CHEESE PUFFS
"I found this recipe in one of my mother's old cookbooks and updated the flavor by adding cayenne and mustard," recalls Jamie Wetter of Boscobel, Wisconsin. "Tasty and quick for this busy season, these tender, golden puffs go together in minutes and simply disappear at parties!"

Steps:
- In a large saucepan, bring the water, butter, salt and cayenne to a boil. Add flour all at once and stir until a smooth ball forms. Remove from the heat; let stand for 5 minutes. Add eggs, one at a time, beating well after each addition. Continue beating until mixture is smooth and shiny. Stir in Gruyere and mustard. , Drop by rounded teaspoonfuls 2 in. apart onto greased baking sheets. Sprinkle with Parmesan cheese. Bake at 425° for 15-20 minutes or until golden brown. Serve warm or cold.

CHEESE PUFFS
Steps:
- Preheat the oven to 425 degrees F. Line 2 baking sheets with parchment paper.
- In a saucepan, heat the milk, butter, salt, pepper, and nutmeg over medium heat, until scalded. Add the flour all at once and beat it vigorously with a wooden spoon until the mixture comes together. Cook, stirring constantly, over low heat for 2 minutes. The flour will begin to coat the bottom of the pan. Dump the hot mixture into the bowl of a food processor fitted with the steel blade. Immediately add the eggs, Gruyere, and Parmesan and pulse until the eggs are incorporated and the dough is smooth and thick.
- Spoon the mixture into a pastry bag fitted with a large plain round tip. Pipe in mounds 1 1/4 inches wide and 3/4-inch high onto the baking sheets. With a wet finger, lightly press down the swirl at the top of each puff. (You can also use 2 spoons to scoop out the mixture and shape the puffs with damp fingers.) Brush the top of each puff lightly with egg wash and sprinkle with a pinch of Gruyere. Bake for 15 minutes, or until golden brown outside but still soft inside.
CHEESEPUFFS
My sister always made these when I visited her in Fla. and they are so good. As soon as I make a pan of these they are gone in seconds. If you're a cheese lover they are the best.

Steps:
- Take loaf of bread. Cut out 1 in. circles out of slices of bread (should get 4 or 5 circles out of 1 slice.) When all slices are cut into circles, put them on a cookie sheet.
- Turn your broiler on and toast one side of the bread for only a minute. WATCH THEM SO THEY DON'T BURN.
- When they are toasted on one side take them out and flip the circles over. Set the circles aside and preheat oven to 350.
- Take a bowl and mix all the ingredients together and spoon about a tsp. of mixture onto the circles of bread not toasted.
- When you have all the mixture on circles, put in the oven and bake for 10 minutes.
- Watch them; when cheese is melted and bubbly it is done.
- Don't bake longer than 10 minutes. Serve immediately.

BASIC CHEESE PUPUSAS
A popular food in El Salvador. A thick corn tortilla filled with cheese and easy to customize. Serve topped with curtido (picked cabbage) or eat plain. My ex-boyfriend's Salvadorean mother's recipe!

- Bring a large pot of lightly salted water to a boil. Add cabbage and cook uncovered until slightly softened, about 3 minutes. Drain in a colander and immediately immerse in ice water for several minutes to stop the cooking process. Drain.
- Mix cabbage, apple cider vinegar, water, onion, carrot, oregano, red pepper flakes, and 1 pinch salt together in a large bowl. Refrigerate until flavors combine, 8 hours to overnight.
- Combine masa harina, water, and 1/2 teaspoon salt together in a large bowl; knead until a smooth, moist dough forms. Add water if dough cracks when you press down on it. Let dough rest, 5 to 10 minutes.
- Stir ricotta cheese, mozzarella cheese, heavy cream, and scallion together in a bowl to make a paste.
- Divide dough into 8 balls. Press your thumb into the center of each ball to form an indentation. Fill indentations with ricotta cheese paste. Pinch edges together around the filling; flatten and smooth into round 1/4 inch-thick patties between your palms.
- Grease a skillet with cooking spray; preheat over medium heat. Cook pupusas in batches until browned, 2 to 3 minutes per side.
- Drain cabbage mixture and serve alongside pupusas.

CHEF JOHN'S PARTY CHEESE PUFFS
These beautiful cheese puffs, gougeres, are as easy as they are delicious. Usually Gruyere cheese is used but I had some very sharp farmhouse Cheddar cheese in the fridge, so I decided to use that. As long as you are using a very sharp, full-flavored cheese I don't think you can go wrong. I love gougeres with Gruyere, but I think the extra-sharp Cheddar was just as good.

- Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with a silicone baking mat.
- Stir water, butter, and salt together in a pot; bring to a simmer. Reduce heat to medium and whisk flour into butter mixture until a paste-like dough forms, 2 to 3 minutes. Transfer dough to a bowl to cool until warm, 5 to 10 minutes.
- Whisk 1 egg, thyme, and black pepper into cooled dough until egg is completely incorporated. Add remaining egg and whisk until completely incorporated into dough. Stir 3/4 the cheese into dough until combined. Scoop 1-inch balls of dough onto prepared baking sheet. Top each with remaining cheese.

Steps:
- Soften yeast in water. Combine in mixing bowl milk, butter, sugar, and salt. Cool to lukewarm. Blend in egg and yeast. Gradually add flour to form a stiff dough; beat well after each addition. Cover. Let rise in a warm place until light, about 1 hour.
- Combine cheese and onion. Roll out dough, 1/2 at a time, on floured surface to 14x8 rectangle. Cut into 7x2 inch pieces. Place about 3 rounded tablespoons cheese down center of each. Bring edges to center; seal. Seal ends. Place seam-side down, on cookie sheets. Repeat with remaining dough. Let rise in warm place, 30 minutes.
- Fry in heavily-buttered skillet on medium heat, about 2 minutes on each side. Turn carefully to brown all sides. Add butter as needed. Serve hot.
