- Combine the sugar, ginger and lemon peel in a small saucepot. Pour enough water to cover the mixture, about 1 cup. Bring the mixture to a boil and simmer, about 5 minutes. Remove the saucepot from the heat and let sit at least 15 minutes up to a few hours.
- Pour the lemon juice in a pitcher. Add 3 cups water and the sugar mixture and mix to combine. Serve the lemonade over ice.

- Prep garlic and ginger - peel, chop/grate.
- Boil water in sauce pan or tea kettle.
- In a quart-size mason jar or heat-proof glass container, add chopped garlic, grated ginger, astragalus root and optional cinnamon chips. CAREFULLY pour boiling water into the mason jar. COVER with lid and steep for 30 minutes.
- Strain with a fine mesh strainer into another mason jar or glass container.
- Add the juice of 1 lemon and sweetener of choice to the garlic-ginger mixture.
- Serve immediately or store in the refrigerator for later. Serve hot.

- To each tea cup, add 2 slices of lemon and 3 slices of fresh ginger. Don't worry about peeling the ginger. Add a little squeeze of lemon, about 1 tsp or the juice from 1/4 lemon.
- Fill the cup with boiling hot water, and allow it to steep for 2-3 minutes. Leave the lemon and ginger in the cup as you drink it if you like the strong flavour. You can also remove the pieces after steeping.
- Optionally, add 1 tsp of honey, and stir.

- Prepare the ginger 'tea' base. Do this by cleaning the ginger knobs and chopping into 1-2" pieces.

- Wash and pat dry lemons and ginger. I do not peel ginger, it has a lot of flavors and nutrition. Just make sure to rinse thoroughly and wipe it with paper towels. Cut each lemon into half and juice using a lemon squeezer. Four large lemons will yield approximately ½ cup of lemon juice.
