A great Southern appetizer that couldn't be easier. Instead of the Rye bread, you could use toast rounds, triangles, or even hollowed mushrooms - whatever you like.

7 1/2 ounces crabmeat, drained and picked free of shell fragments (please don't use the fake stuff)
1/2 cup mayonnaise
1/2 cup parmesan cheese, grated
rye cocktail bread (one sleeve of the mini slices)

Steps:

  • Mix all ingredients together and spread on the Rye mini-slices.
  • Place under a broiler until hot and bubby.

HOT CRAB AND ASPARAGUS CANAPES



Hot Crab and Asparagus Canapes image

An easy to make-ahead appetizer for a New Year's Eve get-together. You can use canned, frozen or fresh crab meat.

Number Of Ingredients 10

8 ounces cream cheese, softened
8 ounces canned crabmeat, drained and squeezed of excess moisture
1 large garlic clove, minced
2 large green onions, finely chopped
1/4 teaspoon salt
1 teaspoon lemon juice, freshly squeezed
1/2 teaspoon Tabasco sauce or 1/2 teaspoon hot pepper sauce
1 loaf baguette, cut diagonally into 1/4 inch slices
16 small asparagus spears, blanched and cut in half lengthwise
1/4 cup freshly grated parmigiano-reggiano cheese

Steps:

  • Preheat oven to 400°F.
  • Line a baking tray with parchment paper.
  • In a mixing bowl, beat cream cheese until light.
  • Beat in crab, garlic and green onions until just combined.
  • Season with salt, lemon juice and Tabasco sauce; combine well.
  • Slice baguette diagonally into 1/4 inch thick slices.
  • Spread mixture on the baquette slices and set on the baking tray.
  • Top each canape with 2 asparagus halves, cut side down.
  • Sprinkle canapes with grated Parmesan cheese.
  • Bake in preheated 400 F oven for 10 minutes or until heated through.
  • Arrange on a platter and serve.
  • NOTE: To blanch the asparagus, cook in boiling water for 1 - 2 minutes.
  • Drain and immediately chill in ice water; drain.
  • These canapes can be made ahead of time and stored in the refrigerator, loosely wrapped in plastic wrap.
  • Because you will be baking from cold, allow 3 - 4 minutes extra cooking time.

This is a simple recipe for a great appetizer, especially before a hearty Italian meal or as a selection at a cocktail party. I threw it together because I love all of the ingredients on their own and they're amazing together.

4 white bread, slices crusts removed
16 thin slices prosciutto
4 small buffalo milk mozzarella cheese, cut in half
2 roma tomatoes, sliced
extra virgin olive oil, for brushing
salt
fresh flat-leaf parsley, chopped to garnish

Steps:

  • 1). Preheat the oven to 425.
  • 2). Cut each slice of bread in half.
  • 3). Lightly brush each half slice of bread with olive oil.
  • 4). Place 2 slices of prosciutto on each slice of brushed bread.
  • 5). Place a half piece of mozzarella atop the prosciutto.
  • 6). Place a tomato slice atop each piece of cheese and salt VERY LIGHTLY.
  • 7). Place canapes on a cookie sheet and bake in preheated oven approximately 5-7 minutes until the cheese has melted.
  • 8). Sprinkle parsley over canapes to garnish, place on serving tray and enjoy.

  • remove crusts, cut into triangles,toast bread on both sides, remove from oven mix remaining ingredients, top each toast with mixture.
  • lower oven to 375, add toasts to cookie sheet, bake 10 minutes.

1/4 teaspoon paprika
1 teaspoon prepared mustard
1/2 teaspoon Worcestershire sauce
3 drops Tabasco sauce
3 tablespoons sherry wine
1/2 cup mayonnaise
toast rounds or cracker

Steps:

  • Drain lobster. Mince meat very fine or grind. Add seasonings, sherry and mayonnaise. Pile mixture on small rounds of toast or crackers and place under broiler until sauce bubbles.

  • Preheat oven to 350 degrees. With an electric mixer, mix all ingredients in a bowl. Place mixture in a shallow ovenproof casserole dish. Bake for 15 to 20 minutes or microwave until warm (2 to 3 minutes). Serve with crackers. This may be frozen for future use.
