1 cup sugar
1 1/2 cups low-fat buttermilk
1/2 cup heavy cream
1 tablespoon light corn syrup
Pinch of coarse salt
1 vanilla bean, split and seeds scraped
Martha's Pink Applesauce, for serving (see White Applesauce variation)
Dried Apple Slices, for serving

Steps:

  • Prepare an ice-water bath. Stir together sugar and 1 cup water in a medium saucepan. Bring to a boil, stirring until sugar is dissolved. Remove from heat; pour into a metal bowl set in ice-water bath. Let cool completely, stirring occasionally.
  • Whisk in buttermilk, cream, corn syrup, salt, and vanilla seeds (reserve bean for another use). Freeze in an ice cream maker according to manufacturer's instructions. Transfer to an airtight container and freeze at least 1 hour and up to 3 days.
  • Scoop ice cream into serving dishes and top with a spoonful of applesauce. Garnish with apple slices; serve immediately.

1 1/2 cups all natural apple sauce
1/2 cup good quality whole berry cranberry sauce (recommended: Ocean Spray)
2 pinches ground cinnamon
2 teaspoons orange zest
2 pints French vanilla ice cream
Whipped cream
1/4 cup chopped toasted pecans

Steps:

  • For dessert, warm the apple and cranberry sauces in microwave or in a small pot over low heat and season with cinnamon and orange zest. Place a little cranapple sauce in the bottom of a sundae dish, top with 2 scoops ice cream, more sauce and whipped cream, garnish with chopped pecans.

The caramel apple takes a sophisticated turn in this dessert. Baked with butter, sugar, ginger, and cinnamon, the fruit goes soft and spicy before you finish it with a rich caramel sauce that's mostly made in the oven, plus vanilla ice cream and crushed store-bought amaretto cookies.

1/4 cup dark-brown sugar
1/4 cup granulated sugar
4 tablespoons unsalted butter, room temperature
1 tablespoon unfiltered apple-cider vinegar
4 to 5 firm red baking apples, such as Empire or Honeycrisp (2 pounds total)
1 teaspoon ground cinnamon
1 teaspoon grated fresh ginger (from a peeled 1-inch piece)
Pinch of kosher salt
1 tablespoon heavy cream
Vanilla ice cream and crushed amaretto cookies, for serving

Steps:

  • Preheat oven to 400 degrees. Stir together both sugars, butter, and vinegar until well combined. Spread mixture evenly in the bottom of a 9-by-13-inch baking dish.
  • Peel and core apples, then slice into 3/4-inch-thick rounds. Toss with cinnamon, ginger, and salt in a bowl. Place on top of sugar mixture in a single layer, overlapping slightly if needed. Cover with parchment-lined foil and bake until just beginning to soften and bubble, 20 to 25 minutes. Spoon sauce over apples, and increase heat to 450 degrees. Continue to bake, uncovered, until sauce thickens and apples are soft and brown, about 15 minutes more.
  • Divide apples evenly among 4 bowls. Whisk cream into liquid in baking dish to make a caramel sauce. Transfer to a bowl; let cool until thickened slightly, about 10 minutes. Top apples with ice cream, caramel sauce, and cookies; serve.

1/4 teaspoon cinnamon
2 apples, cored and sliced (do not pare)
1 pint vanilla ice cream

Steps:

  • In skillet mix together sugar, orange juice, lemon juice and cinnamon. Stir over low heat until sugar dissolves. Bring to a boil; simmer 5 minutes. Add apples and simmer, covered, 15 minutes longer. Serve over scoops of ice cream.

1 stick plus 2 tablespoons salted butter
4 Granny Smith apples, finely diced
1 cup lightly packed brown sugar
1/2 cup heavy cream
1 teaspoon ground cinnamon
2 pints vanilla ice cream, for serving

Steps:

  • Add 2 tablespoons of the butter to a skillet and melt over medium-high heat. Add the apples and saute for 5 minutes. Remove to a plate and set aside.
  • In the same skillet over medium heat, add the brown sugar and the remaining stick of butter. Stir it around until the butter melts and the sugar dissolves, then pour in the cream. Stir it around and let it bubble up and thicken for about a minute. Turn the heat to low and add the apples back to the skillet. Sprinkle in the cinnamon, stir the mixture and let it thicken for another 1 to 2 minutes.
  • Spoon big scoops of vanilla ice cream into sundae glasses and drizzle over the caramel apple sauce.

8 apples, granny smiths are good
3/4 cup red cinnamon candies
1/2 cup sugar substitute, such as equal
3/4 cup water

Steps:

  • Core the apples, but it isn't necessary to peel them.
  • I like the texture of having the peels in the sauce.
  • Dice them very fine.
  • Tumble everything into a large pot and bring to a boil.
  • Reduce to the slowest simmer you can arrange on your stove so the sauce won't burn on the bottom of the pot.
  • Cover, stirring occasionally, until you reach the consistency you want.
  • The longer, the finer texture.
  • I usually cook it about 3 hours.
