450 grams boneless chicken thighs, cut into large bite size pieces
3/4 teaspoon black pepper powder
1 tablespoon sugar
2 teaspoons light soya sauce
1 teaspoon dark soya sauce
4 teaspoons shaoxing rice wine
1 1/2 teaspoons cornflour
2 1/2 tablespoons vegetable oil
4 cloves garlic, roughly chopped
6 each dried red chillies, soaked, deseeded
1 1/2 tablespoons red chilli paste, or chilli bean paste
3 each spring onions, green and white parts separated, cut into ½-inch pieces
160 ml chicken stock, (about a generous 2/3 cup), hot
1 tablespoon cornflour slurry, made with 1½ teaspoons cornflour stirred into 1 tablespoon water

Steps:

  • Marinate chicken: Place boneless chicken thighs in a glass bowl. Toss in black pepper powder, sugar, light soy sauce, dark soy sauce, and rice wine. Mix well, then add cornflour and mix till well incorporated. Set aside to marinate for 30 minutes.
  • Place a wok on high heat and add oil. Once the oil is screaming hot but just before it starts smoking, carefully tip in marinated chicken. The marinade will splatter and spit as soon as it hits the oil, so be very careful. Quickly stir fry the chicken, about 2 minutes, then remove with a slotted spoon, leaving the oil in the wok. Reserve chicken.
  • Add garlic and red chillies to the wok in quick succession and stir fry for 30 seconds to flavour the oil. Add red chilli paste and stir. Toss in the white part of the spring onion, stir fry for a minute, then slide in the reserved chicken. Stir to mix well, then pour in hot chicken stock. Cook for about 3 minutes, stirring.
  • Add cornflour slurry, stir, and cook till the sauce thickens and glistens on the chicken, about 1 minute. Garnish chilli chicken with the green part of the spring onion.
  • Remove chilli chicken from heat and transfer to a bowl. Serve immediately with steamed rice. Serves: 4 as part of a larger meal Prep Time: 10 minutes plus 30 minutes marination time Cook Time: 14 minutes

2 tablespoons szechuan peppercorn
5 red chilis, chopped
50 dried red chilis, whole
4 slices ginger

Steps:

  • Combine marinade ingredients in a bowl, add the chopped chicken. Marinate for 10 minutes.
  • In about 1 ½ inch (4 cm) of oil, fry the chicken until browned and crispy. Remove and set aside.
  • Heat oil in a wok or a large pan. Add the Szechuan peppercorn and dried red chilies. Fry until fragrant.
  • Add the rest of the dried red chilies, ginger, scallion, and peanuts. Fry for a minute.
  • Add the fried chicken pieces, sugar, rice wine and sesame oil. Toss to coat.

It isn't as hot as you would expect from "Szechuan"--if you want it spicy hot--add more crushed red chilies.

2 tablespoons soy sauce
2 tablespoons dry sherry
2 teaspoons cornstarch
2 teaspoons grated peeled fresh ginger
1/4 teaspoon sugar
1/4 teaspoon crushed red pepper flakes
2 tablespoons vegetable oil
6 green onions, cut into 2-inch pieces
1 green pepper, cut into 1/2-inch pieces
1 red pepper, cut into 1/2-inch pieces
1/4 cup dry-roasted unsalted peanuts

Steps:

  • With knife held in slanting position, almost parallel to cutting surface, cut each chicken breast half crosswise into 1/2-inch thick slices.
  • In medium bowl, combine soy sauce, sherry, cornstarch, ginger, sugar, and crushed red pepper; add chicken, tossing to coat.
  • In wok or large non-stick skillet, heat 1 tablespoon oil over medium-high heat until very hot.
  • Add green onions and red and green peppers and cook, stirring frequently, until vegetables are tender-crisp, 2 to 3 minutes.
  • With slotted spoon transfer vegetables to bowl.
  • Increase heat to high and add remaining 1 tablespoon oil to skillet; heat until very hot.
  • Add chicken mixture and stir-fry until chicken looses its pink color throughout, 2 to 3 minutes. (I suggest cutting one of the larger pieces to make sure it is cooked through.).
  • Return vegetables to pan; heat through.
  • To serve, transfer chicken and vegetables to warm platter and sprinkle with peanuts.

½ cup orange juice

Steps:

  • In a small bowl combine the garlic, ginger and chile paste. Mix together and set aside. In a second bowl mix together the orange juice, sherry, soy sauce and vinegar and sugar. In a third bowl combine the cornstarch with the water and mix until dissolved.
  • Heat 1 tablespoon oil in a large skillet over medium high heat. Saute chicken for about 3 minutes, until browned. Remove from skillet and set aside.
  • Heat 1 teaspoon oil in skillet and saute green onion, bell pepper and onion for about 3 minutes. Stir in garlic/ginger mixture and saute for 1 minute, stirring constantly. ½ (2 pound) whole chicken
1 (3/4 inch thick) slice fresh ginger, crushed
1 teaspoon Sichuan peppercorns
¼ cup soy sauce
¼ cup chile oil
2 tablespoons white sugar
¼ teaspoon monosodium glutamate (MSG)
¼ teaspoon Sichuan peppercorn oil
6 spring onions (white parts only), cut into 3/4-inch pieces
1 teaspoon toasted sesame seeds, or to taste

Steps:

  • Bring a large pot of water to a boil; add chicken and cook for 2 to 3 minutes. Drain and discard water.
  • Bring a large pot of fresh water to a boil; add chicken, ginger, and peppercorns. Add more water if needed to cover chicken completely. Cover and cook over high heat until chicken is no longer pink and juices run clear, 35 to 45 minutes. Drain and discard water.
  • Horizontally chop chicken into 3/4-inch pieces, cutting through the bone and skin. Vertically chop into 3/4-inch squares; transfer to a bowl.

1/4 cup soy sauce
Salt and pepper to taste
1/2 cup corn starch
1 tablespoon sesame oil (or use olive oil)
1 large bell pepper (chopped)
2 serrano pepper (chopped (optional for extra spicy!))
10 dried chile de arbol peppers (optional for extra spicy, or use other dried peppers you love)
1 tablespoon Szechuan peppercorns (or use black peppercorns)
1/4 cup peanuts (chopped (plus more for garnish - cashews are great here, too!))
1/4 soy sauce
2 tablespoons rice vinegar
1 tablespoon sesame oil
1 tablespoon ground ginger (fresh minced ginger is good too)
1 tablespoon honey (or more for sweeter)
1 tablespoon chili garlic sauce
1 teaspoon garlic powder (fresh minced garlic is good too)
1 teaspoon sriracha (or more to taste)
1 teaspoon crushed red pepper flakes
1/2 cup chicken stock
1-2 tablespoons cornstarch (for thickening)
1/2 - 1 teaspoon szechuan peppercorns (lightly toasted and ground or use black peppercorns instead)
1/2 - 1 teaspoon Chinese 5 spice
Cooked white rice or noodles, spicy chili flakes

Steps:

  • Add the chopped chicken to a large bowl. Add soy sauce, salt and pepper and toss to coat. Marinate for 10 minutes.
