Steps:
- Cook and drain pasta as directed on package.
- Meanwhile, cut sausage crosswise into 1/4-inch slices. Spray 12-inch nonstick skillet with cooking spray; heat over medium-high heat. Add sausage; stir-fry 4 to 6 minutes or until brown. Stir in broth. Cover and cook over medium heat 5 minutes.
- Stir in squash, tomatoes and 2 tablespoons of the basil. Heat to boiling; reduce heat. Cover and simmer 5 minutes, stirring occasionally. Stir in onions. Simmer uncovered 1 minute.
- Toss pasta, oil and remaining 2 tablespoons basil. Divide pasta among bowls. Top with sausage mixture.

- Removed casing from sausage links and cut into 1/2 inch slices. In a large skillet, brown sausage over medium heat for about 10 minutes; remove and set aside.
- In a large skillet, heat ground beef, olive oil, garlic and onion over medium heat until meat is nicely browned; drain.

PENNE WITH SAUSAGE AND TOMATO SAUCE
Steps:
- Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then add sausage meat and cook, stirring to break up large chunks, until meat is browned and just cooked through, 5 to 7 minutes. Transfer meat to a bowl using a slotted spoon and add bell pepper and garlic to fat in skillet. Reduce heat to moderate and cook, stirring occasionally, until pepper is just tender and garlic is golden, 5 to 6 minutes.
- Add wine and sausage and simmer, scraping up brown bits on bottom of skillet with a wooden spoon, until liquid is reduced by half, about 2 minutes.
- Add tomatoes with their juice and black pepper and simmer, breaking up tomatoes with spoon, until sauce is slightly thickened, 6 to 8 minutes.
- While sauce is cooking, cook pasta in a 6- to 8-quart pot of boiling salted water until al dente. Reserve 1/2 cup pasta-cooking water, then drain pasta in a colander and return to pot. - Heat olive oil on medium-high heat in a large dutch oven.
- Add half of italian sausage and saute until golden brown.
- Remove cooked sausage and repeat with remaining sausage.
- Remove all sausage and set aside.
- Add chopped onions and minced garlic to pot. Turn heat to medium low and saute 5 minutes.
- Add tomato paste and saute until onions develop nice golden color. Stir frequently and WATCH CAREFULLY to make sure the tomato paste doesn't burn.

- In a saucepan, heat 2 tablespoons of the olive oil over medium heat.
- Add the onions, and cook 4-5 minutes until they are soft and golden.
- Add the bell peppers, garlic, bay leaf, crushed red pepper, dried parsley, salt, and black pepper.
- Cook everything for about 3 minutes. Remove the bay leaf, and set aside.
- Add the 2 cans of whole tomatoes including the juice. With a hand blender, crush the tomatoes. Be careful not to blend the tomatoes too much. You should leave a few chunks of tomatoes in the sauce.
- Add the brown sugar and water. Cook for more 3 minutes.
- Return the bay leaf to the pan.
- Add the pesto, and cover the pan. Once it boils, lower the heat to maintain a low simmer.
- Don't forget to stir occasionally.
- Meanwhile in a skillet, heat the remaining 1 tablespoon of olive oil.
- Add the Italian sausages, and sauté until they become brown on the outside but still raw inside.
- Cut the Italian sausages into three pieces each, and add to the tomato sauce. Cook on low heat for about 1½ hours. You can also cook the sauce for longer (3-4 hours) if you have the time.
- Before serving, remove the bay leaf. Serve it over spaghetti or zucchini noodles.

