3 tablespoons butter
2 tablespoons all-purpose flour
1 to 1-1/2 teaspoons salt
1/4 to 1/2 teaspoon pepper
1-1/2 cups 2% milk
5 medium red potatoes, thinly sliced
1 package (1 pound) hot dogs, halved lengthwise and cut into 1/2-inch slices
1 medium onion, chopped
1/3 cup shredded cheddar cheese

Steps:

  • Preheat oven to 350°. In a small saucepan, melt butter. Stir in the flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir until thickened and bubbly, 2 minutes. , In a greased 2-1/2-qt. baking dish, layer with a third of the potatoes, half of the hot dogs and half of the onion. Repeat layers. Top with remaining potatoes. Pour white sauce over all., Bake, covered, for 1 hour. Uncover; sprinkle with cheese. Bake until potatoes are tender, 10-15 minutes longer.

3/4 cup green pepper, chopped
1 lb hot dog, sliced
1 (16 ounce) can pork and beans
1/3 cup chili sauce
1/3 cup catsup
1 1/2 tablespoons brown sugar (optional)
1 (8 ounce) can biscuits
3/4 cup cheddar cheese, shredded (optional)

Steps:

  • Cook onion and green pepper in 1 tablespoons butter.
  • Stir in hot dogs, beans, chili sauce and catsup.
  • For a sweeter flavor, add brown sugar.
  • Simmer 2 minutes.
  • Spoon hot mixture into an ungreased 9 inch square pan or 12 X 8 pan.
  • Separate biscuit dough into 10 biscuits;.
  • Arrange 10 biscuits over hot meat mixture;.
  • Sprinkle with cheddar cheese.
  • Bake at 375 degrees for 20 to 25 minutes or until biscuits are golden.

1 package hot dogs
1 pound bacon
2 cans (20 ounces each) Bushes Baked Beans
Mustard on the side for dipping

Steps:

  • Take package of hot dogs and cut in half and then split length wise. Meanwhile cook bacon on low medium flame and cook until half way cooked, do not cook to a crisp.
  • When bacon is finished using same pan place hot dogs flat side down first and brown and then flip and brown on other side. Then open cans of baked beans and add one can and then layer hot dogs, then add the other can and layer bacon on top.
  • Put into oven 350 degrees F for about 20 minutes or until bacon becomes crisp. Let sit for 5 minutes and then serve.

Feed a crowd with this all-in-one brunch dish with homemade baked beans, chipolatas, bacon and fried eggs

12 chipolatas
200g pack smoked dry-cured bacon lardons
4 tbsp sunflower oil
680g bottle passata
1 tbsp sweet smoked paprika
3 tbsp tomato purée
1 tbsp brown sugar
100g brown sauce
3 x 400g cans cannellini beans , drained and rinsed
6 eggs
piles of hot buttered toast , to serve

Steps:

  • Heat oven to 220C/200C fan/gas 7. Toss the chipolatas, bacon lardons and 1 tbsp of the oil together in a large roasting tin. Roast for 20-30 mins until everything is turning brown and crisp - you may want to tip off any liquid and stir it halfway. Use a fish slice to scrape up any stuck bits.
  • Whisk together the passata, paprika, tomato purée, sugar, brown sauce, 250ml water, a little salt and lots of pepper. Stir into the tin with the beans. Can be made 1 day ahead - cool first, tip into a plastic container, then chill.
  • Put the tin back in the oven and bake for another 20 mins until thickened and bubbling (add another 10 mins if cooking from chilled).
  • Turn off the oven but leave the tin in to keep warm while you fry the eggs. Heat the remaining oil in a large frying pan, crack in the eggs and fry them to your liking. Serve the fried eggs with the sausage bake and plenty of hot buttered toast.

5 slices uncooked thick bacon, diced (can use more)
1 large onion, chopped
2 tablespoons fresh minced garlic
2 (28 ounce) cans baked beans
3 tablespoons molasses
2 tablespoons prepared yellow mustard
1 tablespoon mustard powder
1/2 teaspoon seasoning salt
1/2 cup canned diced tomato (do not use the juice)
1/2-3/4 cup brown sugar
4 large hot dogs, chopped (preferably a good brand of beef hot dogs)

Steps:

  • Set oven to 350 degrees F.
  • Grease a 2-quart casserole dish.In a large bowl.
  • In a skillet cook the bacon with onions until evenly browned.
  • Add in garlic and cook stirring for 2 minutes; drain and place into a large bowl.
  • Add in the 2 cans baked beans, molasses, prepared yellow mustard, dry mustard powder, seasoned salt, tomatoes and brown sugar (start with 1/2 cup and add in more to taste) mix well to combine.
  • Mix in the hot dogs.

1/3 cup packed light brown sugar
1/4 cup molasses
2 tablespoons apple cider vinegar
2 tablespoons yellow mustard
1/4 to 1/2 teaspoon hot sauce, (I use TABASCO)

Steps:

  • Preheat oven to 350 degrees.
  • In a Dutch oven, cook bacon until crispy. Remove with a slotted spoon and place on a paper towel-lined plate.
  • Add onion to bacon drippings and cook until soft.
  • Add garlic and smoked sausage and cook until sausage is browned.
  • Stir in remaining ingredients. Bring to a simmer. Place Dutch oven, uncovered, in oven and cook for 45 to 55 minutes, until thick.

6 herby/garlic chorizo-style sausages
6 chunky pieces pork belly, approximately 1kg (2¼lb)
200g (7oz) smoked streaky bacon, chopped
1 large onion, peeled and cut into thin wedges
4 sticks celery, sliced
1 level tsp paprika
400g can chopped tomatoes
410g can cannellini beans, drained and rinsed
200ml (7fl oz) hot ham or pork stock
Salt and freshly ground black pepper

Steps:

  • Set the oven to gas mark 4 or 180°C.
  • Heat the oil in a frying pan and add the sausages. Cook them over a medium heat for about 5-7 mins, turning them regularly until they have browned. Transfer the sausages to a casserole dish.
  • In a frying pan, cook the pork belly for about 5-7 mins, turning it occasionally until it's browned on all surfaces and then add it to the casserole dish.
  • Add the bacon, onion and celery to the frying pan and cook for about 5 mins, turning mixture occasionally until the bacon starts to brown and the onion and celery have softened. Sprinkle the paprika over and cook for a further minute, then transfer mixture to the casserole dish.
  • Add the tomatoes, beans and stock to dish and season. Stir the contents of casserole gently to mix them, then cover the dish.
  • Place the casserole dish in the centre of the oven and cook for 1½-2 hrs, or until the pork is tender. Remove from the oven and serve immediately, with mashed potato to soak up all the juices, if you like.
