HOT DOG CASSEROLE
The original version of this recipe came from "The Northern Exposure Cookbook" by Ellis Weiner. This is a real family-style kid-pleasing recipes that I often bring to potlucks and family gatherings. It is like a pot of macaroni & cheese but with the added surpise of the hotdog slices. It is easy prepare, is inexpensive, and doubles nicely. I have even prepared the ingredients the night before and baked it the next day with success (just allow the ingredients to come to room temperature before baking or add a little extra cooking time). You may use reduced fat ingredients if you have health concerns, but it will not be quite as rich. That being said, I do just about always use "light" hotdogs with no real sacrifice to taste. Prep time includes cooking the pasta.

Steps:
- Preheat oven to 350 F degrees.
- Grease a 2-quart casserole.
- Add the freshly cooked and drained macaroni into the casserole along with the sliced hot dogs and just 2 cups of the cheese; mix well.
- Combine butter and onion in a medium saucepan and saute over medium heat until the onion is wilted (about 5 minutes).
- Whisk flour into the butter mixture quickly until flour is absorbed, then remove from heat.
- Add milk slowly, whisking to combine well- make sure you whisk very quickly and thoroughly or you will have doughy clumps.
- Return to heat, whisk in the salt and pepper, and bring to a boil (still whisking)- just be careful not to let it burn.
- As soon as it starts to hit the boiling point, remove from heat and pour evenly over the macaroni mixture.
- Stir to gently to combine.
- Sprinkle with remaining 1/4 cup cheese and bake, uncovered, for 18-20 minutes or until heated through and the cheese has melted and browned (If you prepare this in advance, wait to add the remaining cheese until you are ready to bake the casserole the next day).
- For variety, I have tried other types of cheeses and thought Cheddar blended with Monterey Jack was also very nice in this.
- NOTE: This does not freeze well.

- Preheat oven to 350 degrees F.
- Prepare macaroni according to package directions; drain and set aside.
- Meanwhile, in a large skillet cook onion and garlic in hot butter over medium heat until nearly tender.
- Stir in hotdogs and cook until lightly browned.
- Stir in spaghetti sauce and tomato.
- Bring to boiling. Remove from heat.

It looks unusual, but it is very delicious. I don't know where the teacher found the recipe. Drop biscuits go well with this casserole.

- Prepare spinach according to package directions. Drain and spread in the bottom of a lightly greased 9x13-inch baking dish.
- Bring a large pot of lightly salted water to a boil. Add egg noodles and cook for 8 to 10 minutes or until al dente. Drain and place on top of spinach in baking dish.
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl combine the soup, milk, sour cream and hot dogs. Mix together and place mixture on top of noodles.

- In a big pot, add the olive oil, the garlic, the onion and mix it well.
- Add the hot dog sausages and mix it well. Add the tomatoes and mix it well.
- Add the seasoning: sugar, salt and pepper. Mix it well.
- Add the heavy milk and mix it.
- Add the raw penne pasta, the water and mix it well.
- Let it cook for 15 minutes, stirring each 5 minutes for the pasta not to stick on the bottom.
- Turn off the heat, add the green onions, mix it and close the pan lid.
- Wait 5 minutes with the pan closed before serving.
- Serve with parmesan cheese to taste.

- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to a boil; cook the rotini at a boil until tender yet firm to the bite, about 8 minutes; drain.

- 1. In a saucepan melt the butter and stir in the flour and make a roux. Gradually add the milk and bring to a boil. Cook until thickened and bubbly. Remove from heat.
- 2. In a greased 9x9 pan layer 1/3 of the potatoes half of the hot dogs and half of the onions. Repeat layers topping with remaining potatoes. Pour milk mixture over top.
- 3. Place in a 350 degrees oven and bake for 45 minutes. Top with cheese and bake another 15 minutes. Serve garnished with green onions

- 1. Cut the hotdogs into 4-5 chunks per hotdog, set aside. Cut the velveeta Cheese into cubes, set aside
- 2. Brown hamburger, drain Cook spaghetti noodles to desired tenderness. Preheat oven to 325 degrees
- 3. In a large bowl, mix all ingredients above with spaghetti sauce, saving a small handful of the cheese cubes and hot dogs. Then pour into a greased cake pan or casserole dish. (try not to use deep casserole dishes, the cheese won't melt well) Sprinkle the handful of cheese and hotdogs on top then layer the top with american cheese slices. Bake for 45 minutes. Let sit for about 5 minutes then dig in!!!
- 4. This is a very cheesy recipe for the cheese lovers!! You may cut back on the cheese if it is too much for you. Also, if you dont have Smith's Hot Dog brands, any brand will do. That is the one we found works the best (its a Pennylvania brand) so you might not have them.