I used Mario Batali's recipe for basic tomato sauce and added the flavors I love. That means crumbled italian sausage and red wine (my favorite italian flavors). I love the taste of this sauce because it uses thyme as the main flavor. It seems that others like it too, as I am always having to give the recipe out. I especially like to use it in my lasagna. Steps:
- Saute 1 lb. sweet italian sausage until light pink, almost done.
- Add olive oil, onion and garlic and cook on medium until soft and golden brown, about 8-10 minutes.
- Add the thyme and carrot and cook 5 minutes more, until the carrot is soft.
- Add the red wine and cook for one minute.
- Add the canned tomatoes and bring to a boil, stirring often.
- Lower the heat and simmer for 30 minutes until consistensy is thick.
- Season with salt if desired (I usually don't need to) and serve.
- You can substitute 1 tablespoon dried thyme for the fresh thyme.
- Try adding 2 cups of grated fresh zucchini at the same time as the tomatoes for a fresh summer sauce.
- Try adding one pound of fresh sliced mushrooms at the same time as the carrots.

- Bring a large pot of salted water to a boil. Cook pasta al dente according to package directions.
- Take the sausage meat out of the casings and crumble it into a deep skillet. Cook it for about 5 minutes, stirring occasionally, over medium-high heat until browned.
- Once the sausage is browned, take it out of the pan and set it aside. Drain the fat.
- Add the garlic, followed by the chicken broth to the skillet. Sprinkle the flour in. Whisk it until the flour has dissolved, and scrape any browned bits from the bottom of the pan. Cook this mixture until it's significantly reduced (should only take a minute or two in total).
- Add in the tomatoes, cream, and the sausage meat. Cook the sauce for a few more minutes until it's thickened to your liking. Season with salt & pepper as needed.
- Just prior to serving, add in the torn basil leaves and then toss with the drained pasta. Serve with freshly grated parmesan cheese.

- In a large saute pan or pot, cook the sausage over medium-high heat until the fat is rendered and the sausages start to brown, about 5 minutes. Remove with a slotted spoon and drain on paper towels. Remove all but 2 tablespoons of fat from the pan.
- To the fat remaining in the pan, add the onions and garlic and cook, stirring, over medium-high heat until soft, about 3 minutes. Add the fennel seeds, salt, and red pepper, and cook, stirring, until fragrant, 20 to 30 seconds. Add the tomatoes and their juice, the tomato paste, oregano, and cooked sausage and cook, stirring, until thick and fragrant, 20 to 25 minutes. ITALIAN SAUSAGE WITH PEPPERS & ONIONS

- Add oil to a large skillet over high heat.
- Brown the sausages well on all sides, I like to get a good amount of color on them. Color=flavor!
- Remove the sausages to a platter and set aside.
- Add the bell peppers and onions to the same skillet and cook for about 5 minutes, getting them a little bit brown as well.
- Reduce the heat to medium and add the garlic to the veggie mixture for the last minute.
- Next add the sausages back to the pan and dump in the tomato sauce and diced tomatoes with juice, the salt, Italian seasoning, onion powder and brown sugar.
- Bring to a boil then reduce to low and simmer covered for an hour or until sausages are cooked through.
- When you are ready to serve, toast your hoagie buns on both sides, then add the cheese to the inside of the buns and place back in the oven to broil until the cheese is melted.
- Add the Italian Sausage & peppers & onions to each hoagie and sprinkle with lots of Parmesan cheese. Serve with some of the tomato sauce on the side for dipping.
- My kiddos like their sausages cut up in bite size pieces before I put it on their hoagies, but that is optional.

- 1. Remove the sausages from the casings and crumble. Put a little olive oil in bottom of a large pot and start to brown and crumble until all redness is gone. Usually takes about 10 minutes. Remove with slotted spoon and leave fat in the pan. To the remaining fat in the pan add the onions and garlic on low heat until soft, about 3 or 4 minutes. Add the fennel seeds, salt and red pepper flakes, saute still on low, stirring until fragrant. Add the tomatoes, all the juices too and tomato paste, oregano and cooked sausage and fresh basil cook and stir until thick and fragrant. Leave on a low flame for 45 minutes. Taste and adjust seasoning to your taste.
- 2. Meanwhile, cook pasta in boiling salted water. Drain and toss with the sauce. If you desire to add ricotta do that or just top with grated cheese.
- 3. This sauce freezes well.
