HOMEMADE CHILLI SAUCE
This homemade sriracha recipe blends plenty of hot red chillies and garlic with a touch of sugar, salt and vinegar for a sweet, tart, spicy taste sensation!

- Trim the stalks of the chillies and deseed - slice each chilli down its length, open up the chilli and scrape out the seeds with a teaspoon. It's important that you wear gloves for this task! The build up of chilli juice on your hands from these quantities will make your hands burn for days - DAYS!
- Add all the ingredients except the sugar and salt to a high powered blender or food processor and blend until smooth. If your food processor isn't quite up to par, don't worry! You can sieve out any larger pieces after cooking.
- Add the chilli mixture, the sugar and salt to a large saucepan and bring to the boil. Reduce the heat and simmer gently, stirring fairly regularly to stop the bottom sticking and burning. The sauce is done when the mixture is reduced and thickened, about 20 minutes of simmering. You can decide now how thick you want your sauce to be - add a little extra water if you want to thin it, or simmer a little longer if you want it thicker. Taste the mixture - this is quite a hard one to sample as it's pretty spicy and your palate will become blown out after a few tastes, but someone's got to do it! I added a little extra salt (1/2 teaspoon) and vinegar (1 teaspoon) for my tastes, but yours will be different. You might want some extra sugar, but for me the chillies were pretty sweet themselves.
- Fill the bottle or jar you want to store your sauce in with boiling water and leave for 10 minutes. If you have used a high-powered blender, just decant the sauce into this clean bottle (a funnel is very useful here). If your blender wasn't quite able to purée the sauce and it still looks a little chunky, press it through a fine mesh sieve before bottling. Store in the fridge - it will last for several months.

- Cook the spaghetti for 10 mins or following pack instructions until al dente.
- Meanwhile, heat the oil in a wok or large frying pan and briefly fry the chilli to soften it.
- Drain the spaghetti, reserving a little of the water, then tip into the wok and, using 2 wooden spoons, toss in the chilli oil until well mixed. Add the salmon, lemon zest and chives or onions, then toss again. Season and add lemon juice to taste.

HOT CHILLI & LEMON PASTE
This paste is great with everything, I even have it with cheese sandwiches for that hot burst of flavour. This recipe originally came from my husband's aunt who is from Mauritius. This paste is in huge demand from family and friends so I'm sure it will be a hit for you. Remember to cook the chilli in a well ventilated room as the fumes can be strong and always use rubber gloves when preparing chillies.

Steps:
- Wash chillies and remove stalks (Note: Use rubber gloves).
- Cut chillies in half lengthways.
- Wash and cut lemons into quarters.
- Crush garlic and finely chop ginger.
- Put all above ingredients into food processor and blend in batches until paste consistency is as desired, adding small amounts of oil if dry.
- In a heavy based pan cover bottom with oil and heat to medium high, when a small amount of paste is dropped into the oil it should sizzle.
- (Note: only cook chilli in well ventilated area as fumes are strong).
- Add paste to hot oil, add salt and stir constantly.
- As soon as paste turns from red to orange (about 3 - 4 mins) remove from heat, stir and allow to cool.
- Once cool put into sterilised jars and top with oil so that there is a thin layer of oil on top of paste and refrigerate.
- In cool weather this can be stored in a cupboard.

Chili Paste is an essential condiment made from dried red chilies, used in most Indo Chinese, Indian, Mexican and Asian recipes. This recipe is so easy to make and thousand times better than the store-bought.

- Add Kashmiri chilies in bowl. Now, pour hot water over it and set it side to soak for 30 minutes.
- Transfer them in a blender along with 1 teaspoon of vinegar and 2 tablespoons of water from the soaked chilies.
- Blend it into a paste.
- Heat oil in a pan.
- Pour the hot oil over chilli paste and mix well.
- Transfer in a clean air tight jar or container and refrigerate upto a month.
- Add Kashmiri chilies and bedgi chilies in a bowl. Pour hot water over the chilies and set it aside to soak for 30 minutes.
- Strain and transfer them into a blender along with garlic, 3 tablespoons of rice vinegar.
- Blend the mixture into a paste. Add 3 tablespoons of water from the soaked chilies.
- Heat oil well in a pan and then chili garlic paste into it.
- Add sugar, salt and mix. Cook for 5-6 minutes low heat until fragrant, stir in between.
- Take it off the heat and cool completely.
- Transfer into a clean jar or container and refrigerate upto a month.

I think this recipe is from Chile.Its very taste and smells great.It goes with anything,Curries,Sandwiches,BBQS ETC.It can be pretty HOT depending on the types of chillis you use.You will have to stir the ingredients in the blender to make sure it mixes well into a paste.Store in fridge.
