BOOZY HOT WASSAIL



Boozy Hot Wassail image

A semi-traditional wassail recipe made with baked apples, hard cider, wine and brandy. See notes to make non-alcoholic!

4 small apples
4 tablespoons brown sugar or demerara sugar ((55 grams))
1 medium orange
1 teaspoon whole cloves
1/2 cup water ((125 ml))
1 quart hard cider ((1 liter))
2 cups port or sweet madeira wine ((500 ml))
1 cup brandy ((250 ml))
1/2 lemon (, halved)
2 cinnamon sticks
1 teaspoon whole allspice

Steps:

  • Preheat oven to 350 degrees F.
  • Remove core of apples with a small knife or melon baller. Place in a 4-quart or larger dutch oven or other oven-proof pot. Fill the cavity of each apple with 1 tablespoon of brown or demerara sugar. Stud the orange with the whole cloves and place in the pot. Add the water.
  • Bake until apples are tender but still maintain their shape, 35-45 minutes.
  • Remove pot from the oven and place on the stove. Cut orange into quarters and return to the pot. Add hard cider, wine, brandy, lemon, cinnamon sticks, and whole allspice.
  • Barely bring to a boil over medium high heat, then reduce heat and simmer for about 20 minutes, stirring occasionally. Serve immediately or keep warm until ready to serve.

2 quarts apple cider
1-1/2 cups orange juice
3/4 cup pineapple juice
1 tablespoon brown sugar
1/2 teaspoon lemon juice
2 cinnamon sticks (3 inches)
Dash ground cinnamon
Dash ground cloves

Steps:

  • In a large saucepan, combine all of the ingredients. Bring to a boil. Reduce heat; cover and simmer for 20-30 minutes. Discard cinnamon sticks. Serve hot in mugs.

Wassail is a hot mulled cider, traditionally enjoyed during wassailing, an English Christmas drinking ritual intended to ensure a good apple harvest the following year. The whole baked apples floating on top lend a homey feel to the warming festive drink. Serve as is -- or top with a splash of brandy if you like. It's perfect for a big family gathering or holiday party.

1 cup firmly packed light brown sugar
6 Fuji apples, cored
Four 11.2-ounce bottles English hard cider, such as Strongbow
Two 12-ounce bottles English pale ale, such as Bass
2 cups apple cider
1 cup Madeira
10 whole cloves
10 whole allspice berries
4 cinnamon sticks, plus more for serving
2 wide strips orange zest, plus orange wedges, for serving
2 wide strips lemon zest
1/2 teaspoon ground ginger
1/2 teaspoon freshly grated nutmeg

Steps:

  • Preheat the oven to 350 degrees F.
  • Spoon the sugar into the center of each apple, then place in a 9-inch square baking dish with 1 cup water. Bake until the apples are very tender, 1 hour to 1 hour 30 minutes.
  • Meanwhile, add the hard cider, pale ale, apple cider and Madeira to a large pot and bring to a gentle simmer over medium heat. Put the cloves, allspice, cinnamon sticks, orange zest and lemon zest in a piece of cheesecloth and tie it closed. Add to the pot along with the ginger and nutmeg. Reduce the heat to low and steep the mixture until the liquid is well spiced and fragrant, about 1 hour.
  • Add the cooked apples and any of their juices to the pot and stir to combine. Remove the cheesecloth. Serve warm in individual mugs with an orange wedge and cinnamon stick.

1 orange, thinly sliced

1 gallon apple cider (I use Musselman's)
4 cups no pulp orange juice
46 ounces 100% pineapple juice
1 cup fresh lemon juice
1 cup packed brown sugar
12 whole cloves
10 whole cinnamon sticks
1 granny smith apple (washed, cored and quartered)
1 Honeycrisp apple (washed, cored and quartered)
1 navel orange ((washed, cored and quartered))

Steps:

  • Combine liquid ingredients in a large stock pot. Stir in brown sugar, whole cloves and cinnamon sticks.
  • Top with cut fruit, keeping the rinds and peels facing up towards the surface of the liquid.
  • Heat on medium until boiling, and then reduce to simmer. Simmer for 1-2 hours.
  • Remove fruit, cinnamon sticks and cloves. You can strain the wassail through a sieve if you prefer.
  • Ladle into heat-safe mugs, top with garnish and enjoy.

Steps:

  • In a large kettle, combine tea and sugar. Add the juices, cinnamon sticks and 12 of the cloves. Bring to a boil and boil for 2 minutes. Remove from the heat. Serve warm or cool. Garnish punch bowl with orange slices studded with remaining cloves.
