EASY HOMEMADE HOT PEPPER JELLY



Easy Homemade Hot Pepper Jelly image

This is a really simple and easy recipe that I got from my friend Kelly. It doesn't require chopping any hot peppers and it's a delicious appetizer served over cream cheese with crackers.

8 green bell peppers, seeded and chopped
8 red, yellow or orange bell peppers, seeded and chopped
1 ½ cups vinegar
7 cups white sugar
2 tablespoons crushed red pepper flakes
4 (2 ounce) packages dry pectin

Steps:

  • Run the red and green peppers through a coarse grinder, or pulse in a food processor until finely chopped. Transfer to a strainer, and drain really well. This is key to your success.
  • While the peppers are draining, sterilize your jars by boiling or using the dishwasher. Keep hot.
  • In a large pot, combine the peppers, vinegar, white sugar, red pepper flakes and pectin. Bring to a rolling boil over high heat while stirring constantly. A rolling boil is one that does not stop when stirred. Boil for 1 minute.
  • Remove from the heat, and ladle into hot sterile jars to within 1/2 inch of the top. Seal with new lids and rings. Place into a boiling water bath for 15 minutes. The jars should be completely covered by water. Remove and let cool. The jelly will be somewhat loose. The last jar may not be full. Just refrigerate, and use within a week or two.

2 ½ cups finely chopped red bell peppers
1 ¼ cups finely chopped green bell peppers
¼ cup finely chopped jalapeno peppers
1 cup apple cider vinegar
1 (1.75 ounce) package powdered pectin
5 cups white sugar

Steps:

  • Sterilize 6 (8 ounce) canning jars and lids according to manufacturer's instructions. Heat water in a hot water canner.
  • Place red bell peppers, green bell peppers, and jalapeno peppers in a large saucepan over high heat. Mix in vinegar and fruit pectin. Stirring constantly, bring mixture to a full rolling boil. Quickly stir in sugar. Return to full rolling boil, and boil exactly 1 minute, stirring constantly. Remove from heat, and skim off any foam.
  • Quickly ladle jelly into sterile jars, filling to within 1/4 inch of the tops. Cover with flat lids, and screw on bands tightly.
  • Place jars in rack, and slowly lower jars into canner. The water should cover the jars completely, and should be hot but not boiling. Bring water to a boil, and process for 5 minutes.

got this from the magazine that our local electric co-op sends out. i altered it somewhat. cooking time does not include time for water to boil in water bath canner. this is a soft jel. this is not "hot", but a sublte pepper flavor.

1 cup water
2 tablespoons hot pepper sauce (such as Tabasco)
1/3 cup lemon juice
3 cups sugar
3 ounces liquid pectin
red food coloring
1/2 cup crushed toasted pecans

Steps:

  • To toast the pecans:.
  • Place a single layer on a baking sheet and bake at 300 degrees for 10 minutes. Stir often. Toasted pecans should be light brown and crisp.
  • To make the jelly:.
  • In a large saucepan, combine water, hot pepper sauce, lemon juice, and sugar.
  • Bring mixture boil, stir constantly.
  • Add pectin and a few drops of food coloring.
  • Let mixture come to a full rolling boil and continue boiling for 30 seconds.
  • Add pecans.
  • Remove from heat and skim off any and all the foam.
  • Pour into three 8-ounce sterilized canning jars, leaving 1/4 inch headspace in each.
  • Wipe rims of jars clean and put on pre-heated lids and screw rings just until fingertip tight.
  • Process in a boiling water bath for 5 minutes.

1 tablespoon olive oil
1 tablespoon unsalted butter
2 teaspoons minced garlic (or use garlic powder to your taste, it will stick better)
1/4 teaspoon dried red pepper flakes
2 cups whole almonds
salt, to taste

Steps:

  • In a large fry pan, heat oil and butter together over medium heat until foamy.
  • Add garlic and red pepper flakes and heat for 30 seconds.
  • Add almonds, stirring constantly until coated and lightly toasted, about 5 minutes.
  • Season with salt. Cool and store in an airtight container.

PEPPER PEACH JELLY

Dreamgoddess needed a pepper peach jelly for a recipe she wanted to try, but none could be found in our small town. This is what I came up with. Just remember that for hotter jelly, cut the habaneros in half so that the heat can escape better or add another whole pepper. For less heat, use peppers that are not quite as hot. For just plain peach jelly, leave off the pepper all together.

6 lbs peaches
3 whole habanero peppers
1/2 teaspoon butter or 1/2 teaspoon margarine
4 1/2 cups sugar
1 box Sure-Jell

Steps:

  • Cut up peaches and discard pits.
  • Place in large sauce pan with whole habenoros.
  • Add 1 1/2 cups water.
  • Bring to a boil.
  • Reduce heat; simmer 10 minutes, stirring constantly.
  • Strain through cheese cloth.
  • This should produce 5 1/2 cups juice.
  • May need to add a little water to accomplish this measurement.
  • Pour exact amount of juice into 6-8 qt. saucepan.
  • Measure exact amount of sugar into bowl and set aside.
  • Stir in Sure Jell and 1/2 teaspoon butter or margarine.
  • Bring mixture to a full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat stirring constantly.
  • Stir in sugar quickly.
  • Return to a full rolling boil and boil for exactly 1 minute.
  • Remove from heat and skim any foam off of top with a metal spoon.
  • Ladle quickly into jars which have been preheated.
  • Be sure rims are clean and place lids and rings on jars; be sure they are very tight.
  • Invert for 5 minutes, then set upright to cool.
