If you've never had Nashville Hot Chicken, we're talking about an ultra-crispy fried chicken doused with a cayenne-infused glaze, and by 'glaze' I mean melted butter and lard. For the record, I've never been to Nashville, so I can't tell you how authentic this is, but it works for me, and is fairly easy to pull off.

1 whole chicken, cut into 8 pieces
1 tablespoon kosher salt
1 cup buttermilk
¼ cup pickle brine
2 tablespoons Louisiana-style hot sauce
1 large egg
2 cups all-purpose flour
2 teaspoons fine table salt
¼ cup butter
¼ cup lard
2 tablespoons cayenne pepper
1 tablespoon packed light brown sugar
1 teaspoon paprika
½ teaspoon garlic powder
½ teaspoon kosher salt
½ teaspoon freshly ground black pepper
1 cup vegetable oil for frying, or as needed

Steps:

  • Toss chicken pieces with 1 tablespoon kosher salt. Transfer chicken to a bowl; cover and refrigerate overnight.
  • Whisk buttermilk, pickle brine, hot sauce, and egg together in a mixing bowl. Pour marinade over chicken and stir to ensure each piece is thoroughly coated. Cover and let chicken marinate in refrigerator 2 to 4 hours.
  • Mix flour and salt together in a shallow flat dish. Remove chicken from marinade and blot with paper towels. Reserve marinade. Toss chicken in flour until thoroughly coated. Return chicken to marinade, coating all sides; remove chicken from marinade allowing excess to drip back into the bowl. Coat the chicken once again in flour mixture. Place on a rack. Repeat with all chicken pieces. Allow to sit out about 15 minutes to allow coating to dry out a bit.
  • Place butter and lard in a large pot. Add cayenne pepper, brown sugar, paprika, garlic powder, kosher salt, and black pepper. Place over medium-high heat. Cook and stir until fats melt. Remove from heat; keep sauce warm.
  • Fill cast iron skillet about 1/3 of the way with vegetable oil. Heat oil to 350 degrees F over medium-high heat. Carefully place chicken into hot oil, skin side down. Maintain an oil temperature of 325 degrees F, adjusting heat as need. Fry until instant read thermometer reads 160 degrees F, 8 to 10 minutes per side.
  • Transfer chicken to a rack to drain. Brush with the sauce on both sides.

I live in Tennessee and absolutely love our state's famous Nashville hot chicken. To make cooking it easier, I thought I'd try air-frying. I'm so glad I did-this Nashville hot chicken recipe is almost better than the original. -April Lane, Greeneville, Tennessee

2 tablespoons dill pickle juice, divided
2 tablespoons hot pepper sauce, divided
1 teaspoon salt, divided
2 pounds chicken tenderloins
1 cup all-purpose flour
1/2 teaspoon pepper
1 large egg
1/2 cup buttermilk
Cooking spray
1/2 cup olive oil
2 tablespoons cayenne pepper
2 tablespoons dark brown sugar
1 teaspoon paprika
1 teaspoon chili powder
1/2 teaspoon garlic powder
Dill pickle slices

Steps:

  • In a bowl or shallow dish, combine 1 tablespoon pickle juice, 1 tablespoon hot sauce and 1/2 teaspoon salt. Add chicken and turn to coat. Refrigerate, covered, at least 1 hour. Drain, discarding any marinade., Preheat air fryer to 375°. In a shallow bowl, mix flour, remaining 1/2 teaspoon salt and the pepper. In another shallow bowl, whisk egg, buttermilk, and the remaining 1 tablespoon pickle juice and 1 tablespoon hot sauce. Dip chicken in flour to coat both sides; shake off excess. Dip in egg mixture, then again in flour mixture., In batches, arrange chicken in a single layer on well-greased tray in air-fryer basket; spritz with cooking spray. Cook until golden brown, 5-6 minutes. Turn; spritz with cooking spray. Cook until golden brown, 5-6 minutes longer., Whisk together oil, cayenne pepper, brown sugar and seasonings; pour over hot chicken and toss to coat. Serve with pickles.

8 chicken thighs
1 cup sliced dill pickles
1 cup dill pickle juice
½ cup water
1 habanero pepper, stem removed
¼ cup kosher salt
2 teaspoons sugar
2 cups all-­purpose flour
2 teaspoons sweet paprika
1 teaspoon ground cayenne pepper
1 teaspoon kosher salt
½ teaspoon finely ground black pepper
About 4 cups canola oil, for frying
3 tablespoons cayenne pepper
3 teaspoons smoked paprika
3 teaspoons sweet paprika
2 teaspoons ground cumin
1 teaspoon garlic powder
4 teaspoons kosher salt
2 teaspoons sugar
4 cups canola oil
6 to 8 slices white bread
½ cup sliced pickles

Steps:

