This easy Hot Fudge recipe makes rich, smooth, fudgy, decadent hot fudge sauce in just minutes! Take your ice cream game to the next level with this homemade hot fudge and you'll never buy store bought again! So much better! Yield: 2 cups

Number Of Ingredients 7

¼ cup unsalted butter
4 ounces bittersweet baking chocolate (or ⅔ cup semisweet chocolate chips)
8 ounces evaporated milk (or half and half)
¾ cup granulated sugar
6 to 8 tablespoons unsweetened cocoa powder (depending on how chocolate-y you want the hot fudge)
¼ teaspoon salt
2 teaspoons vanilla extract

Steps:

  • Melt butter and bittersweet baking chocolate (or semisweet chocolate chips) together in a small or medium saucepan over medium low heat, stirring frequently.
  • Once the chocolate and butter have melted, slowly whisk in the evaporated milk (or half and half if that's what you're using) until combined.
  • Whisk in the granulated sugar, unsweetened cocoa powder, and salt until combined.
  • Keep over medium low heat, whisking frequently, about 5 to 6 minutes until mixture comes just to a boil. Reduce heat and simmer for another 2 to 3 minutes, stirring continuously.
  • Remove from heat and stir in vanilla extract.
  • Serve hot fudge sauce warm over ice cream or allow to cool, transfer to a heat safe jar or container and store in the fridge for up to 3 weeks.

Quick Hot Fudge Sauce image

My mom used to make this when I was a kid. Last week, DH had eaten all the Magic Shell ( :) ) so I whipped out my cookbook & whipped this up -- it's just as I remembered! Quick, and with such a good flavor. While it's hot, it's kind of thin, like Hershey's syrup consistency-wise, but I like it best cold out of the fridge -- it's thick and pours sloooowly over the ice cream (or cake or whatever). Yum!

1/2 cup cocoa
1 1/2 cups sugar
1/2 cup light corn syrup
1 cup milk (I use skim b/c it's what I have on hand and it works fine)
3 tablespoons butter or 3 tablespoons margarine
1 teaspoon vanilla
1 tablespoon flour
1 dash salt

Steps:

  • Combine dry ingredients in medium bowl and set aside.
  • Combine butter& all liquid ingredients-- EXCEPT VANILLA-- in saucepan over medium heat.
  • Increase heat to medium high, and add dry ingredients.
  • Stir until mixture comes to full boil.
  • Boil 3 minutes.
  • Add vanilla and let cool.
  • Keeps well in fridge.

6 tablespoons margarine
1/2 cup baking cocoa, unsweetened
2 cups sugar
1/2 teaspoon salt
1 can evaporated milk
1/4 cup light corn syrup
1 1/2 teaspoon cornstarch, mixed with 1 1/2 teaspoons water
2 teaspoons vanilla

Steps:

  • In a medium saucepan, melt margarine. Remove from heat and stir in cocoa, sugar and salt until they dissolve. Stir in evaporated milk and syrup until well combined. Stir in cornstarch mixture. Return to heat and bring to a boil. Cool sauce and stir in vanilla. Serve warm over ice cream. Can be refrigerated and warmed for future use.

8 ounces semisweet chocolate, chopped
3/4 cup heavy cream, plus more for reheating
4 tablespoons unsalted butter
1/4 cup light corn syrup
2 tablespoons packed light brown sugar
2 tablespoons unsweetened cocoa powder
1/8 teaspoon kosher salt
1 teaspoon pure vanilla extract

Steps:

  • Combine the chocolate, heavy cream, butter, corn syrup, brown sugar, cocoa powder and salt in a small saucepan over medium heat. Cook, stirring often, until the chocolate is melted and smooth, about 5 minutes. (Do not simmer or the chocolate may scorch and taste bitter; reduce the heat if needed.)
  • Remove from the heat and stir in the vanilla. Let cool slightly. Refrigerate up to 1 week; reheat in a small saucepan over low heat or microwave in 30-second intervals, thinning with more heavy cream if needed.
  • Use milk chocolate instead of semisweet along with 1/3 cup creamy peanut butter; increase the heavy cream to 1 cup and the brown sugar to 1/4 cup. Stir in 1/2 cup chopped salted roasted peanuts at the end.
  • Use half semisweet and half milk chocolate along with 2/3 cup butterscotch chips; increase the butter to 6 tablespoons.
  • Add 1/3 cup seedless raspberry jam with the chocolate. Replace the butter with coconut oil and omit the corn syrup and brown sugar. Use coconut extract instead of vanilla.
  • Add 1/3 cup cherry jam with the chocolate. Omit the corn syrup and brown sugar. Use 1/2 teaspoon almond extract instead of vanilla.
  • Add 1/3 cup orange marmalade and 1/2 teaspoon chipotle chile powder with the chocolate. Omit the corn syrup and brown sugar. Add 1/4 teaspoon orange extract with the vanilla.
  • Use milk chocolate instead of semisweet along with 1/3 cup chocolate-hazelnut spread and 1 tablespoon instant espresso powder. Omit the corn syrup, brown sugar and vanilla. Stir in 2 tablespoons hazelnut liqueur at the end.

1/2 cup very strong black coffee
3 tablespoons salted butter, cut into pieces
4 tablespoons (three turns around the pan) heavy cream
1/2 teaspoon cinnamon
1 pint chocolate ice cream
Suggested garnishes: chopped peanuts, whipped cream, maraschino cherries

Bill Kates supplied this recipe as he made it on his very first job when he moved to Boston. He took the job as a soda jerk because he loved the Hot Fudge Sauce at Bailey's Ice Cream Parlor of Boston, Mass. I found the recipe inside his review of Recipe#202009 #202009, and was surprised he had not posted this version himself. Hot Fudge is serious in our family, so I made both the version Bill K made on the job and Recipe#202009. The result of my taste test war? Whatever chocolate you use, that quality will determine the quality of your sauce; skimp, and the taste suffers. I used Hershey's cocoa powder by accident when I made this version, and the distinctive Hershey's taste came through loud and clear. Except for the chocolate source, the end result of both recipes came out about the same. I prefer working in a double boiler because it is easier to keep the chocolate from getting too hot.

1/2 cup pure powdered Dutch-processed cocoa powder, the best you can find
1/2 cup white unbleached cane sugar or 1/2 cup superfine sugar
1/2 cup heavy cream or 1/2 cup whipping cream

Steps:

  • Set up double boiler so that bottom of double boiler insert does not touch the water. Put insert on top and begin heating bottom water to medium heat.
  • Put powdered Dutch cocoa and sugar in the double boiler, and stir together. While stirring, SLOWLY add cream as you continue to stir. getting all the lumps out.
  • Continue stirring until thoroughly heated, about 6-8 minutes for this small amount.
  • Serve immediately. Refrigerate unused portion.
