HOT CHERRY SAUCE
This sweet-tart cherry sauce with a hint of cloves is just delightful. I use it with ham, but it also works beautifully as a dessert sauce.

- Drain cherries, reserving juice; set cherries aside. In a large saucepan, combine the sugar, cornstarch and cloves; whisk in reserved cherry juice. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in cherries and food coloring if desired.

EASY CHERRY SAUCE
Steps:
- Gather the ingredients.
- If working with fresh cherries, wash them thoroughly and carefully remove all the stems and pits.
- In a medium saucepan, place the cherries (fresh or frozen), sugar, and water. If using frozen cherries, add just half the amount of water to begin with. Bring to a boil over medium-high heat, stirring often.
- In a small bowl, stir the lemon juice and cornstarch together until smooth.
- Whisk the cornstarch mixture into the boiling cherry mixture.
- If working with frozen cherries, check on the texture of the mixture and add one tablespoon of water at a time if too thick.
- Return the sauce to a boil, stirring constantly. Don't let the sauce scorch on the bottom.
- Cook until the liquid has properly thickened, about one more minute.
- Remove the pot from the heat and taste. Add a little extra sugar or lemon juice if needed at this point, depending on your personal preference. Allow the sauce to cool to room temperature before using it.

CHERRY SAUCE
Steps:
- Place the cherries and the syrup or water in a small saucepan along with the sugar, butter and lemon juice. Bring to a boil. If using fresh or frozen cherries, reduce the heat and simmer for another 3 minutes. Stir in the cornstarch mixture, stirring continually until the sauce is thickened, about 1 minute. Remove from heat and stir in the almond extract.
- Cover and store in the fridge where it will keep for up to a week.
- Serve warm or at room temperature.

Homemade hot sauce makes a perfect gift! Make either traditional fermented hot sauce or a quick cook version, which is done in less than half an hour.

- Place the peppers and garlic in a clean wide-mouth quart canning jar. Set aside.
- To make the brine, heat the filtered water and sea salt in a medium saucepan until the salt has dissolved completely. Let cool to room temperature.
- Pour the brine over the peppers and garlic, completely submerging them. If you run out of brine, you can make more by mixing 1 cup of warm filtered water with 1 teaspoon of sea salt.
- Fit the jar with a fermentation lid or cheesecloth secured with a rubber band (see notes on weighing down the peppers if using cheesecloth). Place in a warm, dark spot for 5-7 days, or until the brine looks cloudy and small bubbles begin to appear when you tap the side of the jar. Make sure the peppers stay submerged under the brine during the entire fermentation process to prevent mold-growth.
- When the fermentation time is up, strain the brine, reserving it. Place the fermented peppers and garlic in a blender, and add in 1 cup of the brine, plus the apple cider vinegar, and honey or maple syrup, if using. Blend until completely smooth, adding in additional brine to reach the desired thickness.
- While the blender is running, sprinkle in the xanthan gum, if using, and blend for an additional minute.
- Transfer to a bottle and store in the fridge for 3-6 months.
- Combine the peppers, garlic, 2 cups of water, 2 teaspoons of sea salt, apple cider vinegar, and honey or maple syrup, if using, in a medium pan over medium-high heat. Bring to a boil, reduce heat, and simmer for 10-15 minutes, or until the peppers and garlic have softened.
- Pour mixture into a blender (making sure to leave the cover vent open, but covered with a kitchen towel) and blend until very smooth.
- While the blender is running, sprinkle in the xanthan gum, if using, and blend for an additional minute.
- Transfer mixture to a squeeze bottle and store in the fridge for 2-3 weeks.

Fresh Cherry Sauce (cherry compote!) is one of my favorite way to cook with fresh cherries. It's a super easy to make and versatile summer recipe that is delicious spooned over everything from ice cream to grilled meat.

- Cut half the pitted cherries in half. Leave the other half whole.
- Add the pitted cherries, ¼ cup of the water, sugar, and salt to a small pot and bring it to a boil over high heat. Lower the heat to medium and simmer for 5 minutes, or until the cherries are soft.
- Whisk the tapioca starch with the remaining ¼ cup of water and add it to the pot. Stir until it thickens then remove the pot from the heat.

- Combine undrained cherries, sugar and rind in small pot.
- Stir over medium heat till mixture boils.
- Blend cornflour with juice.
- Stir into cherry mixture.
- Stir over medium heat till sauce boils and thickens.
- Remove from heat, stir in vodka.
- Enjoy with ice cream.

- Pour juices from cherries into glass cup. Add kirsch. Add enough red wine to measure 1 cup. Stir 3 tablespoons sugar and 1 tablespoon cornstarch in heavy small saucepan until no lumps remain. Gradually whisk in wine mixture, then cherries. Cook over medium-high heat until sauce boils, thickens and is translucent, stirring frequently, about 5 minutes. Remove from heat. Stir in almond extract. (Sauce can be prepared 1 day ahead. Cover and refrigerate. Rewarm over low heat before serving.)
- Divide vanilla ice cream among bowls. Spoon warm sauce over and serve immediately.
