6 wooden pop sticks
1 package (14 ounces) caramels, unwrapped
2 tablespoons water

Steps:

  • Remove stems and thoroughly wash and dry apples; insert pop sticks into tops. Line a baking sheet with parchment and grease the parchment; set aside., Place caramels and water in a small saucepan; cook and stir over medium-low heat 3-5 minutes or until smooth, stirring frequently. Remove from heat; cool slightly. Dip each apple in caramel mixture, allowing excess to drip off. Place on prepared pan. Refrigerate until set.

When I was searching for a recipe to make homemade caramel apples for the very first time, a close friend gave me this amazing and fairly easy recipe. My family and friends loved these delicious treats! Sprinkle with nuts or whatever you desire while the caramel is still warm (work quickly, the caramel sets VERY fast).

8 large tart apples
8 wooden chopsticks for handles
1 cup butter
2 cups packed brown sugar
1 cup light corn syrup
1 (14 ounce) can sweetened condensed milk
2 teaspoons vanilla extract

Steps:

  • Bring a large saucepan of water to a boil. Dip apples in boiling water for a few seconds, then dry with paper towels to remove any wax from the peels. Set apples aside; when completely cool, insert a wooden chopstick firmly into the bottom of each apple for a handle.
  • Line a baking sheet with parchment paper.
  • Stir butter, brown sugar, corn syrup, and sweetened condensed milk together in a saucepan over medium-high heat. Bring to a boil, stirring constantly, and reduce heat to medium. Cook until a candy thermometer reads 248 degrees F (120 degrees C), 25 to 30 minutes; stir constantly to prevent burning. A teaspoon of the syrup, dropped in a glass of cold water, should form a firm ball. Remove caramel from heat and stir in vanilla extract.
  • Working quickly, dip each apple into the hot caramel to completely coat the apple and about 1/2 inch of the wooden handle. Sprinkle apples with any desired toppings while still hot. Let caramel apples cool on the parchment paper. Use caution, caramel is very hot.

6 small apples (, washed)
1 (14-ounce) package caramels (, unwrapped)
2 tablespoons heavy cream
6 wooden popsicle sticks
Sprinkles
Crushed cookies (, such as chocolate wafers or graham crackers)
Granola
Crushed nuts
Crushed candy (, such as toffee or Halloween-colored candy canes)
Shredded coconut
Crushed pretzels

Steps:

  • Line a baking sheet with parchment or wax paper. Twist the stem from each of the apples and insert a popsicle stick in the top of each apple, sticking it halfway up the apple for stability.
  • Place the desired toppings in separate bowls or containers large enough for the apples to fit inside.
  • If you have a double boiler, set that up with water in the bottom. If not, grab a skillet and a saucepan smaller than the width of the skillet by a few inches. Place the saucepan in the skillet and fill the skillet with water to come up about ½ inch up the sides of the saucepan nestled inside. Place the caramels and the cream in the top pan of the double boiler, or the saucepan in the skillet. Heat over medium heat, stirring often, until the caramels are melted and smooth, about 10 minutes.
  • Transfer the pot of melted caramel to a trivet or heatproof surface. Dip each apple, one at a time, into the hot caramel. You may choose to coat just the bottom half, or turn the apple to coat it all around with the caramel. Lift the apple up and twirl it gently to allow excess caramel to drip back into the pan.
  • Dip the apple into the toppings of your choice. You may use more than one topping for each apple; you do do this by leaning different sides of the coated apple into different toppings, or you can sprinkle some of the toppings over the apple, holding the apple over the toppings in their container.
  • If the caramel starts to firm up before you have dipped all of the apples, return it to the heat over simmering water, and stir frequently until it is liquidy again. You can also put it in the microwave (in a microwave safe container) and heat it for 15-second bursts, stirring in between each 15-second increment.
  • Place the decorated apples on the lined baking sheet, transfer the tray to the fridge, and let cool and set for at least 1 hour. Place in cupcake liners if desired.

3 large apples, peeled and finely diced

Steps:

  • Preheat the oven to 350˚ F. Butter a 9-inch square (or other 2 1/2-quart) baking dish.
  • Make the pumpkin cake layer: In a large bowl, whisk together the flour, baking soda and salt. Add the pumpkin puree, heavy cream, vegetable oil, both sugars, eggs, vanilla and pumpkin pie spice, then whisk to combine. Spread the batter evenly in the baking dish.
  • Make the apple layer: In the same bowl, toss the apples, brown sugar, cinnamon and salt. Scatter the apples evenly over the pumpkin batter.
  • Make the topping: Using the same bowl again, combine the melted butter, flour, brown sugar, oats and salt until small clumps form. Spread the topping evenly over the apples.
  • Place the baking dish on a baking sheet to insulate the bottom while it bakes and to catch any drips. Bake until the cake is slightly domed and the edges are set and gently bubbling and a toothpick comes out with moist crumbs but is not wet, 60 to 75 minutes. Serve hot or at room temperature.

Don’t be alarmed if your caramel is taking longer, just use the candy thermometer as your guide. The temperature will heat up slowly, then move quickly, so keep your eye on the pot. Once at 235°F – 240°F, remove caramel from heat and stir in the vanilla. Avoid over-stirring which can create air bubbles in the caramel (and then on the apple). Allow caramel to cool for 10-15 minutes until slightly thickened. If caramel is too thin to coat apples, let it cool and thicken for 5-10 minutes longer.
