1 can (14 ounces) water-packed artichoke hearts, rinsed, drained and chopped
1 jar (6-1/2 ounces) marinated artichoke hearts, drained and chopped
1 can (4 ounces) chopped green chilies
3 cups shredded cheddar cheese
1/4 cup mayonnaise
Assorted crackers or tortilla chips

Steps:

  • In a large bowl, combine the artichokes, chilies, cheese and mayonnaise. Transfer to a greased 8-in. square baking dish. , Bake, uncovered, at 350° for 20-25 minutes or until cheese is melted. Serve warm with crackers or tortilla chips.

1 clove garlic, minced
1 cup grated Parmesan cheese
1 (4 ounce) can chopped green chile peppers
1 (14 ounce) can marinated artichoke hearts, drained and chopped
3 green onions, chopped
1 tomato, chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, mix the creamy salad dressing, garlic, Parmesan cheese, green chile peppers and artichoke hearts.
  • Transfer the mixture to a small baking dish. Bake uncovered in the preheated oven 30 minutes, or until bubbly and lightly brown. Garnish with green onions and tomato.

1/2 teaspoon Onion Powder
Small Pinch Salt/Pepper
4 ounce Can Green Chiles, (drained)
12 ounce Jar Marinated Artichokes, (drained, chopped)
2 Cups Shredded Mozzarella - divided

Steps:

  • Preheat oven to 375°F
  • Thoroughly mix mayo, sour cream, cream cheese, garlic powder, onion powder, salt, pepper and chiles. Once combined, stir in chopped artichokes and 1 cup mozzarella.
  • Transfer mixture to a small baking dish. Top with remaining cheese.
  • Bake for 20 minutes. Broil on high 1-2 minutes to brown top.
  • Serve with crackers, chips and/or bread.

¼ cup mayonnaise
3-4 garlic cloves (minced or grated)
1 ½ cups grated smoked cheddar (divided)
½ cup chopped Hatch green chiles (freshly roasted, canned, jarred or frozen (see note))
½ cup roughly chopped artichoke hearts (fresh, canned or frozen (thawed and drained))
¼ teaspoon ground cumin
Chopped fresh cilantro (for garnish, optional)
Toasted bread, vegetables or chips (for dipping)

Steps:

  • Heat oven to 375 degrees. In a large mixing bowl, beat together the cream cheese, sour cream and mayonnaise with a hand beater until smooth. Alternatively, you can use a sturdy spoon.
  • Stir in the garlic, 1 cup smoked cheddar, Hatch green chiles, artichoke hearts and ground cumin until it becomes one cohesive mixture.
  • Spoon into a baking dish. Bake for 10 minutes and then top with the remaining ½ cup smoked cheddar. Return to the oven and bake until hot and bubbly, about 10-15 minutes.
  • If desired, top with chopped fresh cilantro. Serve with bread, vegetables or chips. Enjoy!
