Steps:
- Preheat a gas grill, griddle, or grill pan on high heat. Place the hot dog on the grill and keep a watchful eye on it, rolling it so that it rotates every 30 to 45 seconds. Remove once the hot dog is cooked all the way through.
- On the same hot grill, place the open hot dog bun inside-down on the grill until golden brown before flipping. Place slices of American cheese on the inside of the bun (which is now face-up); slice the grilled hot dog and place pieces on top of the cheese. Carefully close the bun, which contains both the cheese and sliced hot dog. Using a large spatula or spoon, press entire sandwich down so that it flattens and the cheese begins to melt. After a minute or two, flip over sandwich and repeat on the other side. Once both sides of the bun are toasted and the cheese is viscous, remove the melt from the grill.

ORIGINAL TUNA MELTS
Long before Tuna Melts, in their many variations, became standard on every menu, my mother discovered this 1950's recipe. We grew up having these kid-friendly rolls on Friday nights when, as Catholics, we were forbidden meat. Served in corn-on-the-cob dishes with a side of french fries and a salad, Mom was out of the kitchen in under 45 minutes and we kids were in hog heaven!

- In a large bowl, mix the bread flour, salt, powdered milk, sugar and yeast. Add the egg, butter and water, and mix with a spoon or spatula until the dough is formed.
- Using your stand mixer or on a clean and floured surface, knead the dough until soft and tacky. If using a mixer, it will take about 5 minutes on medium low, and the dough will clear the sides of the bowl but stick a bit in the bottom. If you’re kneading by hand, it will take you 7 to 10 minutes.
- Oil a large bowl and transfer the dough, covering with a plastic wrap or kitchen towel to prevent the top from drying out. Let it rise for 1 hour and 30 minutes to 2 hours, or until it doubles in size.
- On a lightly floured surface, remove the dough from the bowl and portion in 8, 10 or 12 portions. Roll flat each portion and then tightly roll it up, tucking in and sealing the edges so you get an evenly cylinder.

- Avocado and bacon. Who said avocado was only meant for toast? Give your hot dog a breakfast spin by slicing (or smashing) an avocado to go on your dog. Sprinkle on some bacon crumbles, and, if you have it, maybe some Everything But the Bagel seasoning.
- Chili and coleslaw. Chili dogs are a ballpark staple, but instead of sprinkling some cheese on top, give it a sweeter twist by spooning some coleslaw on top.
- Baked beans and chips. This particular dog combo makes an ode to good ol' Boston with some delicious baked beans. Give the hot dog an extra crunch by sprinkling on some chips, making the perfect combo of salty and sweet.
- Sauerkraut and brown mustard. While sauerkraut and brown (or ground) mustard are typically seen paired with brats, they're also a delicious combination for the classic hot dog.
- Gravy and fries. We bet you've never tried poutine on a hot dog, have you? Give your hot dog a poutine flare by adding some salty fries and smothering them in gravy.
- Pickles, tomatoes, and onion. If you've ever been to Chicago, then you know exactly where I'm going with this. The classic Chicago hot dog starts with pickles, tomatoes, and chopped (uncooked) onions, but the fun doesn't stop there!
- Buffalo sauce and blue cheese. Craving chicken wings, but only have hot dogs? Or maybe you just love that spicy and creamy combination of Buffalo sauce and blue cheese.
- Pimento cheese and pickled jalapeños. While you could use any desired cheese to make a cheese dog, pimento cheese adds a unique comfort food twist. Sprinkle on some pickled jalapeños for a delicious combo of cheesy, tangy, and spicy all at once.
- Sautéed mushrooms and caramelized onions. Sautéed mushrooms and caramelized onions aren't just meant for burgers, you know! These toppings work very well on a hot dog, too.
- Avocado and salsa. Looking for some lighter options for toppings? Salsa and sliced avocado are the perfect summer condiments to add to your grilled hot dog.
