Hot-Crab and Pimiento-Cheese Spread image

Chock-full of crab and topped with chunks of rustic bread, this irresistible spread is substantial and hearty. Offer a knife for slathering it onto cut vegetables.

8 ounces cream cheese, room temperature
6 ounces extra-sharp yellow cheddar cheese, grated (about 2 cups)
1/2 cup plus 2 tablespoons mayonnaise
8 ounces crab meat, picked over
1/4 cup chopped pimiento (from a 4-ounce jar)
1/4 cup sliced scallions (from about 3 scallions)
1 tablespoon plus 1 teaspoon fresh lemon juice, plus more to taste
1/2 teaspoon coarse salt
Hot sauce
1 1/2 cups torn rustic bread (from 1 loaf, crust trimmed)
Endive leaves, cucumber spears, and celery sticks, for serving

Steps:

  • Preheat oven to 375 degrees. Mash cream cheese in a bowl until very soft. Add cheddar and 1/2 cup mayonnaise and stir to combine. Stir in crab, pimiento, scallions, lemon juice, salt, and hot sauce to taste. Spoon mixture into two 14-ounce baking dishes, dividing evenly.
  • Stir together torn bread and remaining 2 tablespoons mayonnaise. Top spread with bread mixture, dividing evenly. Bake on a baking sheet until golden brown and bubbling, about 25 minutes. Serve immediately with vegetables.

2 tablespoons finely chopped pickled jalapeños
1 tablespoon whole-grain mustard
1/2 teaspoon garlic powder
Bagel chips

Steps:

  • Preheat oven to 350°. Spray a 9-inch baking dish with nonstick baking spray. In a large bowl, beat cream cheese and next 7 ingredients at medium-low speed with a mixer until combined. Spoon mixture into prepared pan. Bake for 20 to 25 minutes or until edges are lightly browned. Serve with bagel chips.

1 (12-ounce) jar roasted red peppers, (drained)
2 (4-ounce) jars diced pimientos, (drained)
1 teaspoon hot sauce
2 teaspoons Worcestershire sauce
1/2 teaspoon salt
1 teaspoon sugar
1/2 teaspoon cayenne pepper

Steps:

  • Preheat oven to 350 degrees and spray a 2-quartbaking dish with nonstick cooking spray.
  • In a large bowl, combine cream cheese, mayonnaise, and both cheeses. Use a wooden spoon to mix them together well.
  • Place red peppers and pimientos on paper towels and pat out excess moisture. Roughly chop the peppers and add them along with pimientos to bowl.
  • Add hot sauce, Worcestershire sauce, salt, sugar, and cayenne pepper and stir everything together.
  • Spoon into prepared baking dish, place in oven and bake for 20 to 25 minutes, until bubbly and lightly browned.

1/3 cup finely chopped sweet onion
2 garlic cloves, minced
1 package (8 ounces) softened cream cheese, cubed
1 package (5.2 ounces) Boursin garlic and fine herbs cheese
1/4 cup 2% milk
1/4 cup half-and-half cream
1/4 cup white wine or chicken broth
1 tablespoon seafood seasoning
2 teaspoons Worcestershire sauce
1 teaspoon Louisiana-style hot sauce
1/8 teaspoon crushed red pepper flakes, optional
2 cans (6 ounces each) lump crabmeat, drained and picked over
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
2 cups shredded cheddar cheese
Blue tortilla chips

Steps:

  • In a large nonstick skillet, heat oil over medium heat. Add onion and garlic; cook 3 minutes. Stir in cream cheese and Boursin until melted. Add milk, cream and wine, stirring constantly., Add seafood seasoning, Worcestershire, hot sauce and red pepper flakes. Stir in crab, spinach and cheddar cheese until cheese melts and mixture is bubbly. Serve warm with blue tortilla chips.

Pimento cheese is a southern thing. It is available in the dairy case almost everywhere here. Problem is, there are as many versions as there are cooks. Wait! I guess that isn't really a problem, but I just couldn't find one that suited our tastes perfectly until I started tweaking one my daughter liked a lot. The addition of shrimp makes it a bit more substantial and attractive to northerners, too! I recommend using Duke's mayo if you are lucky enough to be able get it. Cooking time is chilling time.
