SPICY ITALIAN HAM AND SALAMI SANDWICH
This "sitting sandwich" is great picnic fare because it only gets better as it sits. Pack it at the bottom of the basket so any weight on top will compress it, making it easier to eat. A mojo-like sauce made with fresh lime juice, garlic, and lots of fresh oregano perks up the flavor of a classic Italian sub.

Steps:
- In a small bowl, mix the oregano, oil, lime juice, garlic, 1/2 tsp. salt, and 1/4 tsp. pepper. Cover and refrigerate for at least 2 hours (the flavor improves as it sits, and it will keep for up to 1 week).
- Halve the ciabatta loaf lengthwise. Rewhisk the sauce and pour over the cut sides of the bread, spreading evenly with a knife. Line the bottom half with the lettuce, then top with the prosciutto, capocollo, soppressata, and provolone. Scatter the peppers over the cheese and cover with the top of the ciabatta. Smush together, cut crosswise into 6 sandwiches, and wrap each in foil or waxed paper. Let sit for a few hours at room temperature to let the flavors meld.

Steps:
- Preheat the broiler on your oven to HIGH
- Lightly brush the outside of the bun with oil
- Place the oil side of the bun on a baking sheet and add the salami, pepperoni, provolone cheese, onion, banana pepper rings, and place olive on the bread.
- Place under the broiler for 1-2 minutes until cheese is melted and browned.
- Add the lettuce and mayonnaise.
- Fold the Hot Italian Sub Sandwich in half.
- Serve and Enjoy!

My mother-in-law served these during holidays when we were tired of cooking, and needed something easy to make. My husband and I have even made these ahead of time while traveling by car, and put them in the engine compartment to melt the cheese. We just took them out when we got to a rest stop and had hot sandwiches!

Steps:
- Layer bottom of hamburger buns with salami, cheese, onion (if using).
- Spread barbecue sauce on top half of bun, and cover rest of sandwich.
- Wrap each sandwich in aluminum foil and bake in preheated 400 degree oven until cheese melts; about 5-10 minutes.
- May wrap sandwiches in paper toweling and microwave on half power until cheese melts, if desired.
EASY SALAMI SANDWICH
Steps:
- Halve the olive bread horizontally.
- Layer on the Caponata followed by the rocket/arugula, tomatoes (seasoned with salt and pepper), cheese, salami and basil.
- Drizzle a little olive oil over the top layer of bread and place onto the sandwich.

- Brush cut sides of halved bread loaves with oil from jar of roasted peppers. Dividing evenly, layer bottom bread halves with roasted peppers, salami, cheese, and arugula; top with remaining bread halves.

- Preheat the oven to 350.
- Slice Italian loaf in half but don't cut all the way through. Pull the halves apart and drizzle some olive oil and balsamic vinegar.
- On one half, spread banana peppers. On the other half, spread Italian Sandwich Mix.
- Layer capicola, ham, salami, pepperoni and Fontina cheese evenly over the two halves.
- Sprinkle some red pepper flakes on top (amount depends on how hot you want it), place carefully on a baking sheet and bake for 10-13 minutes.

- Sautee the onion rings in a skillet with a tiny bit of oil.
- While the onions cook, cut a small slit in the middle of each salami slice. If you don't do this, once the salami starts to cook, it will curl up.
