HOT SPICED MILK
This soothing beverage is fragrant, warming, and delightful. Make it with half rice milk and half soy milk for a rich but not-too-sweet taste. (This recipe is from the book "The Vegan Sourcebook".)

Steps:
- Combine the milk, cardamom, cinnamon, pepper, and saffron in a small saucepan and whisk them together.
- Place over medium heat, stirring occasionally until hot.
- Pour the milk through a fine strainer to filter out the spices (you can put the strainer over your cup or mug and pour the hot milk directly into it).
- Stir in as much sugar as necessary to achieve the desired sweetness.
- Serve hot.

- Add the milk and spices into a small pot on medium-high heat. Heat the milk, stirring, until just under boiling. Remove from heat, cover, and let stand for about 10 minutes for the spices to infuse into the milk.
- Mix in a tablespoon of honey. Pour into 2 mugs and serve immediately. Top with whipped cream and ground cinnamon, if desired.

- Place all the ingredients in a medium sized saucepan and bring just to a simmer. Reduce heat and warm over low heat without boiling for about 10 minutes to infuse.
- If using cashew milk strain and froth either with a hand frother or blend in a high speed blender until frothy and serve.
- If using cashews and water instead, fish out cinnamon stick, orange peel, star anise and vanilla bean before pouting mixture into a high speed blender for about 2 minutes, until frothy, smooth and steaming.
- Pour into mugs, sweeten to taste and garnish with additional nutmeg or cinnamon stick if desired.
