4 cups cubed cooked turkey
2 cups diced celery
1 cup slivered almonds, toasted
1 teaspoon salt
1/2 teaspoon dried thyme
1/4 teaspoon pepper
1-1/2 cups mayonnaise
1 cup shredded cheddar cheese
1 cup crushed potato chips

Steps:

  • In a greased 2-qt. baking dish, combine the first eight ingredients. Top with potato chips. , Bake, uncovered, at 450° for 15 minutes or until bubbly.

This recipe is similar to the Hot Chicken Salad but not QUITE the same. I love the chow mein noodles in it.

4 cups cooked turkey, chopped in bite sized pieces
1 cup celery, finely chopped
2 tablespoons onions, finely chopped
2 tablespoons lemon juice
1/4 teaspoon pepper
1 (10 1/2 ounce) can cream soup (I have used chicken, celery and mushroom and they all work well)
3/4 cup evaporated milk
1 cup mayonnaise
1/4 cup water
3 hard-boiled eggs, chopped well
1 cup almonds, chopped
2 cups chow mein noodles

Steps:

  • Blend soup, milk and water.
  • Add the almonds and mix well.
  • Add the remaining ingredients EXCEPT the noodles.
  • Pour into 9 x 11 inch pan which has been lightly greased.
  • Sprinkle with chow mein noodles.
  • Bake at 350 degrees for 30 minutes.

Sage-flavored biscuits (think of yummy stuffing) top a hearty bubbly hot turkey casserole.

1/4 cup mayonnaise or salad dressing
2 tablespoons Original Bisquick™ mix
2 cups cut-up cooked turkey
1/4 cup shredded Cheddar cheese (1 ounce)
2 medium celery stalks, sliced (1 cup)
2 medium green onions, sliced (1/4 cup)
2 1/4 cups Original Bisquick™ mix
3/4 cup milk
1/2 teaspoon dried sage leaves

Steps:

  • Heat oven to 425°F. Mix mayonnaise and 2 tablespoons Bisquick mix in medium bowl until well blended. Stir in turkey, cheese, celery and onions, set aside.
  • Mix 2 1/4 cups Bisquick mix, the milk and sage just until soft dough forms. Place on surface generously sprinkled with Bisquick mix; gently roll in Bisquick mix to coat. Knead gently 10 times. Roll 1/2 inch thick. Cut with 1 1/2-inch round cutter dipped in Bisquick mix. Place close together around edges of ungreased square pan, 9x9x2 inches.
  • Spoon turkey mixture into mound in center of biscuits. Bake uncovered 18 to 20 minutes or until biscuits are golden brown and salad is hot.

Need a quick and easy dinner idea for leftover turkey? This is my grandmother's recipe, one she made the Monday following Thanksgiving. I'm so glad I found the recipe. It's quick and easy, not to mention delicious!

2 cups cubed cooked turkey
2 cups chopped celery
2 teaspoons grated onion
½ cup pecans, chopped
½ teaspoon salt
1 cup mayonnaise
2 tablespoons fresh lemon juice
½ cup Cheddar cheese, grated
1 cup potato chips, crushed

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Grease a 9x13 inch baking dish.
  • Mix the turkey, celery, onion, pecans, and salt together in a mixing bowl. Stir in the mayonnaise and lemon juice until evenly blended. Spoon into the prepared baking dish. Sprinkle with Cheddar cheese, then potato chips.
  • Bake in preheated oven until cheese melts, 10 to 12 minutes.

Steps:

1/4 cup chopped fresh parsley
1 tablespoon fresh rosemary leaves or 1/4-1/2 teaspoon dried rosemary
1/8 teaspoon fresh ground black pepper
1 1/2 cups cooked turkey, chopped in bite size pieces
1 large granny smith apples or 1 large red bartlett pear, cored and shredded
2 large lettuce leaves
1 cup alfalfa sprout
lemon wedge

Steps:

  • Combine the mayonnaise, parsley, rosemary and pepper in a medium bowl.
  • Add turkey and apple or pear, toss gently.
  • Cover and chill until ready to serve.
  • To serve, place lettuce leaves on individual serving plates.
  • Top each with 1/2 cup alfalfa sprouts.
  • Spoon half of turkey mixture onto each plate, and place lemon wedges on the side to squeeze on if desired.
  • Serve immediately. Enjoy!
