 70 F) for 10 to 12 hours or up to overnight.
- Pour the vegetables into a colander over the sink and let drain. Rinse with cool water and use your hands to squeeze out any excess liquids.
- Place the pickling spices and celery seeds in a cheesecloth spice bag and tie closed.
- In a large stainless steel or enamel-lined pan, combine the vinegar, the spice bag, garlic, and brown sugar. Place over high heat and bring to a boil, stirring until the sugar dissolves.
- Add the drained green tomato mixture and bring the mixture to a boil. Reduce the heat to medium-low and boil gently, stirring often, for 1 hour.
- While the mixture is cooking, prepare the canner, jars , and lids.
- Fill the hot, prepared jars with the relish and remove any air bubbles with a small plastic spatula, leaving 1/2-inch headspace. Clean the jar rims and fit with the lids and rings.
- Process in a covered boiling-water bath canner for 10 minutes. Turn off the heat, remove the cover, and let the jars stand in the hot water for 5 minutes. Remove to a rack to cool completely.
- Store in a cool, dark spot for up to a year.

- Begin by sauteing onions over medium heat in a medium sized pan that was sprayed with PAM cooking spray. Cook until slightly browned and soft. Chop the cilantro. Add in the garlic and cook for 30 seconds or until fragrant. Add in the Rotel and remaining ingredients. Cook, uncovered on a simmer until liquid is reduced by half.
- Cover and continue simmering for an additional 20 minutes so all the flavors can come together. Serve as a condiment to many dishes!
- If you are making the Mexican Style Hot Dogs, stop at the point of reducing the liquid by half. Bring the pan and everything to the grill when cooking the hot dogs. Let this sit directly on the grates, covered under low heat. It will be done when the hot dogs are done cooking.
