PEAR AND STILTON (OR ASIAGO) SALAD



Pear and Stilton (Or Asiago) Salad image

A delicious recipe by the Best of Bridge ladies - a group of wonderful cooks from my hometown in Alberta. It is a very popular salad with the nurses at work. Enjoy!

Number Of Ingredients 8

1/4 cup fresh lemon juice
1/4 cup canola oil
1 tablespoon liquid honey
2 teaspoons grainy mustard or 2 teaspoons Dijon mustard
12 leaves butter lettuce
2 fresh pears, cored and thinly sliced
1 ounce Stilton cheese, crumbled or 1 ounce asiago cheese, shaved
1/4 cup pine nuts, toasted

Steps:

  • n small bowl, whisk together lemon juice, oil, honey and mustard.
  • Place 3 lettuce leaves on each plate. Arrange sliced pears on top and sprinkle with cheese and pine nuts.
  • Drizzle dressing over top.

Zucchini and garlic fried in olive oil and topped with Asiago cheese in the broiler - I can assure you, whether you like zucchini or not, you will love this.

Number Of Ingredients 6

2 medium zucchini, sliced in half lengthwise
2 -3 finely chopped garlic cloves
1 tablespoon fresh lemon juice
1/2 cup grated asiago cheese (parmesan will also work)
3 tablespoons olive oil
salt and pepper, to taste

Steps:

  • Heat olive oil in a frying pan on medium heat.
  • Score zucchinis, add a squeeze of lemon juice and add salt and pepper lightly. Let marinate for a few minutes.
  • Add garlic bits to the olive oil.
  • Brown both sides of zucchinis in the garlic and oil.
  • Sprinkle asiago cheese on cut side of zucchinis and oven broil on a cookie sheet until cheese browns.
  • Serve while warm.

Mexican and Spanish inspired baked tomatoes, filled with corn, jalapeno and bell pepper, Monterey Jack cheese, basil, and cilantro! This recipe can be easily halved or doubled. Adapted from the New Basics Cookbook.

6 tomatoes, ripe but firm
1 cup corn kernel, fresh (or frozen and thawed)
1/2 fresh jalapeno pepper, minced (2 tsp.)
1/3 cup scallion, chopped
1/3 cup red pepper, minced
3 tablespoons fresh basil leaves, chopped (or 1 tbls. dried)
2 tablespoons cilantro, chopped
4 ounces monterey jack cheese, shredded
1/2 teaspoon salt
black pepper, to taste
1 tablespoon yellow cornmeal
1 tablespoon unsalted butter

Steps:

  • Preheat oven to 400*F. Lightly oil a baking sheet, and set aside.
  • Slice off the top quarter of each tomato. Set the tops aside. Using a melon baller, scoop the centers out of 3 of the tomatoes, leaving a thin shell, and place the pulp in a mixing bowl. Scoop out the pulp from the remaining 3 tomatoes, and save for another use. Invert the tomato shells onto paper towels to drain.
  • Add the corn, jalapeno pepper, scallions, bell pepper, basil, cilantro, cheese, salt, and black pepper to the tomato pulp. Toss lightly until well mixed, and loosely fill the tomato shells with the mixture.
  • Sprinkle each tomato with 1/2 teaspoons of cornmeal, and dot with 1/2 teaspoons of butter. Arrange the tomatoes on the prepared baking sheet.
  • Bake 25 minutes, until crumbs are golden brown and tomatoes are cooked through. Place the tops back on top before serving. Enjoy!

1 lb plum tomato, sliced
8 ounces mozzarella cheese, sliced
1 red onion, finely chopped
4 -6 pieces sun-dried tomatoes packed in oil, drained and chopped
1/4 cup olive oil
1 teaspoon red wine vinegar
1/2 teaspoon Dijon mustard
4 tablespoons chopped fresh mixed herbs (ie. basil, parsley, oregano, and chives)
salt and pepper
fresh herb, to garnish

Steps:

  • Arrange the sliced tomatoes and mozzarella in circles in four individual shallow flameproof dishes.
  • Sprinkle the chopped red onion and sun-dried tomatoes on top.
  • Preheat the broiler to high.
  • Whisk together the olive oil, vinegar, mustard, chopped herbs, and seasoning.
  • Pour over the salads.
  • Place the salads under the hot broiler for 4-5 minutes, until the mozzarella starts to melt.
  • Sprinkle pepper over the salads, and serve immediately, garnished with fresh herb sprigs.

5 cups tomatoes, pear or 5 cups tomatoes, cherry
1 cup sweet onion, thinly sliced
1/2 teaspoon red pepper, crushed
6 garlic cloves, thinly sliced
2 1/4 cups white balsamic vinegar
3/4 cup water
1/3 cup sugar
3 tablespoons pickling salt
1 tablespoon fresh rosemary leaf
1/2 teaspoon whole black peppercorn
1/2 teaspoon whole pink peppercorns
1/2 teaspoon whole white peppercorns
1 bay leaf

Steps:

  • Wash tomatoes. in large bowl combine tomatoes, onion, red pepper and garlic, toss to combine. Set aside.
  • In large none reacting pot combine vinegar, water, sugar, salt, rosemary, all peppercorns and bay leaf. Bring to a boil, stirring until sugar is dissoved. Reduce heat, and simmer uncovered for 10 minutes. Stirring often.
  • Remove from heat and discard bay leaf.
  • Pack tomatoes into hot sterilized 8 oz jars. Leaving 1/2" head space.
  • Pour HOT vinegar mixture over tomatoes, leaving 1/2" head space. Remove any air bubbles in jars, wipe rims and add lids.
  • Process filled jars for 15 minutes in water bath.
