1 (1-lb ) pork tenderloin, thinly sliced
1 Tbsp oil
¼ cup brown sugar
½ cup soy sauce
1 to 2 Tbsp chili garlic sauce
2 (3-oz) packages ramen noodles, any flavor
green onions, (sliced)

Steps:

  • Open ramen noodles and discard flavor packets. Cook ramen noodles in boiling water for 3 minutes. Drain and set aside.
  • While noodles are cooking heat oil over medium-high heat in a large skillet. Add pork tenderloin and cook until starting to brown.
  • Add brown sugar, soy sauce and chili garlic sauce to skillet. Stir. Reduce heat simmer for 5 minutes.
  • Add cooked noodles to skillet and toss to coat. Sprinkle with green onions.

These spicy noodles are inspired by a Chinese dish called Ants Climbing a Tree, named for the way the small pieces of ground pork (the "ants") cling to the noodles (the "tree"). The twist in these healthy noodles comes from adding vegetables like scallions and bok choy.

7 ounces thin rice noodles or rice sticks
2 tablespoons canola oil, divided
1 head bok choy (about 1 pound), chopped, greens and whites separated
3 scallions, sliced, greens and whites separated
2 tablespoons minced fresh ginger
¼ cup chili-bean sauce (see Tip) or chile-garlic sauce
1 pound ground pork
2 cups unsalted chicken broth
3 tablespoons reduced-sodium tamari or soy sauce
1 teaspoon white sugar
1 tablespoon cornstarch
1 tablespoon water
Crushed red pepper for garnish

Steps:

  • Cook noodles according to package directions. Drain and rinse under cold water. Set aside.
  • Meanwhile, heat 1 tablespoon oil in a large flat-bottomed wok or cast-iron skillet over high heat. Add bok choy whites and cook, stirring, for 1 minute. Add bok choy greens and cook until wilted, about 1 minute more. Transfer all the bok choy to a medium bowl.
  • Add the remaining 1 tablespoon oil, scallion whites, ginger and chili-bean sauce (or chile-garlic sauce) to the pan. Add pork and cook, crumbling with a wooden spoon, until no longer pink, 3 to 5 minutes. Add broth, tamari (or soy sauce) and sugar. Mix cornstarch and water in a small bowl and add to the pan. Bring to a boil and cook, stirring, until slightly thickened, about 1 minute. Stir in the reserved noodles and bok choy; cook, stirring, until heated through, about 1 minute. Serve topped with scallion greens and crushed red pepper, if desired.

1 teaspoon sesame oil

6 spring onions
2 tbsp sunflower oil
300g bag small broccoli florets
half a packet of thick egg noodle
450g lean pork stir-fry
100g shiitake mushroom or chestnut mushrooms
180g jar Cantonese sweet and spicy stir-fry sauce
300g bag beansprout
handful roasted salted cashew nuts

Steps:

  • Over a high heat, bring a pan of water to the boil (for the noodles). Chop the onions into chunky lengths. Heat the oil in a wok, tip in the broccoli and stir fry for 2 minutes until it starts to soften
  • Tip the noodles into the boiling water and boil for 4 minutes until softened. Meanwhile, add the pork strips to the wok and fry until the meat changes colour. Add the onions and mushrooms and cook for a minute or so until the mushrooms start to soften.
  • Stir in the sauce until everything is well coated. Drain the noodles and toss into the wok with the beansprouts and cashews. Heat until the beansprouts start to soften slightly then serve.

Inspired by Sichuan cuisine, this easy crispy pork noodles recipe with Chinese five spice is spicy, savory and the perfect comfort food for a weeknight dinner.

3 tbsp. natural peanut butter
2 tbsp. reduced-sodium soy sauce
2 to 3 Tbsp Szechuan chili oil
1 tbsp. fresh lime juice
2 tsp. honey
1/2 tsp. Chinese five-spice
1 tbsp. canola oil
8 oz. ground pork
12 oz. ramen or lo mein noodles
3 cloves garlic, grated
1 tbsp. grated fresh ginger
1 small red chile, thinly sliced
3 c. tatsoi or baby spinach
2 scallions, thinly sliced
1/4 c. roasted peanuts, finely chopped, for serving

Steps:

  • Make vinaigrette: In a bowl, combine peanut butter, soy sauce, chili oil, lime juice, honey and five-spice.
  • Heat canola oil in a large cast-iron skillet on medium-high. Add pork and cook, breaking up into tiny pieces, 4 minutes. Then cook, without stirring, 3 minutes. Turn and cook, stirring often, until crispy and browned, 3 to 4 minutes more.
  • Meanwhile, cook noodles per package directions. Drain, reserving 1/2 cup cooking liquid.
  • Toss garlic, ginger and red chile in pan with pork and cook 2 minutes. Remove from heat.
  • Whisk 1/4 cup reserved cooking liquid into bowl with vinaigrette, and toss in noodles to coat, adding more liquid as necessary. Then toss with tatsoi until beginning to wilt. Top with crispy pork and sprinkle with scallions and peanuts if desired.

1/4 cup plus 2 teaspoons vegetable oil
12 ounces ground pork
1 tablespoon minced peeled fresh ginger
1/4 cup low-sodium chicken broth
1/2 cup chopped bread-and-butter pickles, plus 1/4 cup brine from the jar
1/4 cup plus 2 tablespoons low-sodium soy sauce
1/4 cup toasted sesame seeds
1 tablespoon Asian chili-garlic sauce
2 teaspoons packed light brown sugar
2 Persian cucumbers, halved lengthwise and thinly sliced
1 cup cherry or grape tomatoes, chopped

Steps:

  • Bring a large pot of water to a boil. Add the noodles and cook as the label directs. Drain and toss with 2 teaspoons vegetable oil.
  • Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat. Add the pork and 2 teaspoons ginger; cook, breaking up the meat with a wooden spoon, until lightly browned, about 3 minutes. Add the chicken broth, pickles and 2 tablespoons each pickle brine and soy sauce and cook, scraping up any browned bits, until the liquid evaporates, about 4 minutes.
  • Meanwhile, puree 3 tablespoons toasted sesame seeds in a blender until finely ground, about 15 seconds. Add the remaining 3 tablespoons vegetable oil and puree until smooth. Add 1/4 cup water, the chili-garlic sauce, brown sugar and the remaining 1/4 cup soy sauce, 2 tablespoons pickle brine and 1 teaspoon ginger; puree until combined.
  • Top each serving of noodles with the sesame dressing, pork, cucumbers and tomatoes. Sprinkle with the remaining 1 tablespoon sesame seeds.

  • 1. Whisk together soy, balsamic vinegar and sriracha and set aside
  • 2. In large sauté pan, heat 2 tsp oil on med-high heat until hot.
  • 3. Add ground pork; cooke 5-7 mins or until browned breaking up with back of spoon.
  • 4. Just before pork is cooked through, add about 1/2 of sauce so it can soak into meat.
  • 5. Cook noodles in large pot boiling water according to package instructions.
  • 6. Throw spinach in with meat mixture and toss over med heat until leaves are wilted.
  • 7. Drain noodles and throw in with meat and spinach, add a little more sauce and toss together until well combined.
  • 8. Serve with additional sauce on the side.
