INSTANT POT SOUTHERN HOT DOG CHILI RECIPE
Homemade hot dog chili is so much better than the canned stuff and making this Instant Pot Southern Hot Dog Chili recipe is simple and easy! Unlike the traditional versions where you cook the hot dog chili long and slow; this recipe is made in a short time. Once you top it on your favorite hot dog, you will know why making this homemade Instant Pot Hot Dog Chili is worth the little extra effort!

Steps:
- Turn on saute setting on Instant Pot.
- Saute 2 lbs ground beef and 1 cup chopped onion until meat is cooked. (I use the meat grinder tool while I saute it to grind the meat into small pieces.)
- Turn off Instant Pot. Add 2 cups ketchup, ¼ cup apple cider vinegar, ¼ cup brown sugar, ¼ cup mustard, 1 tsp Worcestershire sauce, ½ tsp celery salt, and 1 tbsp chili powder.
- Cook on Manual, High for 10 minutes.
- Fast release when done.

The basis for this recipe came from another site. I modified it a bit so, rather than put my changes as comments for his recipe (I hate when people do that), I am posting it as a separate recipe. I have some hints at the bottom for night-before preparations.

Steps:
- Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add ground beef. Cook and stir until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Transfer cooked beef to a separate container.
- Pour oil into the Instant Pot® and select Saute function. Add onion, garlic, and salt. Cook until softened, 5 to 7 minutes. Make a hole in the center of the mixture and add chili powder, cumin, and oregano. Let spices sit for 30 seconds, then stir into the onion. Return cooked beef to the pot and add water. Stir, being sure to scrape any browned bits from the bottom.
- Stir beans, crushed tomatoes, and tomato paste into the beef mixture. Close and lock the lid. Select Chili function and set the timer for 10 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes. Unlock and remove the lid.

- Using the sauté setting on the Instant Pot, add a good swish of olive oil. When the oil is sizzling and hot, add the hot dogs, browning them on all sides. Remove the hot dogs to a plate and reserve.
- Add the chili powder, smoked paprika, ground beef, onions, garlic and green pepper to the drippings in the Instant Pot. Cook, stirring occasionally, using the saute setting on the IP, until the ground beef is nicely cooked and no pink remains; drain fats.

Bring the chili to a boil, then lock the IP lid into place, using the manual setting to choose High Pressure for 2 minutes, bringing the IP to full pressure. - Carefully unlock and remove the IP lid. Give the chili a quick stir, then stir in the reserved and browned hotdogs. Cover the chili with the cheese, then set the IP lid back onto the pot for 1 minute to let the cheese melt. Serve at once.
