1 medium red apple
Lemon juice
6 cups torn fresh spinach
6 cups torn red leaf lettuce
1 small red onion, sliced and separated into rings
1 can (11 ounces) mandarin oranges, drained
1/3 cup sunflower kernels, toasted
6 bacon strips, cooked and crumbled
DRESSING:
1/2 cup vegetable oil
1/4 to 1/3 cup sugar
2 tablespoons plus 1-1/2 teaspoons cider vinegar
2 tablespoons plus 1-1/2 teaspoons honey
1/2 teaspoon celery salt
1/2 teaspoon onion salt
1/2 teaspoon paprika
1/2 teaspoon ground mustard
1/2 teaspoon lemon juice

Steps:

  • Thinly slice apple; brush with lemon juice. In a large salad bowl, toss the spinach, lettuce, onion, oranges and apple slices. Sprinkle with sunflower kernels and bacon., In a microwave-safe bowl, whisk the dressing ingredients. Microwave, uncovered, on high for 45 seconds. Stir and drizzle over salad.

2 teaspoons grated onion
1 teaspoon salt
1/2 teaspoon pepper

Steps:

8 ounces young spinach
2 large eggs
8 pieces thick-sliced bacon, chopped
3 tablespoons red wine vinegar
1 teaspoon sugar
1/2 teaspoon Dijon mustard
Kosher salt and freshly ground black pepper
4 large white mushrooms, sliced
3 ounces red onion (1 small), very thinly sliced

Steps:

  • Remove the stems from the spinach and wash, drain and pat dry thoroughly. Place into a large mixing bowl and set aside.
  • Place the eggs into an electric kettle and cover with cold water by at least 1-inch. Turn the kettle on. Once the water comes to a boil, the kettle will turn itself off. Leave the eggs in the water for 15 minutes. Remove and peel off the shell. Slice each egg into 8 pieces and set aside.
  • While the eggs are cooking, fry the bacon and remove to a paper towel to drain, reserving 3 tablespoons of the rendered fat. Crumble the bacon and set aside.
  • Transfer the fat to a small saucepan set over low heat and whisk in the red wine vinegar, sugar and Dijon mustard. Season with a small pinch each of kosher salt and black pepper.
  • Add the mushrooms and the sliced onion to the spinach and toss. Add the dressing and bacon and toss to combine. Divide the spinach between 4 plates or bowls and evenly divide the egg among them. Season with pepper, as desired. Serve immediately.

12 cups baby spinach (- pre-washed)
8 ounces mushrooms (- sliced)
1/3 cup red onion (- thinly sliced)
8 slices bacon
6 eggs (- hard boiled)
6 Tablespoons olive oil
3 Tablespoons red wine vinegar
1.5 Tablespoons honey
1 Tablespoon dijon mustard
salt & pepper to taste

Steps:

  • Snap the stems off the baby spinach, and add the spinach leaves to a large salad bowl.
  • Slice the mushrooms (or use pre-sliced) and the red onions. Add them to them bowl.
  • Cook the bacon (or use pre-cooked), and crumble. Add to bowl when slightly cooled.
  • Boil the eggs. You can use stove-top or instant pot method. When cooled, add to the salad.
  • Make the dressing by mixing all ingredients and firmly shake until well mixed. Drizzle on salad and serve immediately.

2 Tbsp. honey
2 tsp. GREY POUPON Dijon Mustard

4 slices OSCAR MAYER Bacon, cut into 1-inch-thick slices
1 pkg. (5 oz.) baby spinach leaves
1/2 lb. baby portobello mushrooms, stemmed, cut into thin slices
1/4 cup sliced almonds, toasted
3 hard-cooked eggs, quartered
1/2 cup KRAFT Cheddar & Swiss Cheese Deliciously Paired for Eggs

Steps:

  • Whisk vinegar, honey, mustard and pepper until blended.
  • Cook and stir bacon in small skillet until crisp. Remove bacon from skillet with slotted spoon; drain on paper towels.
  • Discard all but 2 Tbsp. drippings from skillet. Add vinegar mixture to reserved drippings; cook 2 min., stirring frequently. Remove from heat.

8 pieces smoked bacon, reserve grease (fried crispy)
4 ounces spinach, Fresh Baby Spinach (stems removed)
2 fresh pears, sliced, or bite-size pieces
1/2 cup fresh blueberries (optional)
1/4 bunch fresh mint leaves, torn
2 ounces goat cheese, soft, crumbled
1/4 cup apple cider vinegar
8 tablespoons Dijon mustard
1/4 cup honey
4 tablespoons bacon grease, reserved
1/4 cup extra virgin olive oil
sea salt
fresh ground pepper

Steps:

  • Fry smoked bacon to cripsy stage. Remove from skillet, let cool and reserve grease for dressing; Wash and Plate Spinach (remove stems); Wash and slice pears (using red pears will add color) - arrange over the bed of spinach; Add Blueberries if desired; Tear mint leaves and add to the plates; Crumble the crispy bacon and goat cheese over top. Dressing is simple -- Add vinegar, dijon mustard and honey to blender, mix well. With blender set on low speed, add bacon grease, and add EVOO slowly to emulsify dressing. Add salt and pepper to taste' mix well on high for the last couple of minutes. Drizzle on salad, and serve.

  • Preheat the oven to 400F. Line 2 large rimmed baking sheet with foil. Place the asparagus in a single layer one of the pans. Drizzle with 2 Tbl olive oil, 3/4 tsp salt and 1/2 tsp of pepper. Mix to coat evenly and bake for 15 minutes. While the asparagus is baking put the shrimp in a bowl and toss with 1 Tbl olive, 3/4 tsp of kosher salt and 1/2 tsp black pepper. Place the shrimp on the other baking pan in a single layer. At the end of 15 minutes, place the shrimp pan into the oven with the asparagus and bake for another 5-8 minutes or until the shrimp is pink, firm and cooked through. The asparagus should be tender but have slight firmness to it. Remove from the oven. Chop up the asparagus into bite-sized pieces.
  • In 5 bowls divide the spinach and then sprinkle ½ cup of quinoa over top. Next top each salad with asparagus pieces, roasted red peppers and 5 shrimp per salad. If eating right away, drizzle over the warmed bacon honey Dijon vinaigrette. If not, to serve later simply reheat the dressing in the microwave for a few seconds and then drizzle over.