  • Make the brine: Place the chicken in a gallon-size Ziploc bag. In a blender, combine the pickles, pickle juice, water, habanero pepper, salt and sugar, and mix on medium speed until smooth. Pour the brine over the chicken and seal the bag. Chill for 4 to 8 hours.
  • Remove the chicken from the brine and lay the thighs in a single layer, skin-sides up, on a wire rack set over a rimmed baking sheet. Chill, uncovered, for 1 hour.
  • Make the hot chicken: In a large bowl, combine the flour, paprika, cayenne, salt and black pepper. Dredge the chicken thighs in the seasoned flour, then pat them between your hands to shake off excess. Return the chicken to the wire rack, reserving the seasoned flour, and chill another 30 minutes.
  • Meanwhile, make the spicy oil: In a large saucepan, combine the cayenne, smoked and sweet paprika, cumin, garlic powder, salt and sugar. Place over medium heat and toast until fragrant, stirring often, 2 minutes. Slowly add the oil and heat for 10 minutes, then remove from the heat and keep warm. Make ahead: Let the oil cool to room temperature, then store in the fridge, covered, for up to 2 weeks.
  • Dredge the chicken thighs in the reserved flour once more and return them to the wire rack. Chill in the fridge for a final 30 minutes.
  • Line a clean rimmed sheet tray with a clean wire rack and set aside. Attach a deep-fry thermometer to a large cast-iron skillet, and fill it with oil to a ½-inch depth. Place the skillet over medium-high heat until a thermometer registers 365°. Working in 2 batches, lay the chicken thighs in the hot oil, skin-sides down and away from you, and cook until the bottoms are deep golden brown, 5 to 6 minutes. Carefully flip and continue to cook until the each chicken thigh is deep brown, and a meat thermometer inserted into the deepest part of the thigh registers 160°, another 6 minutes. Transfer the chicken to the wire rack and repeat with the remaining thighs.
  • Using a large slotted spoon, dunk the fried chicken into the hot oil, turning to coat both sides.
  • To serve, lay the bread slices on a large platter and top with the fried chicken and pickles.

2 3 1/2-4-pound chickens, each cut into 10 pieces (breasts halved)
1 tablespoon freshly ground black pepper
2 tablespoons plus 4 teaspoons kosher salt
4 large eggs
2 cups buttermilk or whole milk
2 tablespoons vinegar-based hot sauce (such as Tabasco or Texas Pete)
4 cups all-purpose flour
Vegetable oil (for frying; about 10 cups)
6 tablespoons cayenne pepper
2 tablespoons dark brown sugar
1 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon paprika
White bread and sliced pickles (for serving)
Special equipment:
A deep-fry thermometer

Steps:

  • Toss chicken with black pepper and 2 tablespoon salt in a large bowl. Cover and chill at least 3 hours.
  • Whisk eggs, buttermilk, and hot sauce in a large bowl. Whisk flour and remaining 4 teaspoons salt in another large bowl.
  • Fit a Dutch oven with thermometer; pour in oil to measure 2". Heat over medium-high heat until thermometer registers 325°. Pat chicken dry. Working with 1 piece at a time, dredge in flour mixture, shaking off excess, then dip in buttermilk mixture, letting excess drip back into bowl. Dredge again in flour mixture and place on a baking sheet.
  • Working in 4 batches and returning oil to 325° between batches, fry chicken, turning occasionally, until skin is deep golden brown and crisp and an instant-read thermometer inserted into thickest part of pieces registers 160° for white meat and 165° for dark, 15-18 minutes. Transfer to a clean wire rack set inside a baking sheet. Let oil cool slightly.
  • Whisk cayenne, brown sugar, chili powder, garlic powder, and paprika in a medium bowl; carefully whisk in 1 cup frying oil. Brush fried chicken with spicy oil. Serve with bread and pickles.
  • Do ahead: Chicken can be seasoned 1 day ahead. Keep chilled.

3-4 pounds bone-in chicken pieces (I used a fryer pack, 8 pieces total.)
1 ¼ cup dill pickle juice
3 tablespoon sugar
1 ½ cups buttermilk
¼ cup hot sauce (Frank's RedHot or Louisiana)
2 cups all-purpose flour
¼ cup cornstarch
3 tablespoons creole seasoning
2 quarts peanut oil (or vegetable oil)
¾ cup reserved fry oil
¼ cup ground cayenne pepper
1 tablespoon smoked paprika
1 tablespoon brown sugar
2 teaspoons chili powder
1 teaspoon garlic powder
1 teaspoon salt
White bread
Dill pickles

Steps:

