3 cups all purpose flour, plus more for dusting
1 tablespoon baking powder
¾ teaspoon baking soda
¾ teaspoon kosher salt
2 tablespoons sugar
¼ cup butter-flavored vegetable shortening, plus 2 tablespoons, chilled, divided
2 tablespoons unsalted butter, frozen
1 ¼ cups buttermilk, chilled
1 cup dark brown sugar
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground allspice
1 teaspoon pure vanilla extract
½ cup spiced dark rum, divided, plus 2 tablespoons
1 stick unsalted butter, cut into tablespoons
¼ teaspoon kosher salt

Steps:

  • Make the biscuits: Preheat the oven 450°F (230°C). Line a baking sheet with foil.
  • In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar until well combined.
  • Cut ¼ cup (60 g) of the shortening into small pieces. Add to the dry ingredients and work into the flour with your hands or a fork until the mixture is crumbly in texture. Grate the frozen butter with a box grater, then fold into the dry ingredients.
  • Create a well in the center of the bowl. Pour in the buttermilk and use a rubber spatula to fold until combined and the dough pulls away from the sides of the bowl.
  • Lightly flour your surface and hands, then turn the dough out onto the surface and knead 3-4 times, until the dough comes together. Use a floured rolling pin to roll dough into an 8-inch square rectangle about 1 inch high. Fold the dough over itself twice and roll out again. Repeat folding and rolling 3 more times, rotating the dough 90° each time.
  • Use a 2-inch (5 cm) round cutter to cut out 12-15 biscuits, gathering any scraps and folding/rolling again to cut out more. Place the biscuits on the prepared baking sheet.
  • Melt the remaining 2 tablespoons of shortening, then brush over the top of each biscuit.
  • Bake the biscuits for 12-13 minutes, or until golden brown.
  • Meanwhile, make the hot buttered rum sauce: In a medium saucepan, combine the brown sugar, cinnamon, nutmeg, allspice, vanilla, and ½ cup rum. Bring to a strong boil over medium-high heat, stirring to dissolve the sugar. Reduce the heat to medium and cook, stirring occasionally, until the sauce reduces and thickens, about 10 minutes.
  • Remove the pan from the heat and stir in the butter, 1 tablespoon at a time, until melted. Stir in the salt and remaining 2 tablespoons of rum.
  • Pour the sauce over the biscuits and serve warm.

2 tablespoons honey
½ teaspoon vanilla extract
¼ teaspoon cinnamon
½ teaspoon kosher salt
⅛ teaspoon cayenne
1 lb sweet potato, peeled and cubed
2 ½ cups all purpose flour, plus more for dusting
1 ½ tablespoons granulated sugar
1 ½ tablespoons dark brown sugar
1 ½ teaspoons kosher salt
½ teaspoon baking soda
2 ½ teaspoons baking powder
8 tablespoons unsalted butter, cubed
⅓ cup buttermilk, plus 2 tablespoons
3 tablespoons unsalted butter, melted

Steps:

  • Make the spicy honey butter: Place the butter in a large bowl. Beat with an electric hand mixer on low speed for about 2 minutes, or until smooth. Increase the speed to medium and add the honey, vanilla, cinnamon, salt, and cayenne and beat until well combined, about 2 minutes.
  • Spoon the butter onto a piece of parchment paper or plastic wrap. Roll into a log and refrigerate for at least 2 hours. The butter will keep in the refrigerator for up to 1 month.
  • Make the biscuits: Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • Bring a medium pot of water to a boil over high heat. Add the sweet potatoes to the boiling water and cook until tender, about 10 minutes. Drain, then mash with a fork or potato masher until smooth. Let cool completely.
  • In a large bowl, whisk together the flour, granulated sugar, brown sugar, salt, baking soda, and baking powder.
  • Add the butter to the flour mixture and toss to coat. Using your hands or 2 forks, work the butter into the flour until it resembles a coarse meal.
  • In a medium bowl, whisk together ¾ cup (255 G) of the mashed sweet potatoes and the buttermilk.
  • Add to the dry ingredients to the wet ingredients and mix with a fork to combine. Knead the mixture with your hands until it comes together in a shaggy dough.
  • Turn the dough out onto a lightly floured surface and pat into a 1-inch (2 ½ cm) thick square. Using a large knife or bench scraper, cut the square in half lengthwise, then crosswise into quarters, creating 8 rectangular biscuits.
  • Brush the tops of the biscuits with melted butter. Bake until golden on top, about 20 minutes. Let the biscuits cool on the pan for 10 minutes.
  • Serve the biscuits warm with the spicy honey butter.

⅓ cup olive oil
1 tablespoon apple cider vinegar
2 large eggs
¼ cup cold water, plus more as needed
2 cups raw almonds
1 ½ cups raw walnut
1 cup granulated sugar
2 teaspoons ground cinnamon
4 oz bakers chocolate, finely grated
1 lb ziti pasta, or penne pasta, cooked until al dente and cooled
1 tablespoon olive oil
1 lemon, zested
lemon, juiced
2 tablespoons dark spiced rum
6 large eggs
2 teaspoons vanilla extract
8 tablespoons unsalted butter, softened, cut into small pieces
2 tablespoons unsalted butter, melted
nonstick cooking spray
2 tablespoons powdered sugar
½ cup blueberry
½ cup raspberry
½ cup strawberry

Steps:

  • Make the dough: In a large bowl, stir together the flour and salt.
  • In a medium bowl or liquid measuring cup, whisk together the olive oil, apple cider vinegar, and eggs.
  • Make a well in the center of the dry ingredients and pour in the wet ingredients, along with ¼ cup (60 ml) cold water. Mix together with a spoon or spatula until well combined. Add more cold water as needed, 1 tablespoon at a time, until the dough begins to come together.
  • Use your hands to knead the dough in the bowl until most floury bits are incorporated. Turn the dough out onto a clean surface and knead for 1-2 minutes, until smooth and supple. Return to the bowl and cover with plastic wrap. Let rest for 30 minutes.
  • While the dough rests, make the filling: Add the almonds and walnuts to a food processor and blend until finely ground. Transfer to a large bowl.
  • Add the granulated sugar, cinnamon, and grated chocolate to the bowl with the ground nuts and mix well.
  • In a separate large bowl, toss the cooked ziti with the olive oil, lemon zest, lemon juice, and rum until well coated.
  • In a medium bowl, whisk together the eggs and vanilla until smooth.
  • Preheat the oven to 350˚F (180˚C).
  • On a lightly floured surface, roll out the dough to a 24-inch circle, about ¹⁄₁₆-inch thick.
  • Lightly grease a 10-inch springform pan with nonstick spray and dust with flour.
  • Center the dough over the pan, making sure there is equal overhang on all sides. Press the dough against the bottom and sides of the pan so it lays flush, working gently so the dough doesn't tear.
  • Sprinkle about ⅓ of the nut mixture over the dough in an even layer. Top with ½ of the pasta, then another ⅓ of the nut mixture. Dollop 4 tablespoons of softened butter all over the nut mixture. Repeat to make another layer with the remaining pasta, nuts, and butter.
  • Pour the beaten egg mixture over everything, making sure it seeps down through the pasta layers. Press down with a spatula to release any air pockets. Fold the overhanging dough over the filling. Brush the top with the melted butter.
  • Bake for 70 minutes, until the crust is golden brown. Remove from the oven and let cool for 15 minutes.
  • Invert the stonska torta onto a cutting board or serving platter. Release the springform, then remove the ring and bottom of the pan.
  • Dust powdered sugar on top and garnish with the blueberries, raspberries, and strawberries. Slice and serve.
