REAL ITALIAN HOAGIE
More Philly Stuff? You got it! Here's how to make a real Hoagie. The word Hoagie came from the sandwiches that used to get eaten by workers over on a place that was nicknamed "hog island" The workers there would bring crusty rolls with Italian meats and some olive oil and they became known as "hoggies" which eventually morphed into hoagie... Now that I've sounded like a Cliff Claven... the only other thing I have to say is don't make this with a soft roll! It has to be a GOOD crusty Italian Long Roll!

When the oil is hot, add the Fresno chiles, garlic, jalapenos, bell peppers and onion and sauté for to 4 minutes to soften. Add the vinegar, honey and mustard seeds. When the griddle is hot, add the sausage pieces cut-side down and cook until well browned and crisp, about 3 minutes. Flip and place 2 pieces of provolone onto each sausage piece. Cook until the cheese has melted completely, another 2 to 3 minutes. Remove to a plate.
- Build the sandwiches by spreading the mayonnaise on the bottoms of each bun and laying on a piece of lettuce. Top each with a cheese-covered sausage piece and a generous portion of the pepper relish. Replace the top half of the buns and serve.

- Preheat the broiler to high. In a skillet, add in the olive oil and butter. Melt and then stir in the garlic and Italian seasoning. Remove from heat and brush this mixture generously over the hoagie buns - inside and out. Place the hoagie buns on a sheet pan and broil for 1-2 minutes on high until very lightly golden brown (you'll add them back later).
- Begin the sausages cooking. Remove the casing and follow package directions to grill the sausages. If you don't have the sausage grill, remove casings, slice the sausages into 1-inch thick pieces and add to a skillet (same one you used earlier for the butter) over medium heat. Cook for about 2 minutes stirring occasionally and then add in the onion and garlic. Cook for another minute.
- Add in the bell peppers, marinara sauce, Italian seasoning, and pepper. Bring the mixture to a boil and then simmer for 5-6 minutes or until the peppers are crisp tender.
