BUFFALO DRUMSTICKS

8 drumsticks
2 tablespoons vegetable oil
1 teaspoon chili powder
1 teaspoon garlic powder
Salt and freshly ground black pepper
1/4 cup (1/2 stick) unsalted butter, melted
1/4 cup hot sauce
1 tablespoon BBQ sauce

Steps:

  • For the chicken: Preheat the oven to 375 degrees F. Rinse and pat dry the drumsticks. Mix the oil, chili powder, garlic powder, and some salt and pepper in a medium bowl or resealable plastic bag. Toss the drumsticks in the seasoned oil to coat well. Bake the drumsticks on a wire rack placed on a baking sheet (so air circulates around chicken) until very tender and the skin is crisp, 50 minutes.
  • For the spicy sauce: Mix together the butter, hot sauce and BBQ sauce in a large bowl.
  • Toss the drumsticks in the spicy sauce until well coated. Place the drumsticks back on the rack and continue baking an additional 10 to 15 minutes.
  • Cook's Note: For an alternate milder sauce, whisk together 1 tablespoon maple syrup, 1 teaspoon hot sauce, juice and zest of 1 lime, 1 clove of garlic, minced and some salt and pepper.

salt and ground black pepper to taste
12 chicken legs, thawed
1 pinch garlic powder, or to taste
1 (12 ounce) bottle hot pepper sauce (such as Frank's® RedHot)
½ cup butter, melted

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Line a jelly roll pan with aluminum foil and place a wire baking rack on top.
  • Fill a large pot with water. Add minced garlic, salt, and pepper; bring to a boil. Add chicken legs; cook until tender, about 10 minutes. Drain.
  • Arrange chicken legs on the wire rack. Season with salt, pepper, and garlic powder.
  • Bake in the preheated oven for 20 minutes. Flip and continue baking until juices run clear, about 20 minutes more.
  • Transfer chicken legs to a slow cooker. Cover with hot pepper sauce and melted butter.
  • Cook on Low until flavors combine, 1 to 2 hours.

A simple recipe for crispy baked chicken legs. Cooked in a hot oven, they emerge with wonderfully crispy skin and juicy meat!

Olive oil spray
4 bone-in skin-on chicken legs ((drumstick and thigh))
1 teaspoon Diamond Crystal kosher salt
¼ teaspoon black pepper
½ teaspoon garlic powder
½ teaspoon paprika
½ teaspoon dried thyme

Steps:

  • Preheat your oven to 425 degrees F. Lightly grease a rimmed baking dish with olive oil. A 9 X 13-inch baking dish should work.
  • Place the chicken legs in the prepared baking dish. Generously spray their tops with olive oil and sprinkle them with the seasonings.
  • Bake, uncovered, until the skin is crisp and browned and the internal temperature reaches 165 degrees F, 40-45 minutes. Check the chicken after the first 30 minutes. If the skin or the spices seem to be browning too much, loosely cover it with foil and continue baking.
  • Allow the chicken to rest for 5 minutes before serving.

  • Place the drumsticks in a slow cooker, and sprinkle evenly with pieces of butter. Pour the hot sauce over the chicken, then season with garlic powder, onion powder, salt and pepper. Cover, and cook on High for 3 hours, or until tender. Serve chicken legs with blue cheese dressing on the side.

6 medium Chicken drumsticks ((~1 1/2 lb))
1/4 cup Unsalted butter ((melted))
1/2 tsp Smoked paprika
1/2 tsp Garlic powder
1/2 tsp Sea salt
1/4 tsp Black pepper

Steps:

  • Preheat the oven to 425 degrees F (218 degrees C). Line a rimmed baking sheet with foil and place an oven safe rack on top. (I use this set, which includes the baking sheet and rack that fits perfectly.)
  • Pat the chicken legs dry with paper towels, which will help them get crispy. Arrange the chicken legs on the rack.
  • Brush the chicken drumsticks with melted butter. Season with smoked paprika, garlic powder, salt and pepper.
  • Bake the chicken legs in the oven for 25 minutes. Flip and bake for another 10-20 minutes, until the internal temperature reaches at least 165 degrees F (74 degrees C).
  • Let the chicken rest for 5 minutes before serving.

24 whole Chicken Legs
2 sticks Butter
1 tbsp. Hot Salt (or You Favorite Seasonings)
1/2 c. Lemon Juice (or To Taste)

Steps:

  • Melt 2 sticks of butter in a saucepan. Pour ½ cup of lemon juice (fresh or bottled). Now add your seasonings. In this case, 1 tablespoon of Morton's Hot Salt. You can use whatever seasonings makes your skirt fly up, be it minced garlic, salt and Cayenne pepper ... let your imagination run wild. Stir it together until combined.Rinse and pat your chicken legs dry. With metal tongs, transfer them one by one into the butter mixture and place on a baking sheet. Once all of the chicken legs are coated and on the baking rack, take a pastry brush and give them one last coating of the butter mixture. Sprinkle them with some more of your seasonings.Place them into a 400-degree oven for 30 minutes. If they need a bit more color, turn on the broiler for a couple minutes and watch them closely. Remove them when they are nice and golden brown.
