- In a large bowl, combine sugar, cocoa, and salt, and whisk to combine well. Store the mixture in an airtight container.
- For individual servings, pour 1 cup whole milk into a microwave-safe mug, and microwave on high just until hot. Add 2 tablespoons of cocoa mix, and stir to dissolve. For a larger batch of cocoa, warm the milk in a saucepan set over medium-low heat, taking care not to let the milk boil; as it warms, stir in 2 tablespoons of mix for each cup of milk.
HOT CHOCOLATE MILKSHAKE
This is a great drink for any time of the year! In the winter, it can bring you the great taste of hot chocolate and the feeling of a nice warm day. In the summer, you can cool off with this refreshment and still get the same hot chocolate taste that normally only comes in the winter. This was derived from my own original hot chocolate recipe, which is the best that I know. However, I will make this drink even more! Top with whipped cream.

- First, make your old favorite. Just pour ready-made chocolate milk into an 8oz mug, microwave on high for 1-1/2 minutes and stir briskly. If you don't have a microwave, simply cook the chocolate milk over low heat, stirring frequently, until it becomes hot-but don't let it boil. Next, add a new twist. Now you're ready to try any of these mouth-watering recipes.
- Rainbow: Top with real dairy whipped cream. Drizzle with chocolate syrup, add colorful sprinkles, and a cherry.
- Mocha: Add 3/4 teaspoon instant coffee to your hot chocolate, and stir to dissolve. Top with two tablespoons real dairy whipped cream, and sprinkle with a dash of nutmeg.

- Break 200g plain chocolate (I used 70% cocoa) into cubes and put into a pan with 600ml full-fat milk. Gently heat until the chocolate melts, then bring almost to the boil, whisking regularly until even and smooth. Can be made ahead, then chilled for up to 2 days.

THE BEST CHOCOLATE MILKSHAKE
Steps:
- In a small bowl, combine sugar and cocoa powder. Stir together and set aside.
- In a small saucepan, over medium heat, melt butter. Whisk in milk followed by the sugar and cocoa powder mixture. Whisk continuously, beating out any lumps as they form, until mixture begins to thicken and bubble 1-3 minutes.
- Remove from heat and whisk for 30 seconds to whisk some of the heat out of the sauce. Stir in optional vanilla and allow sauce to sit at room temperature to continue to cool slightly as you assemble the rest of your ingredients.
- Combine ice cream, milk, and 3 tablespoons* of the sauce in your blender and blend until well-mixed and pourable.

- Chop or grate the semi-sweet chocolate. You will need 6 to 7 tablespoons of chopped chocolate.
- Take the chopped chocolate in a small mixing bowl. Set the bowl aside.
- In a saucepan add milk and sugar.
- Begin to heat the milk until it comes to a simmer and begins to gently boil. When you keep the milk on the stove-top, stir so that the sugar dissolves.
- Switch off the heat and place saucepan on the countertop.
- Then take 2 to 3 tablespoons milk from the hot milk in the saucepan and add to the bowl containing chopped chocolate.
- With a whisk mix the hot milk with the chocolate to a smooth consistency.
- Now pour this melted chocolate and vanilla extract in the hot milk in the saucepan which is placed on the kitchen countertop. Mix very well.
- Pour hot chocolate in cups.
- If you like top the hot chocolate with some whipped cream (or whipping cream) or heavy cream. If you have whipped cream, use it or simply add either heavy or whipping cream. You can also sprinkle some cocoa powder or chocolate shavings or gratings on top.
- Serve homemade Hot Chocolate straightaway.
