HOT CHOCOLATE FLOATS
Hot chocolate has never tasted so good! Regular hot chocolate gets an upgrade by adding ice cream, hot fudge sauce, and other gourmet toppings. I love making these hot chocolate floats with rich, creamy hot chocolate made from scratch, but if you prefer, you can substitute 4 cups of prepared hot chocolate instead.

Steps:
- Whisk together the cream, milk, 2 tbsp brown sugar, vanilla, and salt in a medium saucepan. Place the pan over medium heat and cook it, whisking occasionally, until it starts to simmer. Remove the pan from the heat and whisk in the chopped chocolates, stirring until they're melted. Carefully taste the mixture and add more sugar, if desired.
- Place 2-3 scoops of ice cream into mugs. Pour hot chocolate on top of the ice cream, and garnish with whipped cream, fudge sauce, chocolate shavings, or other toppings. Serve with spoons for maximum slurping.

- Place Hot Chocolate Mix and water in a 1 quart glass measure.
- Add vanilla and stir.
- Microwave, uncovered, at HIGH 3 minutes or until heated.
- Pour 1 cup hot chocolate into each of 4 mugs.
- Top each with 1 tablespoon ice cream.
- Sprinkle with cinnamon.
- Hot Chocolate Mix:.
- Combine all ingredients.
- Store in an airtight container in a cool, dry place. Yield's 7 1/3 cups of 1/3 cup servings).

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Place 1 cup of sugar and 2 cups water into a saucepan and bring to a boil.
- In a medium bowl, cream together the shortening and 1/2 cup sugar until smooth. Combine the flour, cocoa, baking powder and salt; stir into the creamed mixture alternately with the milk so the batter does not become too stiff. Stir in vanilla.
- Pour the sugar water into a 2 quart casserole dish. Drop the chocolate mixture by spoonfuls into the sugar syrup to make dumplings.
- Bake for 45 to 50 minutes in the preheated oven. Use a slotted spoon to remove dumplings to plates, spoon syrup over and serve.

- Heat milk in a large glass cup or bowl until hot, but not boiling, about 1.5 - 2 minutes. Pour in Hot Chocolate mix and stir until well combined.
- Pour 2 tablespoons chocolate sauce into a small shallow dish. Dip mugs in chocolate to coat the rim. Pour 1/2 of the hot chocolate into each mug. Drop two scoops of ice cream into each mug and sprinkle with chocolate shavings.
- If you want more chocolate around the rim of the mugs, pour leftover sauce from dish into a squirt bottle and run along the rim of the mugs.