  • Brine the Chicken: Warm the pickle juice on the stovetop or in the microwave. Then stir in the sugar until dissolved. Pour the pickle juice brine into a large zip bag. Add the chicken pieces. Zip the bag closed. Refrigerate for at least 1 hour, but longer is better. (If you can brine the chicken for 8 hours or overnight, that's best!)
  • Once the chicken has brined, set out two shallow dishes. Pour the buttermilk and hot sauce in one shallow dish. Mix well. In the second dish, combine the flour, cornstarch, and creole seasoning. Mix well.
  • Drain the brine off the chicken. Set out a metal rack. One at a time, dunk the chicken pieces in the flour mixture, then the buttermilk, then back in the flour mixture. Place the breaded chicken pieces on the rack. (It's good for the chicken breading to rest before frying, so don't heat the oil until all the chicken has been well coated.)
  • Set a large saucepot on the stovetop and clip a cooking thermometer to the side of the pot. Pour enough fry oil into the pot to fill it about two-thirds full. Turn the heat on medium to medium-high.
  • Preheat the oven to 250 degrees F. Set another rack on a baking sheet for the cooked fried chicken.
  • Once the oil temperature reaches 350 degrees F, carefully place four pieces of chicken in the fry oil. Use tongs to move the chicken so it doesn't stick to the bottom of the pot. Fry for 7-8 minutes, until golden brown. (The largest pieces should be 165 degrees F inside.)
  • Use the tongs to carefully pull the chicken pieces from the hot oil and place them on the clean rack. Place the fried chicken in the oven to keep warm and crisp.
  • Repeat with the remaining chicken pieces. Place the second batch of fried chicken in the oven. Turn off the heat.
  • For the Spicy Oil: Use a ladle to scoop ¾ cup of fry oil from the pot into a heat-proof mixing bowl. Add the cayenne pepper, smoked paprika, brown sugar, chili powder, garlic powder, and salt. Stir to mix.
  • When ready to serve the chicken, remove the rack from the oven and brush the spicy oil over all sides of the fried chicken pieces. It's traditional to serve the chicken over 2 slices of white bread, topped with pickles.

1/2 cup lard, melted and heated (or hot frying oil)

Steps:

  • Dry-brine the chicken: In a bowl, toss the chicken pieces with 1 tablespoon kosher salt and 1 1/2 teaspoons black pepper; cover and refrigerate overnight or up to 24 hours.
  • Make the dip and dredge: In a bowl, whisk together the milk, eggs and hot sauce. In a separate bowl, whisk together the flour and 2 teaspoons sea salt.
  • Dredge the chicken in the flour mixture, then dip in the milk mixture, then in the flour mixture again, shaking off the excess after each step.
  • Heat the vegetable oil in a deep-fryer to 325 degrees F. Set a wire rack on top of a rimmed baking sheet and set aside. Working in batches, lower the chicken into the fryer and fry until crisp, 15 to 17 minutes for breast quarters and 18 to 20 minutes for leg quarters. Remove the chicken and let it drain on the rack.
  • Make the spicy coating: Carefully ladle the lard or frying oil into a medium heatproof bowl and whisk in the cayenne pepper, brown sugar, 3/4 teaspoon sea salt, 1 teaspoon black pepper, the paprika and garlic powder. Baste the spice mixture over the hot fried chicken and serve immediately; garnish with pickles.

1 chicken cut into 8 pieces
Peanut oil, for frying
2 to 3 cups store-bought seasoned flour
3 cups canola oil
3 cups bacon fat, strained and melted
1 cup 40K cayenne powder
1 cup 90K cayenne powder
1/2 cup brown sugar
1 cup pickle juice
3 tablespoons paprika
3 tablespoons garlic powder
3 tablespoons chili powder

Steps:

  • For the chicken: Pour enough buttermilk over the chicken pieces to cover them and place in refrigerator at least 24 hours.
  • Preheat a Dutch oven filled three-quarters of the way with peanut oil to 275 degrees F.
  • Drain chicken in a colander, then coat chicken in enough seasoned flour to coat.
  • Gently drop chicken into oil and cook until internal temperature reaches 165 degrees F, roughly 18 minutes. Set aside.
  • For the sauce: Meanwhile, combine the canola oil, bacon fat, cayenne powders, sugar, pickle juice, paprika, garlic powder and chili powder together in a bowl and whisk until smooth. Gently pour 1 cup of the mixture over fried chicken and toss in a bowl, making sure to completely coat chicken (watch your eyes, this stuff is no joke!). (Save remaining sauce for another use.)
  • Remove from bowl and enjoy!

HOT HONEY CHICKEN

8 boneless, skinless chicken thighs
1 cup buttermilk (can be light)
2 teaspoons sea salt (divided)
Spray oil
3 cup panko (gluten-free if needed)
½ cup whole wheat flour (gluten-free if needed)
1 tablespoon paprika
1 tablespoon Italian seasoning
½ cup honey
1 tablespoon chili flakes
1 teaspoon hot sauce

Steps:

  • Put the chicken thighs into a large bowl. Add the buttermilk and 1 teaspoon of sea salt and mix well. Put the bowl into your fridge for at least 20 minutes (or up to 8 hours.)
  • Preheat your oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper and spray it generously with spray oil.
  • In a shallow bowl, mix the panko, flour, paprika, Italian seasoning, and the remaining teaspoon of salt.
  • Working with one piece of chicken at a time, dip it into the panko mixture and make sure that it is well-coated. Put the chicken on the baking sheet then continue to coat the rest.
  • Spray the tops of the chicken with oil then put them into your oven and bake for 30 minutes, or until they are crispy and golden.
  • While the chicken bakes, make the honey. In a small pan, warm the honey, chili flakes, and hot sauce over medium heat. Once the honey starts to bubble a little, remove the pan from the heat. Let it infuse for 5 minutes then strain the honey through a fine-mesh sieve.
  • When the chicken has finished cooking, drizzle it with the hot honey and serve immediately.
